1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, crushed
1 large celery stick, finely chopped
2 peppers (any colour), cut into chunks
pack 6 pork sausage (about 400g/14oz)
1 tsp sweet smoked paprika
½ tsp ground cumin
½ tsp chilli flakes
2 x 400g cans chopped tomatoes
400g can cannellini beans, drained
250g bag spinach (or use the same quantity as frozen)
2 tbsp fresh breadcrumbs (or frozen with herbs)

Steps:

  • Put the oil in a large, heatproof casserole dish over a medium heat and add the onion, cooking for 5 mins until starting to soften. Tip in the garlic, celery and peppers, and give everything a good stir. Cook for 5 mins more.
  • Turn the heat to high and add the sausages. Cook for a few mins until browned all over, then reduce the heat to medium, sprinkle in the spices and season well. Pour over the tomatoes and bring to a simmer. Cover and continue simmering gently for 40 mins, stirring every now and then.
  • Heat the grill to high and uncover the casserole. Add the beans and spinach, and stir to warm through. Scatter over the breadcrumbs and grill for 2-3 mins until golden and crisp.

2 cups uncooked penne pasta
1 pound smoked sausage, cut into 1/4-inch slices
1-1/2 cups whole milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/2 cups cheddar french-fried onions, divided
1 cup shredded part-skim mozzarella cheese, divided
1 cup shredded cheddar cheese, divided

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, brown sausage over medium heat for 5 minutes; drain. In a large bowl, combine milk and soup. Stir in 1/2 cup onions, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and sausage. Drain pasta; stir into sausage mixture., Transfer to a greased 3-qt. baking dish. 1 (1 pound) package smoked sausage, cut into 1/2-inch pieces
1 (15 ounce) can yellow corn, drained
1 (12 ounce) bottle chili sauce
¼ cup finely chopped onion

¼ teaspoon ground black pepper
2 cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a pot of water to boil; cook peas in the boiling water until cooked through, about 5 minutes. Drain.

20 ounces fresh broccoli florets
16 ounces smoked sausage
8 ounces cream cheese, room temperature
1/2 cup mayonnaise
2 cups freshly grated cheddar cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup grated Parmesan

Steps:

  • Preheat oven to 350 degrees.
  • Add the broccoli to a large microwave safe bowl along with 2 tablespoons of water. Cover tightly with plastic wrap and microwave for 2 minutes. Let sit, covered, for 2 minutes.
  • While broccoli is steaming, slice the sausage into thin rounds and add to a hot skillet over medium heat. Cook, stirring occasionally, until sausage is browned on the outside.
  • Add the cream cheese, mayonnaise, cheddar, garlic powder, salt, and pepper to a small bowl and mix well to combine.
  • Stir the cream cheese mixture and browned sausage into the steamed broccoli until well combined.

1/4 cup diced onions
1/4 cup plus one tbsp flour
1 3/4 cups milk
1 tsp ground sage
3 tbsp Worcestershire sauce
1 can light red kidney beans (drained)

Steps:

  • Add the sliced chicken and apple sausage to a pan over medium heat.
  • Add carrots and onions.
  • Cook until carrots are tender and sausage is brown.
  • Add flour and stir for 20 - 30 seconds.
  • Add milk and keep stirring until mixture begins to boil.
