SMOKED DEVILED EGGS

Steps:
- Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Cool slightly., Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in Miracle Whip, mustard, salt, pepper and paprika. Spoon or pipe into egg whites. If desired, top with additional paprika and chopped parsley. Refrigerate, covered, until serving.

SMOKY GRILLED DEVILED EGGS
These delicious deviled eggs are packed with smoky flavor. Adobo sauce and smoked paprika spice up the yolks, while a quick trip to a hot grill gives the whites a hint of fire and grill marks.

Steps:
- Prepare a grill for medium-high heat.
- Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
- Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.
- When ready to serve, pipe some of the yolk mixture into each egg white and dust with a little paprika.
SMOKED EGGS
This smoked egg recipe is incredibly easy. I learned it from a neighbor and it is a fun way to use up the extra space in your smoker grill. The eggs turn a lovely brown color and have a consistency similar to boiled eggs. The insides have a tinted brown color, too. Reduce cook time if you prefer a softer boiled egg.

- Preheat a smoker grill to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
- Place whole eggs directly on the grate of the preheated smoker. Cook, without turning, for 2 hours, maintaining an even temperature.
- Transfer eggs to a plate and allow to cool completely before peeling. Season with salt and pepper.

- Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel once cold.
- Cut eggs in half lengthwise and scoop out yolks. Mash the yolks with a fork in a small mixing bowl. Mix in the smoked salmon, mayonnaise, lemon juice, yellow mustard, 1 teaspoon dried dill, and the salt and pepper, combining well.
- Spoon or pipe the yolk mixture into the egg whites and sprinkle with paprika and a bit of additional dried dill.

Steps:
- Place the eggs in a saucepan, cover with cold water, and bring to a boil over high heat.
- Reduce the heat, and simmer for exactly 9 minutes.
- Pour off most of the water and immediately run cold water over the eggs.
- Crack the eggshells, roll each egg between your palms and peel under running water.
- Cut a small sliver off both ends of each egg (so they'll sit without wobbling) and halve them crosswise, forming round cups.
- Remove the yolks, and mix with the mayonnaise through curry powder with a rubber spatula until smooth.
- Season to taste with salt and pepper.
- Mound the yolk mixture into the egg whites.
- (For fancier eggs, spoon the yolk mixture into a pastry bag with a star tip, and pipe the mixture into the egg whites to form rosettes).
- Refrigerate until served.

- Place cooked and peeled eggs directly on the grill grate and smoke eggs for 30 minutes. Grill: 180 ˚F. Ingredients. 7 hard boiled eggs, cooked and peeled.
- Remove from grill and allow eggs to cool. Slice the eggs lengthwise and scoop the egg yolks into a gallon zip top bag.
- Add mayonnaise, chives, mustard, vinegar, hot sauce, salt, and pepper to the bag. Zip the bag closed and, using your hands, knead all the ingredients together until completely smooth.
- Squeeze the yolk mixture into one corner of the bag and cut a small part of the corner off. Pipe the yolk mixture into the hard boiled egg whites. Top the deviled eggs with crumbled bacon and paprika.
