This is a quick and simple chicken recipe. Simple flavors, but could be spiced up a bit to a persons individual taste with the addition of some mexican spices, chili powder, green chilies, etc.

1 green pepper, cut in strips
4 boneless skinless chicken breasts, cut into 1-inch strips
1 tablespoon butter
2 cups cooked rice
1/3 cup sour cream
16 ounces salsa
1 cup colby or 1 cup cheddar cheese, shredded

Steps:

  • Sauté green pepper and chicken in butter or oil until lightly browned (about 5 mins).
  • Spread the rice in a greased 9x9 pan.
  • Top with peppers and chicken.
  • Mix sour cream and salsa and spoon over chicken. Sprinkle with cheese.
  • Bake 350 degrees for 25-30 minute.

This fall-off-the-bone chicken is a great addition to your weekly dinner rotation. Serve over salad or with rice and beans.

Number Of Ingredients 13

1 tablespoon olive oil
1 large onion, cut in half, then into thin slices
3 cloves garlic, minced or pressed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon smoked paprika (optional)
1 teaspoon chipotle chile in adobo (optional)
1 3-4 pound chicken, cut up, skin removed
1 28- ounce can crushed or diced tomatoes with their juice
salt, to taste
pepper, to taste

Steps:

  • In a heavy saucepan large enough to hold all the chicken pieces in 1 layer, heat the olive oil over medium-high heat.
  • Add the onion, lower heat, and let onions sweat without browning, stirring occasionally for approximately 5 minutes.
  • Add the garlic, coriander, cumin, oregano, paprika, chili powder, and chipotle chile. Turn the heat up to medium-high, and stir until fragrant.
  • Add the chicken pieces, flesh side down, and the tomatoes. Bring to a boil.
  • Reduce to a simmer, cover partially, and cook for 90 minutes. The meat should start to pull away from the bone of the drumsticks.
  • Allow the chicken to cool enough to handle, then pull the meat from the bones with your hands or a fork.

I love a good chimichanga... all that yummy pulled chicken and gooey cheese, lovingly wrapped up in a flour tortilla, fried to perfection, and then covered in a perfect white sauce. So yummy. FYI: I've included recipes for the pulled chicken, and the yummy white sauce. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
2 large flour tortillas
5 oz spicy pulled chicken, slightly warm, recipe at the end of the directions
2 oz pepper jack cheese,freshly shredded
2 oz colby cheese, freshly shredded
2 oz spicy white sauce, recipe at the end of the directions
grapeseed oil for cooking

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Lay a flour tortilla on a clean surface and lay half of the pulled chicken straight down the middle.
  • 4. Chef's Note: Leave enough room at the ends for the folding process.
  • 5. Place half of the cheese on top of the chicken.
  • 6. Begin by rolling one side of the tortilla up and over the filling.
  • 7. Tuck in both sides
  • 8. Finish by continuing the roll, so that the seam side is down.
  • 9. Add the grapeseed oil to a sauté pan, and heat to 350f (175c).
  • 10. Chef's Note: The oil should be deep enough to cover half the height of the chimichanga.
  • 11. Add the chimichanga to the hot oil, seam side down.
  • 12. Cook until nice and brown, about 2 - 3 minutes per side.
  • 13. Chef's Tip: If you are cooking these in batches, warm your oven to 250f (120c), and then put the finished ones in the oven, while the others are cooking.
  • 14. PLATE/PRESENT
  • 15. Place on a nice plate and cover with some spicy white sauce, and maybe some Mexican rice. Enjoy.
  • 16. Keep the faith, and keep cooking.

I found this recipe in an issue of Good Housekeeping back in the early 80's,when Southwestern/Mexican recipes were hard to come by - at least here in Wisconsin . It's like a Southwestern version of Chicken Parmesan. I used to use Pace Picante on it, but you can adjust it with any salsa or heat level you prefer. I also added the green chiles because I love them! Also would accompany this chicken with home-made Mexican rice, and a picante-based vegetable "stew."

4 boneless skinless chicken breast halves
1/2 cup flour
1/4 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 eggs
3/4 cup yellow cornmeal
1/4 cup vegetable oil
4 slices muenster cheese
1 (4 ounce) can chopped green chilies
salsa or picante sauce

Steps:

  • Pound chicken breast halves to 1/2 inch thickness.
  • Combine flour and seasonings in a medium bwl.
  • Lightly beat eggs.
  • Measure cornmeal into a shallow bowl.
  • Dip chicken, first into seasoned flour,then in eggs, then coat with cornmeal, and chill in the fridge.
  • Saute coated chicken in vegetable oil over medium heat about 5 to 6 minutes on each side,or until golden.
  • Arrange chicken on an oven-proof platter or baking dish, spoon salsa or picante over the chicken, top with chopped chilies, then Muenster slices.
  • Place in a 350* oven or in the broiler, for about 15 minutes - until the cheese has melted to your tastes.

1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon brown sugar
1/4 teaspoon salt
1/8 teaspoon cayenne
1 1/2 teaspoons olive oil
4 boneless skinless chicken breast halves

Steps:

  • Preheat a gas or charcoal grill.
  • Combine chili powder, cumin, coriander, sugar, salt, cayenne and olive oil in a bowl. Mixture will be a little dry.
  • Pound chicken breasts with a meat mallet or other heavy object until a uniform 1/4-inch thickness. Use your hands to rub chicken with chili mixture. Place chicken on grill and cook, turning 9 to 10 minutes until juices run clear when the thickest part of the breast is pierced with the tip of a knife. Slice crosswise into strips.

2 cups pasta, medium-size, uncooked
2 boneless skinless chicken breast halves, thawed and cut into bite-size pieces (about 1lb.)
16 ounces salsa (about 2 cups)
10 ounces frozen corn, unthawed (about 2 cups)
4 ounces Philadelphia Cream Cheese, cubed
1/4 teaspoon ground cumin
1 cup kraft mexican style finely shredded four cheese, divided

Steps:

  • Cook pasta as directed on package.
  • Meanwhile, cook and stir chicken in large nonstick skillet sprayed with cooking spray on medium-high heat for 6 minutes or until done. Add salsa, corn, cream cheese and cumin; simmer on medium-low heat 6 minutes or until corn is heated through and cream cheese is melted, stirring occasionally.
  • Drain pasta; add to skillet with half the shredded cheese. Simmer 3 minutes or until heated through. Top with remaining shredded cheese; cover. Remove from heat and let stand 5 minutes or until cheese is melted.

Today I needed easy and I wanted some spice in my life. This casserole was loaded with just the spices I wanted and was super easy. Spanish rice and seasoned pinto's were the perfect sides. Hope you enjoy as much as we did!

2 large chicken breast, boneless cooked and cut in to bite size pieces (about 2 1/2 cups of chicken)
2 to 3 Tbsp olive oil
1/2 large onion, chopped
1 large bell pepper, chopped
2 clove garlic, chopped
1 large jalapeno pepper, seeded and chopped (wear gloves when working with hot peppers)
3 tsp chili powder
1 tsp cumin
salt and pepper to taste
1 can(s) (10-oz) diced tomatoes with green chiles, undrained (i used rotel original)
1 can(s) (10.5-oz) cream of mushroom soup
1 can(s) (10.5-oz) cream of chicken soup
3 Tbsp cilantro, chopped fresh
2 c crumbled tostitos chips (i used the ones with a "hint of lime"
2 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees. Spray 13 X 9-inch pan with cooking spray.
  • 2. If cooking chicken, prepare and set aside. Rotissere chicken would work well in this dish. However, I did boil my chicken. Other meat such as pork, turkey or beef would also work well in this dish.
  • 3. In a large skillet over a medium heat, saute onion, bell pepper, jalapeno pepper and garlic until tender, about 7 to 8 minutes. Add seasonings; stir to combine.
  • 4. Mix tomatoes, both soups, chicken and 2 Tbsps of the cilantro; pour over onion mixture and mix well. Cook for additonal 2 minutes.
  • 5. Pour chicken mixture into prepared pan and top with crumbled Tostitos; bake covered for 30 minutes or until it bubbles. NOTE: I use the "Hint of Lime Tostitos". You can use plain.
  • 6. While casserole is baking toss cheese and remaining 1 Tbsp of cilantro. After casserole has baked for 30 minutes; remove cover and sprinkle cheese over top; bake 3 minutes uncovered or until cheese melts.

3 ounces cream cheese
1/2 cup cottage cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 teaspoon salt

4 ounces chopped green chilies
3 cups chopped cooked chicken
3 cups cooked rice (I like basmati)
3/4 cup shredded cheddar cheese
3/4 cup monterey jack cheese
2 tomatoes, chopped
1/2 cup chopped olive (optional, I don't like them myself, so we omit them)

Steps:

  • Blend together sour cream, cream cheese, cottage cheese.
  • Add soup, salt, garlic powder, chilies, chicken, rice, cheeses, tomatoes and black olives (if using).
  • Spray a 9x13-inch pan with non-stick spray and pour combined ingredients into pan. Bake at 350° for 30 minutes.
