SOUTHWEST PASTA BAKE

Steps:
- Cook pasta according to package directions. Meanwhile, in a small bowl, beat cream cheese until smooth. Beat in milk. Stir in spinach and oregano; set aside. , In a nonstick skillet, cook beef over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the picante sauce, tomato sauce, tomato paste, chili powder and cumin; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain pasta; stir into meat mixture., In a 13x9-in. baking dish coated with cooking spray, layer half of the meat mixture and all of the spinach mixture. Top with remaining meat mixture. , Cover and bake at 350° for 30 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with olives and onions. Let stand for 10 minutes before serving.

- Heat oil in a large, deep skillet. Saute onion, green pepper, garlic, chili powder and cumin. Stir in tomatoes, chickpeas and corn. Reduce heat to low and simmer 15 to 20 minutes, or until thickened and heated through.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Combine pasta and sauce. Sprinkle each serving with Monterey Jack cheese.

SOUTHWEST GROUND BEEF CASSEROLE

- Cook pasta according to package directions. Drain and set aside. In large skillet cook ground beef, onions, bell pepper, red pepper flakes and steak seasoning until beef is cooked through and onions are translucent. Add the tomato sauce, diced tomatoes, oregano and chili powder. Simmer for 15 minutes, allowing flavors to blend together. Add corn and simmer for 2 more minutes. Remove from heat and gently stir in pasta and cheese. Once cheese is melted, it's ready to serve! Garnish with green onions and sour cream.
SOUTHWEST BEEF AND PASTA SUPPER
Steps:
- 1. In 4 quart Dutch oven over medium heat, cook ground beef and onion, stirring frequently. Cook 4 minutes or until meat is browned.
- 2. Stir in spaghetti sauce, salt, pepper, corn, and chili powder. Heat to simmering.

SOUTHWESTERN BAKE
A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
- In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
- Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
- Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

This Southwest Pasta Bake was a huge hit with the kids! It was full of flavor and made enough for 2 meals!

Steps:
- Preheat the oven to 350 degrees.
- Heat a large skillet over medium heat. Add your ground turkey, garlic, and onion and cook until meat is browned and onions are soft. Drain grease. Then add salsa, tomato paste, and tomato sauce to the meat mixture.
- Cook for a 2 minutes then add your spinach, corn, black beans and taco seasoning and cook for another 2 minutes.
- In a separate pan, cook your pasta per package instructions.
- In a 9 x 13 inch pan, add your noodles and meat sauce and mix well.
- Bake for 20 minutes, sprinkle shredded mozzarella over top of the dish and continue baking for 5 more minutes.

SOUTHWEST BEEF AND PASTA
My family prefers angel hair pasta over linguine, but you could use any noodles you have on hand, it doesn't have to be spaghetti noodles. You can also substitute frozen or fresh corn for the canned. This would also be good with some red and green peppers.

Steps:
- Cook pasta; drain; rinse with warm water; set aside.
- In the meantime, cut steak into bite sized strips. Set aside.
- Heat the oil in a large skillet, adding more as needed while cooking. Stir-fry the chili powder, garlic and onion powder for about 15 seconds.
- Add the beef to the skillet; cook till done, 2 or 3 minutes. Stir in corn, salsa and cilantro, cooking until heated through.
