SOUTHWESTERN CHICKEN PIZZA
Our family loves Mexican food and pizza, so I combined the two. It's easy to cook the pepper and onion in the microwave. Salsa, prepared chicken and other convenience items hurry along the rest of the recipe. The final result is fantastic!

- In a microwave-safe bowl, combine the onion, green pepper and water. Cover and microwave on high for 2-4 minutes or until vegetables are crisp-tender; drain well., Unroll pizza crust onto a greased baking sheet, stretching gently to form a 14x10-in. rectangle. Spread with salsa. Top with chicken and onion mixture. Sprinkle with cheese, garlic powder and cilantro. , Bake at 400° for 15-20 minutes or until crust is golden and cheese is melted. Cut into squares.

- Unroll crust into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 400° until lightly browned, 8-10 minutes., Meanwhile, in a large skillet, saute chicken in oil until lightly browned. Add the onion, green pepper, garlic, chili powder, salt and pepper. Cook and stir until vegetables are tender and chicken is no longer pink. , Spread salsa over crust. Top with 1 cup cheese, chicken mixture and remaining cheese. Bake at 400° until cheese is bubbly and golden brown, 10-15 minutes.

- Instructions Heat oven to 450°F. Place pizza crust on a 14-inch pizza pan or rimless baking sheet; brush with olive oil. Spread tomatillo salsa over crust to within 1/2 inch of edges. Top with the colby-jack, chicken, corn and green chiles. Sprinkle with pepper jack. Bake for 10-12 minutes or until cheeses are melted. Layer with avocado and green onion. Here's one of my favorite dishes: Southwestern chicken pizza. It takes no more than 15 minutes to prepare and it is oh, so good. All you need is delicious California Lavash naan, BBQ sauce, roasted chicken, corn salad, onions and a blend of Monterey Jack cheese and cheddar cheese. I replicated the same pizza for the vegetarians in my family by substituting black beans for the chicken. It's that easy!

- Preheat the oven to 400°F.
- Brush the chicken with barbeque sauce and cut into thick slices.
- In a bowl, combine the remaining barbeque sauce, Tabasco and cilantro. Stir well. Spread the sauce onto each naan. Sprinkle with half the amount of Monterey Jack cheese and onions. Top with the pieces of chicken and salsa. Season with salt and pepper. Cover with the remaining Monterey Jack and cheddar cheese.
- On a hot, un-greased pizza stone, place the flat bread and bake for 10-12 minutes until the cheese is melted.
- Drizzle with a bit of lime juice.
- Serve immediately.

- Mix together the refried beans and a couple tablespoons of taco seasoning. (Just give it a taste to make sure it is flavorful enough.) If the refried beans are too thick, you can thin them out with a bit of water or some of the salsa.
- Toss the diced chicken with about a tablespoon of the taco seasoning. Spread the refried beans over the pizza crust.
- Add a thin layer of salsa (I recommend the thick and chunky so the salsa is not too watery, if using regular salsa, be careful not to use too much. You don’t want the center of the pizza to be too soggy.
