- In a large pot, combine the vinegar, water, garlic, onion, salt, sugar, chipotle chiles and adobo sauce. Bring to a boil, and cook until the onion is translucent, about 15 minutes.
- Place the hard-cooked eggs into clean jars. Strain the boiling brine into the jars to cover the eggs. Cover with lids and refrigerate for at least 3 days before serving. Store in the refrigerator for up to 6 weeks.

SOUTHWESTERN EGG ROLLS
Egg rolls with a Southwest twist: Inspired by a favorite appetizer at Chili's -- these are crunchy and cheesy with a creamy avocado dipping sauce.

- For the sauce: Combine the mayonnaise, sour cream, vinegar, granulated garlic, onion powder, avocado, 2 tablespoons water, a large pinch of salt and a few grinds of pepper in a blender. Blend until completely smooth. Transfer to a medium bowl and stir in the dill and parsley. Season with additional salt and pepper if needed. The texture should be similar to ranch salad dressing. (If the sauce is very thick, thin it out with 1 to 2 tablespoons of additional water.) Cover with plastic wrap and refrigerate until ready to serve.
- For the egg rolls: Preheat a grill pan over medium-high heat for 5 minutes. Rub the chicken breasts with 1 tablespoon oil and sprinkle generously with salt and pepper. Cook the chicken until deep grill marks appear, about 8 minutes. Flip and continue cooking until deep grill marks appear and the internal temperature on an instant-read thermometer in the thickest part of the breast registers 165 degrees F, about 8 minutes more. Remove to a cutting board, allow to cool slightly and cut into small pieces.
- Heat the remaining tablespoon oil in a medium skillet over medium-high heat. Add the bell pepper, a pinch of salt and a few grinds of pepper and cook, stirring, until crisp-tender, 2 to 3 minutes. Stir in the beans, corn, spinach, cumin, chipotle powder, cayenne, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the vegetables and beans are coated in the spices and warmed through, about 2 minutes. Transfer to a large bowl and fold in the chicken, pickled jalapenos, parsley and scallions. Taste and season with additional salt and pepper if needed. Allow the mixture to cool completely.
- Stack the tortillas on a large microwave-safe plate and cover with a damp paper towel. Microwave until just warmed though. (This will make the tortillas easier to roll.) Put a warm tortilla on a clean, flat surface (keep the remaining tortillas covered with the damp paper towels) and put 1/2 cup of the filling in the center. Spread the filling out into a 4 1/2-inch long log. Tightly fold the bottom of the tortilla (the part that is closest to you) over the filling, fold both ends over then roll the tortilla so that the filling is completely enclosed. Seal the seam of the tortilla with 3 toothpicks. Transfer to a baking sheet. Repeat with the remaining tortillas, filling and toothpicks.
- Meanwhile, attach a deep-fat fry thermometer to the side of a large Dutch oven or pot, fill halfway with oil and heat over medium-high heat to 350 degrees F.
- Fry the egg rolls in 2 batches until golden brown all over, about 5 minutes per batch. Remove the toothpicks from the egg rolls, cut on an extreme bias and transfer to a large platter. Serve with the avocado dipping sauce.

SOUTHWEST CHIPOTLE PICKLED EGGS
This has been a hit with all of the pepper eaters I know. It's not "TOO" hot, and it has a great flavor. I found that letting it cure longer really brings out the chile oils and deep chipotle smokey flavors. It is worth the wait. If you like chipotle that is. (On my next batch I might also add some "Tabasco" Chipotle Sauce for some kick)

- Boil eggs for appox 15 minutes.
- Add everything except the eggs and vinegar, into a wide-mouth mason jar.
- Add eggs to jar (make sure to get some of the peppers into the middle and top).
- Fill jar to brim with vinegar.
- Seal, shake, and place in fridge.
- Let cure 2 to 2.5 weeks; occasional shake mixture and rotate jars.
- Serve eggs at room temperature. The flavors seem to come out better this way.

PICKLED CHIPOTLES
Steps:
- In a small pot combine chiles and vinegar. Bring to a boil. Reduce to a simmer and cook, covered, for about five minutes. Set aside to cool. Store in a jar in the refrigerator for up to 3 months.
SOUTHERN FRIED FREE-RANGE CHICKEN WITH A SOUTHWEST CHIPOTLE CREAM SAUCE
Steps:
- In a medium sized bowl, beat together 2 eggs. Dip the chicken breasts in the eggs, and then dredge in flour. Fill a medium sized pan halfway with vegetable oil and heat. When the oil is hot, place the chicken breasts in the hot oil and fry on both sides until cooked through. Season with salt and pepper.
- Top the fried chicken with chipotle cream sauce and serve with pecan rice and wilted spinach.

PIERRE'S HOT & TANGY PICKLED EGGS
I have a thing for good pickles, of any and all sorts, eggs being one of them. I've been playing around with pickled egg recipes for years. This is my favorite. No one really creats a recipe. We all borrow (steal) a bit from this one and a little from that. It does however boost the ego to call the end result 'mine' even if that is not exactly the truth. I've carefully filed the serial numbers off so I can safely say this one is 'mine'. .

Steps:
- Bring a large pot, half full of water, with 1 Tbs Kosher salt added, to a boil.
- Meanwhile pierce the big end of the eggs with a pin.
- Fill a large mixing bowl half full of water, add 2-3 trays of ice cubes.
- When the pot of water is rapidly boiling spoon the eggs gently into it.
- Set timer for 11 minutes.
- When timer'dings' remove the eggs to the ice water with a slotted spoon.
- Mix the Vinegar and Water in a small pan, add the pickling spice bag.
- Bring to a boil for 2-3 minutes.
- Remove from heat.
- In sterile jars place the Garlic, Jalapenos, Bay Leaf, Pearl Onions, and Japone chilies.
- Shell the Eggs.
- Add them to the jars.
- Remove the Pickling Spice bag from the vinegar mixture.
- Fill the jars with the scalding vinegar mixture.
- Seal and let cool to room temperature.
- Refridgerate for at least a week, two is better.

- Heat olive oil in saute pan over medium heat. Add onions and saute for 2 minutes, peppers and saute for 3 more minutes. Add black beans, chipotle and cumin, cook for an additional 2-3 minutes. Place aside to cool. Combine chicken and vegetable mixture to form into a patty, season both sides with pepper.
- Shape into 5 patties. Can be individually frozen at this point, let thaw for 1 day in refrigerator before sauteing.
- Saute patties in small amount of olive oil about 4 minutes / side or until done. Place burger on bun and top with avocado slices and lettuce.
- **Chipotle pepper in adobo sauce- comes in a small can in the International foods aisle of the grocery. Fish out needed peppers with a little sauce, chop and add to recipe. Freeze the rest of the can contents in a freezer ziplock bag. Whenever you need some, you can just break off a chunk and add it to your recipe (like chili, tacos, etc).
