Number Of Ingredients 3

2 (1 lb) packages of oreida frozen hash browns with onions and peppers (If you can't find it, just get 2 packs of frozen hash browns)
2 (10 ounce) cans Campbell southwest-style pepper jack soup
1 (8 ounce) package cheddar cheese or 1 (8 ounce) package Mexican blend cheese

Steps:

  • Mix until soup, cheese, and potatoes are well blended.
  • Top with more shredded cheese.
  • Heat in 375 degree oven until all cheese is melted and potatoes are heated through.

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon pepper
4 cups diced cooked chicken
1 can (4 ounces) mushroom stems and pieces, drained
1 cup sour cream
2 cups chicken broth or stock
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 teaspoons chicken bouillon granules
2 tablespoons finely chopped onion
2 tablespoons finely chopped sweet red pepper
1 garlic clove, minced
Paprika
1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°. Spread potatoes in an ungreased 13-in. x 9-in. baking dish. Sprinkle with salt and pepper. Sprinkle chicken and mushrooms over the top. Combine the sour cream, broth, soup, bouillon, onion, red pepper and garlic; pour over mushrooms. , Sprinkle with paprika and almonds. Bake, uncovered, until heated through, 50-60 minutes.

1/4 c sour cream
1/2 c cottage cheese, small curd
1 can(s) cream of mushroom soup, undiluted
1 small sweet yellow onion, chopped
1 pkg simply potatoes southwest style hashbrowns
3 cooked chicken breasts, chopped (or we use 3 cans white meat chicken breast)
TOPPING
1 sleeve ritz brand crackers
2 c cheddar cheese, shredded
1 stick butter, melted

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix sour cream, cottage cheese, and soup in a large bowl until blended. Add onion, hashbrowns, and chicken and stir.
  • 3. Spread into a 13x9 baking dish.
  • 4. Crush crackers either in the sleeve with your hand until they are roughly crushed, or pour into a storage bag and crush.
  • 5. In a separate bowl, stir together crushed crackers and shredded cheese. Pour butter over mixture and toss or stir to coat.
  • 6. Spread evenly over the top of the chicken mixture.
  • 7. Bake, uncovered, at 350 degrees for about 45 minutes.

  • In medium bowl, mix chicken and onion. Rinse shredded potatoes with cold water; drain on paper towels. Add to chicken mixture. Stir in cilantro and salt.
  • In 10-inch nonstick skillet, heat 2 teaspoons of the oil over medium-high heat. Spread potato mixture evenly in skillet. Cook, without stirring, 6 to 9 minutes or until chicken is no longer pink in center and bottom of potato mixture is golden brown and crisp.
  • Place large plate over skillet; turn potato mixture upside down onto plate. Add remaining teaspoon oil to skillet. Slip potato mixture back into skillet, browned side up; cook 5 to 7 minutes, pressing lightly with pancake turner, until golden brown and crisp.
  • With pancake turner, divide chicken mixture in half; place on 2 plates. Top each with sour cream and salsa.
