SOUTHWEST SURPRISE BREAD

- In a large bowl, dissolve yeast in warm milk. Add the beans, sugar, butter, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two 9x5-in. loaf pans coated with cooking spray. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.

Steps:
- Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with nonstick spray and place in the oven while you make the batter.
- In a large bowl, combine the cornmeal, baking powder, sugar, red pepper flakes and salt. Stir to combine. Add the milk, oil and corn and stir until just combined. Stir in the Cheddar, onions and green peppers and stir just until incorporated.
- Carefully remove the hot muffin tin from the oven and ladle the batter into it. Return to the oven and bake until a toothpick comes out clean, about 15 minutes. Let cool 5 minutes. Remove from the muffin tin and serve.
SOUTHWEST CHEESE BREAD
French bread topped with cheese, bell pepper and green onion - perfect for a Southwest-style appetizer made ready in just 15 minutes!

This bread was given to me by my best friend, Sharon, that is no longer with us. Everytime I fix this she is with me. Everyone just loves this bread and you can add anything you like.

Steps:
- Let bread thaw and rise according to package.
- If in a hurry, just let thaw.
- Preheat oven 375 degrees.
- Brown and drain meat, onions and seasonings.
- Roll 1/2 dough out on a floured surface.
- Spoon meat mixture down the middle.
- Top with cheese and jalepeno peppers.
- Roll in a loaf.
- Repeat with other half of bread dough.
- Place in bread pan and bake for 25 or 30 minutes or until bread is brown.
- Let cool for about 10 minutes, slice and enjoy.

SOUTHWESTERN BAKE
A delicious southwestern recipe that includes black beans. I use mild salsa, but if you like it spicy, use hot salsa. This is one of my favorite recipes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet over medium heat, brown the ground beef with the garlic and onion; drain.
- In a large mixing bowl, combine the meat mixture, chili powder, black beans, corn, sour cream and salsa. Stir until well blended.
- Into a 9x13 inch baking dish, spoon enough of the beef mixture to cover the bottom. Arrange half of the crushed tortilla chips on top of the meat mixture and layer with 1 cup of Cheddar cheese. Spoon another layer of the meat mixture on top of the cheese layer, cover with remaining chips and layer with 1 cup of cheese. Spread final layer of meat mixture on top and sprinkle the remaining 1 cup of cheese on top. Top with diced tomato and green onions.
- Bake in the preheated oven for 40 minutes. Let cool for 10 minutes before serving.

- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Grease a 10x9-inch baking dish. Layer half the tortilla pieces into the bottom of the prepared dish; top with 2 cans green chilies, half the cooked sausage, and half the cheese, respectively. Repeat layering.
- Beat eggs, milk, salt, garlic salt, onion salt, black pepper, and cumin together in a bowl; pour over the layers in the baking dish.
- Cover baking dish with plastic wrap and refrigerate 8 hours to overnight.
- Remove dish from refrigerator and let warm at room temperature for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake the casserole bake in the preheated oven for 50 minutes. Arrange a layer of tomato slices atop the casserole and continue baking until a knife inserted into the middle of the casserole comes out clean, 10 to 15 minutes more. Let casserole cool 10 minutes before cutting.

- In a bowl, combine olives, chili powder, cumin and salt; set aside 2 tablespoons. Add the mayonnaise, sour cream and onion to the remaining olive mixture. , Place bread on an ungreased baking sheet; spread 1 tablespoon of mayonnaise mixture on each slice. Top with turkey and tomatoes. Spread with another tablespoon of mayonnaise mixture; top with avocados and cheeses. Sprinkle with reserved olive mixture.
