ROASTED SWEET POTATOES AND APPLES

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Preheat oven to 475 degrees. Coat a heavy-bottomed metal roasting pan with 2 teaspoons oil. Place pork in center and season with salt and pepper. Roast until top is golden, about 15 minutes.
- Toss apples and sweet potatoes with remaining 2 teaspoons oil and add to pan, arranging around pork. Return to oven and roast until apples and sweet potatoes are tender and an instant-read thermometer inserted in center of pork reads 140 degrees, about 20 minutes.
- Remove pork, apples, and sweet potatoes from pan. Allow meat to rest 10 minutes before slicing. To make the sauce, whisk flour into pan drippings over medium heat, then slowly whisk in chicken broth and cook until thickened.

- Melt butter in a large skillet over medium heat. Add sweet potatoes; cover and cook over medium heat 5 minutes or until golden. Turn potato slices over. Reduce heat, cover, and cook 5 more minutes.
- Remove potatoes from skillet. Add apples; cook 5 minutes on each side or until tender and golden.
- Return potatoes to skillet. Add sugars, pecans, cinnamon, and salt, tossing to coat. Add 2 tablespoons water, stirring to loosen browned particles. Cook 5 minutes or until potatoes and apples are glazed and tender.

SWEET POTATO APPLE CASSEROLE
Steps:
- Preheat the oven to 375 degrees. Lightly grease a large baking sheet, and arrange the sweet potato slices into a single layer on the pan. Transfer to the oven, and bake for 15-20 minutes or until sweet potatoes are softened. Remove from oven. Turn the oven to 350 degrees.
- In a small bowl, mix together coconut sugar, cinnamon, pecans, ghee, and salt.
- Now prepare the casserole. Lightly grease a 9x13 inch casserole dish. Arrange a layer of sweet potatoes on the bottom, then top with a layer of apples. Spoon or spread some of the sugar/pecan mixture over the apples. Repeat for another layer. End with a layer of sweet potatoes on top. Spoon the last of the mixture on top. Finally, top with apple juice or cider.
- Cover and transfer the casserole dish to the oven. Bake for 30 minutes, remove the lid, and bake for another 10-15 minutes.

- Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).

- Add the potatoes to a large pot and cover with water.
- Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
- Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
- Drain the potatoes and place them into the prepared baking dish.
- Add the apples to the casserole dish.
- In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
- Pour mixture over the apples and potatoes and stir to combine.
- Add to the oven and bake for 25 minutes.
- Remove from the oven and top with pecans.
- Add back to the oven and cook for 5 minutes more to toast the pecans.

- Lightly grease the inside of a 4-quart saucepan. Line a baking sheet with waxed paper.
- Stir the brown sugar, white sugar, baking soda, sour cream, and corn syrup together in the oiled pan; place over low heat. Cook and stir continually until the sugars are dissolved. Wipe any sugar crystals above the liquid line with a pastry brush moistened with cold water. Bring to a boil over medium-high heat. Do not stir once the sugar syrup begins to boil. Heat to 240 degrees F (115 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat; stir in the butter, vanilla, and chopped pecans.
- Drop spoonfuls of the mixture 2 inches apart onto the prepared baking sheets. Press a pecan half into the top of each praline. Allow to cool completely. Store in an airtight container in a cool place.

- Peel sweet potatoes and cut into slices about 1/8-inch thick. Place in pot with water to cover; cover pot and bring to boil. Cook potatoes about 10 minutes, until they are soft.
