SOY POACHED SALMON

Number Of Ingredients 6

2 (15-ounce) bottles low sodium soy sauce
3/4 cup dark brown sugar
2 tablespoons minced fresh ginger
Small handful of whole star anise
1 1/2 to 2 pounds salmon illet - thick end (cut into 4 pieces when ready to cook)
Chive stems or sliced scallion stems, for garnish

Steps:

  • In a 12-inch saute pan with lid combine soy, brown sugar, ginger and star anise. Bring to boil and reduce heat to low simmer. When at very gentle simmer, add the salmon skin side down (liquid should almost cover the fillets). Slosh liquid over the fillets and cover the pan. Poach for 6 to 8 minutes (no more than 8, fillets should be medium rare in center. Remove fillets and keep warm. Bring liquid to boil and reduce to half (should be light and syrupy). Spoon some sauce on plate and put a fillet on top. Drizzle a little sauce on fillets, garnish with chives or scallions.

Number Of Ingredients 12

1 cup jasmine rice
Zest of 1 lime
1 tablespoon vegetable oil
Four 6-ounce skinless center-cut salmon fillets, patted dry
1/3 cup honey
1/3 cup soy sauce
1 tablespoon rice wine vinegar
1 teaspoon ginger, finely grated
2 cloves garlic, grated
Juice of 1 lime and 1/2 lime, thinly sliced into half moons
Cilantro leaves, to garnish
1 bunch broccolini, cleaned with stalks trimmed to 3 inches long

Steps:

  • For the lime rice: Cook the rice according to the package instructions and keep warm.
  • For the salmon: Heat a large skillet over medium-high heat. Add the vegetable oil and heat until the oil shimmers. Add the salmon flesh-side down and sear until golden brown, about 3 minutes.
  • Meanwhile, make the glaze: Whisk together the honey, soy sauce, vinegar, ginger, garlic and lime juice in a bowl.
  • Turn the fish over and add the soy mixture to the bottom of the pan. Bring the soy mixture to a simmer and spoon over the top of the salmon as it cooks until cook through, 5 to 7 minutes.
  • Meanwhile, bring a pot of water with a steamer insert to the boil over high heat. Add the broccolini, cover and steam until crisp-tender, 4 to 5 minutes.
  • Remove the fish to a plate. Add the lime slices to the skillet and simmer until the glaze is super sticky, about 3 minutes more.
  • Add the lime zest to the rice and stir. Tip onto a platter. Arrange the broccolini on top and place the salmon, glaze and lime slices on the broccolini, then sprinkle over the cilantro.

  • Prep salmon if necessary. I leave the skin on, but you may remove for poaching if you'd like. Remove any bones if necessary.
  • Combine water, soy sauce, garlic, ginger & honey in a medium saucepan. You want the salmon to be just about fully immersed in the liquid - so choose an appropriate size pan. The salmon can be poached in batches if necessary.
  • Over low heat, bring liquid to just below a simmer. You're aiming to see just a few bubbles here and there. Maintain temperature and let liquid cook for a few minutes for flavors to combine.
  • Add salmon. Cook for about 5 minutes, maintaining liquid temp. Salmon should be opaque thoughout. Gently remove.
