4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
4 chicken drumsticks (about 1 pound), skin removed
2 medium carrots, sliced
4 green onions, thinly sliced
1/3 cup soy sauce
2 tablespoons brown sugar
1 piece fresh gingerroot (about 2 inches), peeled and thinly sliced
5 garlic cloves, minced
1 tablespoon balsamic vinegar
1 teaspoon ground coriander
1/2 teaspoon pepper
1 tablespoon cornstarch
1 tablespoon cold water
Hot cooked rice and minced fresh cilantro

Steps:

  • Place chicken, carrots and green onions in a 3-qt. slow cooker. Combine the soy sauce, brown sugar, ginger, garlic, vinegar, coriander and pepper in a small bowl. Pour over top. Cover and cook on low for 5-6 hours or until chicken is tender., Remove chicken to a serving platter; keep warm. Pour juices into a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with chicken and rice; sprinkle servings with cilantro.

A humble Chinese chicken with ginger and spring onions recipe made with succulent chicken, garlic, ginger, spring onions, and delicious stir fry sauce. Aromatic ginger makes this dish very aromatic and unique. Simply pair it with plain rice or noodles.

300 g Chicken Breast (About 10.5oz, Boneless chicken breast or thigh, cut thin slices)
1 thumb Ginger (Cut thin strips)
3-4 Spring Onion (Cut 2" pieces, Separate the white and green parts. )
½ Onion (Cut thin slices)
3-4 cloves Garlic (Finely chopped)
1 Red chilli pepper (Cut thin slices)
2-3 tbsp Vegetable oil (Or neutral flavour oil)
2 tsp Light soy sauce (or all-purpose soy sauce)
1 tsp Sesame oil
1 tsp Sugar
¼ tsp White pepper
½ tsp Baking soda
1 tsp Corn starch
2 tbsp Oyster sauce
1 tbsp Light soy sauce (or regular all-purpose soy sauce)
1 tsp Shao Xing wine
2 tsp Sugar
¼ tsp White pepper
1 tsp Sesame oil
1 tsp Corn starch

Steps:

  • First, season the chicken slices with corn starch, sesame oil, sugar, baking soda, soy sauce, white pepper. Mix it well and marinate for 15 minutes. Add all the stir fry sauce ingredients in a small bowl. Mix it well and set it aside.
  • Heat the large wok/pan over medium-high heat. Drizzle 2 tablespoons of oil, then add marinated chicken slices and stir fry for 2-3 minutes or until the chicken is cooked through.
  • Push the chicken to one side of wok, drizzle a bit more oil, add chopped garlic and ginger strips and stir fry for 1 minute until the ginger strips start to crisp up. Then, follow with the onion slices, chillies, and white part of spring onions.
  • Next, pour the stir fry sauce and cook until the sauce become thick and glossy.
  • Turn off the heat, stir in green part of spring onions and transfer to serving plate. Serve with plain rice or noodles.

1 3-to-4 pound chicken, including liver, heart and gizzards Juice
3 lemons
4 slices fresh ginger
5 cloves garlic, peeled
1/2 cup tamari soy sauce

Steps:

  • Wipe the chicken dry with paper towels. Place in a Romertopf, a clay pot with a tight-fitting lid, and squeeze on the juice from the lemons. Place the lemon skins inside the cavity.
  • Place a slice of ginger and a garlic clove between the wing joints and between where the leg joins the chicken. Place a clove in the cavity.
  • Sprinkle with soy sauce. Slice liver, heart and gizzards and place around the chicken
  • Cover the Romertopf and put into a cold oven. Turn the oven to 425 degrees and roast the chicken for an hour. Take the lid off and brown for 15 minutes.

thumb-sized piece ginger , thinly sliced
1 large chicken (about 1.8-2kg), untied
2 bunches spring onions
1 head garlic , halved across the middle
1 lemon , halved, plus 4 wedges
1 tsp Chinese five-spice powder
1 tbsp vegetable or sunflower oil , to drizzle
1-2 tsp golden caster sugar
2 tbsp dark soy sauce
2 tbsp hoisin sauce
fragrant rice and steamed greens or stir-fried vegetables , to serve

Steps:

  • Put most of the sliced ginger into a large roasting tin, then sit the chicken on top. Stuff the chicken with remaining ginger, the green ends from one bunch of onions, half of the garlic and a lemon half. Mix the five-spice, 2 tsp oil and seasoning, then rub all over the chicken. Nestle the other half of the garlic nearby, and drizzle all with 1 tsp oil. Loosely re-tie the legs. Set aside at room temperature for half an hour or so.
  • Heat the oven to 190C/170C fan/gas 5. Roast the chicken for 1 hr. Toss the lemon wedges and the spring onion ends into the pan juices, then roast for 30 mins more or until the meat is cooked at the thickest part of the thigh and the lemon wedges are sticky. Lift the chicken from the pan and set aside, uncovered, to rest.
  • Spoon away any excess fat from the pan, then put the pan onto a medium heat and bring to a simmer. Add 1 tsp sugar, the soy, hoisin, juice from the remaining half lemon and any resting juices. Simmer for a few mins until it thickens slightly, then check the seasoning and add more sugar if needed - don't add any extra salt as the soy and hoisin will add plenty. Serve with the chicken, rice and vegetables.

1/3 cup light soy sauce
1/4 cup peanut oil
1 tablespoon sesame oil
1 tablespoon Sherry
1 clove garlic, peeled and crushed
1/2 teaspoon salt
1/2 teaspoon finely grated ginger
2 teaspoons 5-spice powder
1 3-pound chicken

Steps:

  • In a shallow dish large enough to hold the chicken, mix the soy sauce, peanut and sesame oils and Sherry. Add the garlic, salt, ginger and 5-spice powder. Mix well. Rub the chicken inside and out with the mixture. Marinate, lightly covered, for at least 2 hours, and up to 24 hours, in the refrigerator, basting and turning frequently.
  • Preheat the oven to 450 degrees. Remove the chicken from the refrigerator and wipe well to remove the marinade. Place the chicken in a roasting pan. Strain the marinade through a sieve; discard the solids and spoon the liquid over the chicken. Place the pan in the oven and roast for 45 to 50 minutes, basting frequently, or until a meat thermometer registers 158 to 160 degrees when inserted in the thigh. Remove from the oven and allow to rest for 3 minutes before serving.

Here, they are braised in an oil-free liquid seasoned with soy sauce, brown sugar, fresh ginger, garlic, cilantro, balsamic vinegar, scallions, and ground spices.

1/3 cup soy sauce
2 tablespoons dark-brown sugar
5 garlic cloves, thinly sliced
2/3 cup fresh cilantro, coarsely chopped, plus whole leaves for garnish
1 piece fresh ginger (about 2 inches), peeled and cut into thin strips
5 scallions, trimmed and thinly sliced on the diagonal (1 cup packed)
1 tablespoon balsamic vinegar
1 teaspoon ground coriander
1/2 teaspoon ground pepper
4 chicken drumsticks and 4 thighs (about 2 1/2 pounds total), skin removed
2 medium carrots, thinly sliced crosswise
1 cup plus 1 tablespoon water
1 tablespoon cornstarch
Cooked rice, for serving (optional)

Steps:

  • Preheat oven to 350°F. In a 5-quart Dutch oven or other heavy pot, stir together soy sauce, brown sugar, garlic, cilantro, ginger, 1/2 cup scallions, the vinegar, coriander, and pepper. Add chicken and carrots; toss to coat, then stir in 1 cup water. Cover pot and transfer to oven; cook until chicken is tender, about 1 1/2 hours. Using a large spoon, skim off any fat from surface of cooking liquid.
  • In a 2-cup glass measuring cup or small bowl, whisk cornstarch with remaining 1 tablespoon water. Ladle 1 cup cooking liquid into measuring cup; whisk to combine. Pour into a small saucepan, and bring to a boil; cook until thickened, about 1 minute. Stir mixture into pot to combine.
  • Serve chicken mixture with rice, if desired, garnished with cilantro leaves and remaining 1/2 cup scallions.

3 pounds chicken breasts, with bones and skin, cleaned thoroughly but with some of its fat retained, and dried; each breast cut into quarters
2 tablespoons Chinese white rice wine or gin
3 tablespoons double dark soy sauce
1 tablespoon sesame oil
1 1/2 teaspoons salt
1 1/2 tablespoons sugar
1 tablespoon Chinese white rice vinegar or distilled vinegar
1 teaspoon fresh ground black pepper
4 garlic cloves, thinly sliced
1 1/2 tablespoons peanut oil
4 cups thinly sliced onions

Steps:

  • Place the chicken pieces in a roasting pan and toss with the rice wine or gin, soy sauce, sesame oil, salt, sugar, rice vinegar, and pepper. Put the garlic slices on and under the chicken pieces. Allow to rest for 30 minutes. Preheat the oven to 375°F.
  • Heat a wok over high heat for 30 seconds, add the peanut oil, and coat the wok with it, using a spatula. When a wisp of white smoke appears, add the onions. Stir and cook for a minute, lower the heat to medium, and cook for another 3 minutes until onions are soft. Turn off the heat.
  • Spoon the onions over, around, and under the chicken pieces. Place the roasting pan with the chicken and onions in the preheated oven and roast for 30 minutes. Lower the heat to 350°F, turn the chicken over, and roast for another 30 minutes. Turn the chicken over again and cook for a final 30 minutes, basting halfway through. Turn off the heat. Transfer the chicken to a heated platter and serve with cooked rice.
