SPAM, EGGS, AND RICE
SPAM eggs and rice is a simple yet popular dish in Hawaii. While traditionally served for breakfast, it's also great for lunch, dinner, or even a snack! Feel free to use Turkey SPAM if you want to lighten up the recipe.

Steps:
- Start your rice cooking first. I get mine going in the Instant Pot.
- Mix soy sauce, rice vinegar, sugar, and fish sauce in a bowl.
- Cut your slices of SPAM into 1/2 inch cubes and marinate in the soy sauce mixture.
- When rice has about 10 minutes to go, whisk your eggs.
- Heat a non-stick skillet on medium high and spray with cooking spray. Pour the eggs in. Scramble them with a little salt and pepper, and then put onto a plate. (See how to scramble eggs). Place plate of eggs in the microwave to keep warm.
- Using a large slotted spoon, remove SPAM from marinade and cook in same skillet until a golden brown crust forms on the cubes. (Don't dump marinade in or it will burn)
- Scoop rice onto a plate and top with eggs and SPAM.

SPAM AND EGGS
I'm on a diet where I have to eat over twice as much protein as carbohydrates. This was hard for a rice and biscuits lover such as myself. After days of eating tuna and eggs (not together), I came up with this recipe. It's quick and tasty.

- Heat a non-stick skillet over medium heat. Pour in eggs, then Spam. Cook, stirring, until eggs are nearly done, then sprinkle cheese over, and stir until melted.

SIMPLE SCRAMBLED EGGS
Making scrambled eggs isn't complicated. A bit of salt and pepper for flavour, a little butter to cook, and fresh eggs is all you need for a perfect breakfast. You can modify this recipe to include your favourite ingredients such as cheese, salsa, vegetables, and herbs.

- Whisk eggs, salt and pepper in small bowl. Melt butter in non-stick skillet over medium heat.
- Pour in egg mixture and reduce heat to medium-low. As eggs begin to set, gently move spatula across bottom and side of skillet to form large, soft curds.
- Cook until eggs are thickened and no visible liquid egg remains, but the eggs are not dry.

- In a bowl, whisk together the eggs and milk.

KIMCHI, SPAM, AND EGG SCRAMBLE RECIPE BY TASTY
This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

Steps:
- Dice the Spam into small cubes.
- Crack the eggs into a small bowl and beat to combine.
- Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-4 minutes.
- Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2-3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.
- Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.

SCRAMBLED EGGS AND SHRIMP
I made this on a whim. I just had these things on hand. This is a wonderful combination of eggs, cocktail sauce, and shrimp. It is an interesting mixture of tastes that you wouldn't think would go together, but they do. This goes together very quickly, if you have everything ready to go. This sauce becomes sweet when you cook it. Also I made my own cocktail sauce, but you could use a pre-made sauce. You can cook the eggs in butter instead of oil if desired. Garnish with lemon and parsley.
