ROASTED RED PEPPERS WITH CHORIZO, MANCHEGO, AND ALMONDS (SPAIN)



Roasted Red Peppers with Chorizo, Manchego, and Almonds (Spain) image

4 red bell peppers
2 small links chorizo or a 4-inch piece of large chorizo
Extra-virgin olive oil
2 to 3 tablespoons sherry vinegar
2 garlic cloves, smashed and chopped
1 teaspoon pimenton (smoked paprika)
Kosher salt
1/4 cup toasted sliced almonds
2 cups baby arugula
1/4 cup shaved manchego
3 scallions, thinly sliced

Steps:

  • Preheat the broiler.
  • Put the peppers on a broiler pan and broil them until they are black on all sides. Remove them from the broiler, put them in a bowl and cover with plastic wrap. Let them sit for at least 15 minutes, then remove the plastic wrap and let them cool. Using your fingers scrape off all the black char from the outside of the peppers; use a paper towel if needed to assist with this. Remove the stem and seeds and cut the peppers into 1/2-inch wide strips.
  • While the peppers are cooling, heat a small skillet over medium-high heat and coat the bottom with olive oil. Add the chorizo and cook until it is crispy on all sides. Remove from the pan to a cutting board and finely chop.
  • In a small bowl, whisk together the vinegar, 2 to 3 tablespoons of olive oil, the garlic, and pimenton. Season with salt, to taste. In a large bowl toss together the roasted peppers, chorizo, almonds, arugula, and a little of the vinaigrette. Add the vinaigrette in stages to make sure the veggies are well coated but not overdressed. Taste to check the seasoning. Arrange on a pretty serving dish and sprinkle with shaved manchego and scallions. OLE!!

1/3 cup all-purpose flour
1 tablespoon kosher salt, plus more for seasoning
1/4 teaspoon black pepper, plus more for seasoning
2 pounds boneless pork shoulder, cut into 1-inch pieces
3 tablespoons vegetable oil
2 medium yellow onions, roughly chopped
2 medium green bell peppers, roughly chopped
2 medium cloves garlic, finely chopped
2 tablespoons finely chopped fresh oregano leaves
1 quart (4 cups) low-sodium chicken broth
1 (12 ounce) bottle beer (preferably a lager)
2 teaspoons packed light brown sugar
1 medium bay leaf

Steps:

  • Combine flour, salt and pepper in a shallow dish or large plastic bag. Add pork and toss to coat.
  • Heat oil in a 3 to 4-quart Dutch oven or heavy-bottomed saucepan over medium-high heat. When oil shimmers, add half of pork (be sure to shake off excess flour before adding) and cook until brown on all sides, about 5 to 7 minutes. Remove to a plate and repeat with remaining meat.
  • Discard all but about 1 tablespoon of the drippings, return pot to stove, and add onions, peppers, garlic, and oregano. Season with salt and freshly ground black pepper and cook, until golden, about 3 to 5 minutes.
  • Stir in remaining ingredients and bring to a boil. Reduce heat to low, cover, and let simmer until meat is fork tender, about 1 1/2 hours. Serve.

Pork chops with a spicy spanish twist. A lovely dinner for two.

2 Pork chops
150g Chorizo (diced)
300g/ 1 tin Tomatoes
1 small onion, halved
1-2 cloves of garlic, peeled + left whole
30g unsalted butter
Salt and freshly ground pepper

Steps:

  • Pour tinned tomatoes into saucepan and chop small. (I use scissors for a more rustic look once cooked)
  • Peel and half a small onion and add place into saucepan. Peel garlic cloves and add to saucepan whole. Season with a pinch of salt and pepper.
  • Leave to simmer gently for 20 minutes before beginning on pork.
  • Roast pork chops in oven at 200c for around 25-30 minutes.
  • Pan fry the chorizo in 10g of butter for 3-5 minutes. Remove the garlic and onion from the sauce and add the chorizo + pan juices. Add the remaining butter and simmer for 5 minutes.
  • Spoon thick sauce over the pork chops and serve with potatoes or veg of your choice.

2 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water or 1/2 cup dry white wine
1/3 cup oil or 1/3 cup shortening
2 tablespoons butter
1/2 cup diced celery
1/2 cup diced onion
1/4 cup diced green pepper
1 (16 ounce) can stewed tomatoes, chopped with juice
1/4 teaspoon oregano
1/4 teaspoon thyme
1/2 teaspoon cayenne pepper (more or less to your liking)
1 teaspoon salt
1 tablespoon brown sugar
Spanish olives (optional)

Steps:

  • Preheat oven to 350°F.
  • Mix flour, salt and black pepper; dust chops.
  • Brown chops in skillet; transfer to baking dish.
  • Add water and cover; place in oven.
  • Meanwhile prepare sauce: melt butter, cook celery, onions and green pepper until wilted. So not brown.
  • Add tomatoes and seasoning. Cover and cook 10 minutes.
  • Remove chops from oven. Pour sauce over chops.
  • Return to oven and bake for 1 1/2 hour or until tender.
  • Scrumptuous served with mashed potatoes and a nice green salad.

One of my favorite flavor combinations ever! This pork dish combines the strength of garlic with the sweetness of red pepper balanced by a tangy lemon garnish.

4 large cloves garlic, peeled
1 ½ teaspoons coarse salt
2 tablespoons olive oil
1 tablespoon whole black peppercorns
2 pounds pork tenderloin, cut into 1 inch medallions
2 red bell peppers, julienned
1 cup white wine
2 lemons

Steps:

  • With a large mortar and pestle, mash the garlic, coarse salt, 1 tablespoon olive oil, and peppercorns into a fine paste. Transfer to a large bowl.
  • With a mallet, flatten the pork medallions to 1/4 inch thick. Place in the bowl with the garlic mixture, tossing to coat. Cover, and marinate 2 to 4 hours in the refrigerator.
  • Heat the remaining oil in a large skillet over high heat. Stir in the pork and remaining garlic mixture. Quickly brown pork about 1 minute on each side. Remove from heat, and set aside.
  • Place red peppers into the skillet, and saute 2 to 5 minutes, until tender but firm. Pour white wine into the skillet, and scrape up the browned bits. Reduce heat to low, return pork to skillet, and continue cooking 10 to 15 minutes, to an internal temperature of 180 degrees F (80 degrees C).
  • Slice 1 1/2 lemons into thin rounds. Transfer the pork and pepper mixture to a serving platter. Squeeze juice of remaining 1/2 lemon over the pork and peppers, and garnish with the lemon rounds.

9 pounds skin-on, bone-in pork shoulder (picnic) roast
1 lime, halved
10 cloves garlic
2 ½ tablespoons salt
1 ½ tablespoons olive oil, divided
1 tablespoon dried oregano
1 ½ teaspoons ground black pepper
1 ¼ teaspoons adobo seasoning (such as Goya®)
1 teaspoon vinegar
¼ teaspoon sazon seasoning
2 (12 fluid ounce) cans or bottles beer (such as Budweiser®)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub pork shoulder all over with lime.
  • Mash garlic into paste in a mortar and pestle or pilon. Transfer to a bowl; mix in salt, 1 tablespoon oil, oregano, black pepper, adobo seasoning, and vinegar.
  • Lift skin off the pork to 1-inch from the narrow part of the bone. Make 3/4-inch slits all over the pork with a sharp knife. Stuff seasoned garlic paste into the slits. Pull skin back over to cover the pork.
  • Mix remaining 1/2 teaspoon oil and sazon seasoning together in a small bowl. Rub over the skin of the pork.
  • Transfer pork to a large roasting pan. Pour in beer. Cover with aluminum foil, sealing well.
  • Roast in the preheated oven until slightly pink in the center, about 3 hours.
  • Increase oven temperature to 350 degrees F (175 degrees C). Uncover pork and continue roasting until skin is golden brown and crispy, about 2 1/2 hours. Remove from oven and let stand for 10 minutes before carving.

5 red peppers
2 large tomatoes
1 -2 tablespoon olive oil
2 -3 tablespoons creme fraiche or 2 -3 tablespoons warmed soya cream
sea salt
black pepper

Steps:

  • Put the peppers and tomatoes on a baking tray and roast them at 200c/400F/gas 6 for 20 - 30 minutes, turning from time to time until the peppers have blackened and the tomatoes have cooked.
  • Cool the peppers in a paper bag for 10 minutes, then peel off the skins, core and de-seed them. Skin the tomatoes.
  • Put the peppers and the tomatoes in the blender with the olive oil. Blend to a puree.
  • Pour into a small saucepan and add the creme fraiche or soya cream.
  • Stir well, season to taste and heat through to serve.
