SPARKLING MINT & LEMON JULEPS
A sparkling wine cocktail to start a lovely evening

Steps:
- Put the sugar and lemon juice in a small pan and heat gently to dissolve the sugar. Simmer for 2 minutes to make a syrup. Remove from the heat and leave to cool. This can be made in advance and kept in the fridge for up to a week.
- To serve, pour the lemon syrup into 6 champagne flutes or tall glasses, top up each glass with the chilled sparkling wine, then stir quickly to mix before serving with mint sprigs tucked in the top.
SPARKLING MINT JULEPS
Steps:
- In a jar, combine the mint, bourbon, lime juice, maple syrup and stir. Pour into an 8 ounce julep glass filled with ice and top it off with the sparkling wine. Garnish with more lime slices and mint leaves.

- Muddle mint leaves and simple syrup in a julep cup or rocks glass. Add Champagne, cognac, and bitters. Fill glass partway with crushed ice and stir gently to combine. Mound more crushed ice on top and garnish with a mint sprig and a lemon twist.
CHAMPAGNE JULEP
It's a mint julep, where cognac and sparkling wine replace the bourbon. If you don't have crushed ice, put some in a towel and whack it with a mallet. Or add ice to a shaker and shake vigorously to crack it.

- Pulse together the sugar and mint leaves in a food processor. Pulse until mint leaves are finely diced and incorporated into the sugar.
- Place the mint sugar in a bowl and add 1 tsp water. Mix with a fork until the sugar looks like wet sand. Add a little more water if needed.
- Shape the sugar into molds or use a rectangle cookie cutter. Score the sugar block so it easily breaks into cubes later. Allow to dry 4 hours or overnight. When the sugar is completely dry, remove from the molds or break into cubes and store in an airtight container up to one week.
- Place one sugar cube in the bottom of each flute and top with sparkling wine or non-alcoholic sparkling juice. Garnish with a mint leaf and enjoy!
