1 cup spelt berries (also called "whole grain spelt" or "farro" boiled according to package instructions)
1 lemon (organic, small to medium in size, grated zest and juice of)
2 tablespoons liquid honey
3 tablespoons apple cider vinegar
2 tablespoons vegetable oil (I use canola oil)
100 g dried cranberries (the sweetened kind, roughly chopped)
100 g hazelnuts (dry roasted on a hot frying pan. Remove as much as possible of the brown "shell lining" after roasti)
3 -5 stalks spring onions (thinly sliced, you can also substitute the spring onions with 2 finely sliced stalks of celery)
1 -2 teaspoon dried mint (or to taste)
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)

  • Mix everything together - no particular order nescessary.

According to the author, "This is one of those great Scandinavian recipes that's just as good, if not better, served the next day." Prep time does not include 30 minute chill time.

1 1/2 cups wholegrain spelt berries
4 1/2 cups water
1/4 red onion, finely chopped
1 1/2 cups cherry tomatoes, halved
1 cucumber, coarsely chopped
1 cup black olives, halved (can use kalamata)
1 tablespoon white balsamic vinegar
1 tablespoon olive oil (or canola oil)
1/2 cup crumbled feta cheese

Steps:

  • Combine spelt with water in large pot and bring to a boil. Reduce heat to low and simmer, uncovered, until all of the water is absorbed and grain is tender (about 1 hour). Drain spelt, rinse with cold water, and refrigerate until use (at least 30 minutes to chill; overnight is fine, too).
  • Whisk together balsamic vinegar and oil. Lightly toss together spelt, chopped red onion, cherry tomatoes, cucumbers, and olives, adding oil-and-vinegar dressing last.
  • Either serve immediately, sprinkled with feta cheese, or refrigerate for 1 hour to allow flavors to mingle (adding feta cheese right before serving).

1 cup wheat berries
Kosher salt and freshly ground black pepper
1 cup farro
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons pomegranate molasses
1/4 cup plus 1 tablespoon olive oil
1 pint cherry or grape tomatoes
3 scallions, thinly sliced
Handful basil leaves, roughly torn
4 ounces aged goat cheese

Steps:

  • Put the wheat berries in a medium saucepan, add 6 cups of water and salt and pepper. Bring to a boil, reduce heat and simmer until tender and chewy, about 1 hour, adding more water as needed. Drain any water that is left. Transfer the wheat berries to a large bowl.
  • Put the farro in another medium saucepan and add enough water to cover by an inch and salt and pepper. Bring to a boil, reduce heat and simmer until tender, 25 to 40 minutes, adding more water if needed. Drain any water that is left. Transfer to the bowl with the wheat berries. (The grains can be made up to a day in advance and refrigerated.)
  • While the grains cook, make the mustard vinaigrette. Whisk the vinegar, mustard, pomegranate molasses, salt and pepper to taste in a bowl. Whisking constantly, dribble in the 1/4 cup oil until the mixture is smooth and emulsified. Taste and season as necessary.
  • Heat a large skillet over high heat. Add the remaining 1 tablespoon oil, and when it is almost smoking, add the tomatoes. Season with salt and pepper and cook, tossing once or twice, just until the tomatoes have a few dark spots, about 4 minutes. Remove from heat, cool and halve.
  • Add the tomatoes, scallions and basil to the grains. Pour the vinaigrette around the sides of the bowl; toss and fold the salad together. Transfer to a platter and grate the goat cheese over top.
