MOROCCAN SPICED RACK OF PORK

- Combine the ras al hanout, salt and brown sugar in a small bowl. Score the fat of the pork in a cross-hatch pattern. Rub the ras al hanout mixture all over the pork and allow to sit overnight in the refrigerator.
- Put the pork on a rack and allow it to come to room temperature for about 45 minutes before putting it into the oven.
- Preheat the oven to 425 degrees F.
- Put the apricots, sake, chicken stock, garlic, cilantro, lemons, carrots, onions and turnips in the bottom of a medium roasting pan. Put the rack with the pork in the roasting pan and roast until the pork reaches an internal temperature of 140 degrees F for medium, 40 to 50 minutes. Allow to rest for 20 minutes before carving.
- Transfer the drippings, vegetables and aromatics to a strainer set over a saucepan. Press the vegetables against the strainer to get as much liquid out of them as you can. Place the pan over medium heat, bring to a simmer and simmer until the liquid is reduced by about half, about 5 minutes. Turn the heat to low, add the butter and stir until melted. Keep warm over low heat and serve with the pork.
GRILLED RACK OF PORK WITH SHERRY VINEGAR BBQ SAUCE

- Combine 10 cups water, 1/2 cup kosher salt, brown sugar, mustard seeds, peppercorns, thyme and onions in a large glass bowl or a plastic container. Add the pork, cover and refrigerate for at least 4 hours and up to 12 hours. Thirty minutes before grilling, remove the pork from the brine, rinse with cold water, pat dry and let sit out at room temperature.
- Prepare a charcoal grill for direct and indirect cooking.
- Combine the paprika, cumin, mustard, fennel, the remaining 4 teaspoons salt and ground pepper in a bowl. Rub the pork with the spices and drizzle with canola oil. Sear the pork over direct heat on both sides until lightly golden brown and a crust has formed, about 5 minutes per side. Move the pork over indirect heat (inside of grill should be at about 375 degrees F) and cook, brushing with the Sherry Vinegar BBQ Sauce every 5 minutes or so, until a thermometer inserted in the center registers 145 degrees F, about 1 hour and 15 minutes. Brush with the sauce every 10 minutes or so after the first 45 minutes.
- Remove from the grill, loosely tent with foil and let rest 15 minutes before slicing. You can either slice into individual chops, or slice the loin off the bones and thinly slice.
- Combine the ketchup, vinegar, chicken stock, brown sugar, mustard, paprika and thyme in a medium saucepan and simmer over medium heat until reduced by half. Season with salt, pepper and honey. Let cool to room temperature.
SPICE-RUBBED PORK RACK WITH WHISKEY-CHERRY SAUCE & WILD RICE PILAF

- Cover the pork with brine in a large container and let it marinate in the fridge for 45 minutes (optional). Pat dry with paper towel. Place the garlic, fennel seeds, herbs, salt and pepper on a cutting board and mix it all together. With a large chef's knife, roughly cop everything together. Pour the olive oil directly on the cutting board over the herb mixture and use the end of your knife to smear it together and form a paste. Preheat the oven to 400 degrees and rub the pork with the spice mixture on all sides. Roast in the oven in a roasting rack in the middle of the oven for about 45 minutes until internal temp reads 125 degrees. Remove from the oven and allow to rest for 15 minutes before slicing. CHERRY-WHISKEY SAUCE DIRECTIONS In a small pot, combine cherries, salt, chipotle powder, vinegar, maple, mustard, water and bring to a simmer over medium-high heat. Continue to simmer for 3 minutes; then remove from heat. Add whiskey. Can be made a day ahead and refrigerated until ready to use. WILD RICE PILAF DIRECTIONS Combine the wild rice, 1½ cups of the broth, red onion, and bay leaf in a large pot, and bring to a simmer over medium-high heat. Cover the pot and turn the heat to low. Cook the rice-broth mix for about 20 minutes, until the rice soaks up all the liquid, Pull the pot off the heat and let it sit, tightly covered, for 5 minutes. While the rice is cooking, combine the quinoa with the remaining 1½ cups broth in a small pot, and cook it in the same way you cooked the rice: Bring it to a boil, cover, reduce the heat to low, and let it sit. The quinoa will cook faster: it only needs about 10 minutes to soak up all the broth. Put cherries in a bowl and pour the boiling water over them. Add the whiskey and let the mixture steep for 20 minutes until the cherries plump. When the rice is ready, pull the bay leaf out and discard. Add cherries and half their liquid to the rice, add remaining ingredients.

- Place flour in a shallow dish. Season pork with salt and pepper, then coat with flour, shaking off excess.
- In a large skillet, heat 1 tablespoon oil over medium-high. Working in batches, cook pork until browned and cooked through, about 2 minutes per side. Transfer to a plate and tent loosely with foil.
- Add remaining 2 tablespoons oil and shallots, and cook until softened, 6 to 8 minutes. Season. Add wine and broth and cook, stirring, until reduced by half, about 3 minutes. Add cherries and ginger and cook until softened, about 2 minutes. Return pork to pan along with any accumulated juices and cook until sauce has thickened slightly, 2 minutes. Serve over polenta.

- Preheat oven to 300 degrees F (150 degrees C).
- Melt butter in a skillet over medium-low heat. Cook and stir minced garlic, pepper, oregano, garlic powder, red pepper flakes, dried thyme, mustard, marjoram, and basil in hot butter until fragrant, thick, and easy to spread, 2 to 3 minutes.
- Place pork in a roasting pan. Spread garlic mixture over the top of the roast and season with salt. Pour beer into bottom of the roasting pan and cover pan with aluminum foil.
- Roast in the preheated oven for 45 minutes. Remove aluminum foil and continue to cook for 1 hour. Increase temperature to 425 degrees F (220 degrees C) and cook until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Remove roast to a plate to rest and tent with aluminum foil. Place roasting pan over medium-low heat and whisk flour, garlic salt, and onion powder into the pan drippings. Cook and whisk until gravy thickens, about 5 minutes. Serve roast with gravy.

- Preheat oven to 425*. In a small bowl combine allspice, pepper, and salt; rub on all sides of tenderloins.
- In a 12-inch skillet brown tenderloins in hot oil over medium heat, turning to brown all sides.
- Transfer tenderloins to a shallow roasting pan. Roast for 25 mins or until internal temp reads 160*F and juices run clear.
- Slice pork and arrange on a platter. Spoon BBQ sauce over the top. Serve remaining on the side.
