Spiced Apple Cider Biscotti - The perfect fall biscotti recipe for your cookie jar! Boiled apple cider gives this biscotti an intense apple flavor.

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 eggs
1/4 cup plus 1 Tablespoon boiled apple cider
3 1/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon fresh grated nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 cup powdered sugar
2 tablespoons boiled apple cider ((more if necessary))

Steps:

  • Place 2 cups of fresh apple cider in a small saucepan. Bring to a boil, reduce the heat and boil until it's reduced to 1/2 cup, about 25 minutes. (Be sure to watch it carefully, it will burn quickly towards the end. Trust me on this one.) Remove from the heat and let cool.
  • Preheat the oven to 350 degrees F.
  • In a medium bowl whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  • In the bowl of your stand mixer cream the butter and sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time until incorporated. Add 1/4 cup + 1 tablespoon of the boiled apple cider and mix just until incorporated. Add the flour a little at a time until blended. Divide the dough in half. Place each piece on a parchment lined baking sheet and shape each into a log about 10"-12" long and 4" wide. Damp fingertips will help with this process.
  • Bake for 25 minutes or until golden brown. Remove the pan and let cool until it's cool enough to handle about 10 minutes.
  • Carefully move the logs to a cutting board, using a serrated knife, cut into 1-inch slices. Return slices to baking sheet, with cut side down, and bake 10-15 minutes. Remove from the oven, turn the slices over and bake for another 10 minutes or until mostly firm. They will continue to harden while cooling.Transfer to a wire rack to cool completely.
  • In a small bowl, combine the powdered sugar, 2 tablespoons of boiled cider and whisk until smooth. For easy cleanup, place the wire rack on the parchment lined baking sheet you used to bake them.
  • Drizzle the glaze over the biscotti and allow to set up.

6 cups apple cider or juice
8 cinnamon sticks (3 inches)
2 lemon zest strips
1/8 teaspoon ground nutmeg
8 whole cloves
4 slices red apple, cored and cut in half

Steps:

  • In a large saucepan, combine the apple cider, cinnamon sticks, lemon zest and nutmeg. Insert a clove into each apple slice; add to cider., Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 1 minute. Discard lemon zest strip. Ladle into mugs.

32 whole allspice berries
24 cinnamon sticks
24 cardamom pods
12 whole cloves
12 strips (2 inches wide) orange zest (from about 3 oranges)
1 gallon apple cider

Steps:

  • Combine all ingredients in a pot. Bring to a simmer over medium heat, and cook until fragrant, about 5 minutes. Cider can be kept warm over very low heat. Strain before serving, reserving cinnamon sticks for garnish if desired.

1 piece fresh gingerroot (about 1 inch), thinly sliced
1 teaspoon whole allspice
1 teaspoon whole cloves
1/2 teaspoon cardamom pods, crushed
2 quarts apple cider or juice
Rum, optional

Steps:

  • Place first five ingredients on a double thickness of cheesecloth. Gather corners of cloth to enclose spice mixture; tie securely with string., Place cider and spice bag in a 3-qt. slow cooker. Cook, covered, to allow flavors to blend, 2-3 hours. Discard spice bag. If desired, stir in rum.
