Drizzled with warm caramel sauce, this classic and comforting, old-fashioned dessert is an heirloom recipe. "It was passed down from my Great-Aunt Syd," writes Anne Livingston from Evanston, Illinois. "It's so good in wintertime and no one ever guesses it's as light as it is!" TASTY TIP Chopped pecans make an easy but elegant substitute in this recipe.

1 cup all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg, lightly beaten
2 cups shredded peeled tart apples
1/4 cup chopped walnuts
CARAMEL SAUCE:
1/2 cup packed light brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup water
1 tablespoon butter
1/4 teaspoon vanilla extract

Steps:

In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. Combine egg and apples; add to flour mixture and mix well. Stir in walnuts., Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. , For sauce, in a small nonstick saucepan, combine the brown sugar, flour and salt. Gradually add water; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened. Remove from the heat; stir in butter and vanilla. Serve with warm apple dessert.

A simple spice cake laden with fresh apples, this dessert can be made in no time. If guava jam is not easily found in your area, feel free to substitute plum, cherry or any preserves you have on hand. It's also a terrific brunch cake that begs for a great cup of coffee.

2 cups white sugar
2 cups all purpose flour
4 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoon baking soda
2 eggs
1 cup vegetable oil
1/4 cup freshly squeezed orange juice
4 cups Granny Smith apples, peeled, cored and finely chopped (about 4 to 6 apples)
1 cup walnuts, coarsely chopped
1/4 cup guava jam
1 tablespoon freshly squeezed lime juice
5 ounces cream cheese, room temperature

Steps:

Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip eggs until frothy, about 3 to 4 minutes then add oil and orange juice and mix thoroughly. Add dry ingredients and beat with whip at low speed until thoroughly combined.
Fold in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or until firm on top. Cover with aluminum foil if top gets too brown. Cool on rack 5 minutes, then invert onto rack and cool completely. Serve with guava cream cheese topping spread over the top.
Mash all ingredients in a bowl with a fork until light and fluffy.

2 sticks unsalted butter, melted and cooled slightly, plus more, room temperature, for brushing
2 cups unbleached all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
3 large eggs, room temperature
1 1/2 cups sugar
1 teaspoon pure vanilla extract
1/2 cup sour cream
2 Granny Smith apples, peeled and cut crosswise into scant 1/4-inch rounds, seeds removed
2 tablespoons fresh lemon juice
1/3 cup apricot jam

Steps:

Preheat oven to 375 degrees. Brush a 9-by-3-inch baking dish with butter. Line bottom and 2 long sides with parchment, leaving a 2-inch overhang; butter parchment.
Whisk together flour, baking powder, salt, baking soda, allspice, and ginger. In a large bowl, whisk eggs until pale and foamy. Whisk in sugar and vanilla until combined. Add half of flour mixture, then half of butter and sour cream, whisking just until combined. Repeat with remaining flour mixture, butter, and sour cream (do not overmix). Transfer batter to prepared baking dish, smoothing top with a spatula.
Toss apples with lemon juice and scatter evenly over batter. Bake until apples are tender and golden brown in places and a toothpick inserted into center of cake comes out with moist crumbs, 40 to 45 minutes. Warm jam in a small saucepan over medium until it becomes thin and brushable. Immediately brush apples with jam. Let cool completely on a wire rack. Lift cake from pan using parchment and transfer to a board to slice; serve.
