SPICED MINCEMEAT COOKIES
I love mincemeat and grew up eating my grandma's pies at every holiday feast, but I realize it's not for everyone. I've found that while people shy away from the strong flavor of mincemeat pie, a sweet and spicy cookie is a much more gentle introduction to mincemeat and it's a good way to win converts!

MINCEMEAT COOKIES WITH COFFEE ICING
I tried this recipe for the first time this year after finding it in DDJ. It was a big hit. The mincemeat keeps the cookies moist. The coffee icing is a wonderful combination with the mincemeat flavor!

SOFT MINCEMEAT COOKIES
WE CALL these "Santa's cookies" because they're what we put out for Santa instead of the usual decorated Christmas cutouts. These cookies remain a traditional part of my holiday baking. Besides a plate for Santa, they fill gift plates for family and friends. I'm often told they're the first to disappear. -Evelyn Wadey, Blackfalds, Alberta
