SPICY CHICKEN KEBABS WITH LEMON POTATOES



Spicy Chicken Kebabs with Lemon Potatoes image

Number Of Ingredients 17

2 garlic cloves, minced
1 1/2 tablespoons chili paste, such as Sambal Oelek
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 skinless, boneless chicken breasts, cut into chunks
1 yellow bell pepper, cut into chunks
12 cherry tomatoes
Cooking spray
Fresh cilantro, finely chopped
1/4 cup plain yogurt
4 medium potatoes, washed and cut into chunks
1/4 cup olive oil
1 lemon, zest and juice
3 cloves garlic, crushed
Salt and freshly ground black pepper

Steps:

  • Spicy Chicken Kebabs
  • Combine first 6 ingredients in a medium bowl. Add chicken and toss to coat. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 1 day.
  • Immerse 12 long wooden skewers in water; soak 30 minutes. Drain and pat dry.
  • Meanwhile, remove chicken from marinade (discard marinade) and thread onto skewers along with bell pepper chunks and cherry tomatoes.
  • Preheat gas grill or grill pan to medium-high heat. Coat with cooking spray. Place skewers on grill and grill 4 minutes on each side, or until chicken is no longer pink.
  • In a small bowl, combine fresh cilantro and yogurt. Serve as a dipping sauce with kebabs.
  • Lemon Potatoes
  • Preheat oven to 400 degrees F.
  • In a medium bowl, mix together the oil, lemon zest and juice, and minced garlic. Add potato chunks and toss to coat evenly.
  • Spread the potatoes in a single layer on a rimmed baking sheet. Season with salt and pepper. Bake for 30 minutes, tossing occasionally, or until the potatoes are tender and crisp.

1 Chicken breasts , cut into cubes
1 Red Bell pepper (Capsicum) , cut into squares
1 Onion , cut into chunks
1 Lemon juice
1 teaspoon Dried Thyme Leaves
1 teaspoon Red Chilli flakes
1 teaspoon Black pepper powder
2 tablespoon Extra Virgin Olive Oil
Salt , to taste

Steps:

  • To begin making the Spicy Lemon Chicken Kebab Recipe, thoroughly wash and clean the chicken, and cut them into cubes.
  • To marinate the chicken, in a mixing bowl, combine the chicken pieces along with the bell peppers and onions and lemon juice, dried thyme, red chilli flakes, pepper powder, olive oil, salt and mix well. Rest it for at least for about 1 hour.
  • Once it is well coated and marinated, start skewering by first placing the red bell pepper, a chicken cube followed by a onion chunk, repeating the sequence one more time. Ensure the skewer is not over crowded and packed.
  • Heat a grill pan, drizzle some oil and place the skewers and cook for at least 25 minutes. Keep brushing the extra marinade over the chicken and keep turning the skewers so that it is evenly cooked.
  • Serve the Spicy Lemon Chicken Kebab Recipe, along with tzatziki dip, sliced onions and green chutney to make it more interesting.

1/4 cup lemon juice
4 tablespoons olive oil, divided
3 tablespoons white wine
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 medium lemons, halved
Minced chives

Steps:

  • In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours., Drain chicken, discarding marinade. Thread chicken onto 6 metal or soaked wooden skewers. Grill, covered, over medium heat until no longer pink, turning once, 10-12 minutes., Meanwhile, place lemons on grill, cut side down. Grill until lightly browned, 8-10 minutes. Squeeze lemon halves over chicken. Drizzle with remaining oil; sprinkle with chives.
