2 bacon strips, cooked and crumbled
1/3 cup mayonnaise
1 tablespoon sugar
1 tablespoon red wine vinegar

Steps:

  • In a bowl, combine the first six ingredients. Combine the mayonnaise, sugar and vinegar; add to chicken mixture and toss to coat. Refrigerate until serving.

2 tbsp olive oil
5 shallots , finely sliced
handful pitted black olives
4 roast chicken breasts , sliced
4 tbsp soy sauce
2 red chillies , deseeded and sliced
2 garlic cloves , sliced

Steps:

  • Steam the broccoli for 4 mins until just tender, tip into a large bowl, then season. Meanwhile, heat the oil in a pan, then fry the shallots for 2 mins. Add the chillies and garlic, then cook for a further 4 mins until softened.
  • Remove the shallots, chilli and garlic with a slotted spoon, then mix with the broccoli, olives and chicken. Add the soy sauce to the pan, warm over a medium heat, then pour over the salad. Eat warm or cold.

2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon white pepper
1 pound broccoli
3 tablespoons chili or vegetable oil
1 hot fresh green chili, cut into very thin slices
2 tablespoons brown bean sauce
2 teaspoons finely chopped garlic
1 teaspoon sugar
1 teaspoon finely chopped gingerroot
3 green onions, cut diagonally into 1-inch pieces

Steps:

  • Mix chicken, cornstarch, salt and white pepper in medium bowl. Cover and refrigerate 20 minutes.
  • Peel outer layer from broccoli. Cut broccoli lengthwise into 1-inch stems; remove flowerets. Cut stems diagonally into 1/4-inch slices. Place broccoli flowerets and stems in boiling water; heat to boiling. Cover and cook 1 minute; drain. Immediately rinse with cold water; drain.
  • Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side. Add chili, brown bean sauce, garlic, sugar and gingerroot; stir-fry 10 seconds. Add chicken; stir-fry about 2 minutes or until chicken is no longer pink in center. Add broccoli and onions; stir-fry about 1 minute or until broccoli is heated through.

2 cups water
1 cup sake
2 slices fresh ginger
2 scallions, green parts only
4 tablespoons soy sauce
1 tablespoon sugar
3 tablespoons rice vinegar
2 teaspoons chili bean paste
2 tablespoons sesame oil
2 tablespoons toasted sesame seed
1 teaspoon garlic, grated
1 teaspoon grated ginger
1 tomato, sliced
1 cucumber, julienned
1 fresh cilantro

Steps:

  • In a medium-size pot, add the chicken breast, water, sake, sliced ginger, and scallions, and bring to a boil over high heat.
  • Once the water is boiling, flip the chicken breast over and put the lid on top of the pot. Turn off the heat and leave the pot sit at room temperature for 30 minutes. Chill in the fridge.
  • In a small bowl, combine all the sauce ingredients and mix well.
  • On a plate, arrange the sliced tomatoes, julienned cucumbers, and sliced chicken breast.

  • Cook pasta according to package directions. Drain; set aside.

Coarse salt
Flour for dredging
Vegetable shortening for deep frying

6 scallions, chopped (including green part)
Freshly ground pepper to taste

Steps:

  • Marinate the chicken in a mixture of the lemon juice and pepper for a couple of hours.
