Spicy Mexican Couscous Salad image

A spicy leeeeetle salad to serve with a great Mexican meal. Posted for ZWT3. Adapted from a food blog.

1 (10 ounce) package couscous
1/2 teaspoon cumin
15 ounces black beans, drained and rinsed
1 1/4 cups fresh corn kernels
1/2 cup purple onion, chopped
1 yellow bell pepper, seeded and chopped
1 jalapeno, seeded and diced
1 tomatoes, chopped coarsely
1/2 cup chopped fresh cilantro
1 large lime, juice of
1/2 teaspoon seasoning salt
1 large garlic clove, minced
2 -3 tablespoons olive oil

Steps:

  • Cook the couscous per package directions.
  • Add the cumin, black beans, and chopped vegetables and herbs.
  • Whisk together the dressing ingredients and pour over couscous.
  • Toss lightly until well distributed.

100g couscous
220g can chickpea , rinsed and drained
100ml hot chicken stock
zest and juice 1 lemon
1 roasted red pepper , chopped
25g flaked toasted almonds
handful mint leaves, chopped
2 tbsp natural Greek yogurt
1 tsp harissa

Steps:

  • Tip the couscous and chickpeas into a bowl and pour over the stock. Cover and leave for 5-10 mins until the couscous has absorbed the stock. Allow to cool a little. Toss through the lemon zest and juice, pepper, almonds and mint. Spoon into a container, then top with the yogurt and a drizzle of harissa.

1 shallot
1.25 cups Vegetable broth
1 tsp Sambal oelek
4 ozs Couscous (instant)
1 lemon
1 pinch honey
salt
1 Tbsp vegetable oil
4 ozs small Prawn (cooked)
0.5 ripe Avocado (about 100 grams)
peppers

Steps:

  • Peel the shallot and chop finely. Bring to a boil with 250 ml (approximately 1 cup) of broth and ¾ teaspoon sambal oelek.
  • Place couscous in a heat-proof bowl, pour in the boiling liquid and let soak according to package instructions.
  • Meanwhile, cut lemon in half and squeeze the juice. Mix remaining broth with 2 tablespoons lemon juice and honey and season with salt. Whisk in oil.
  • Rinse prawns briefly, pat dry with paper towels and mix with the dressing.
  • Pit half an avocado, peel and dice the flesh. Immediately sprinkle with 1 tablespoon lemon juice and season lightly with pepper.
  • Fluff couscous with a fork. Add prawns and avocado and mix in. Season salad with remaining sambal oelek, remaining lemon juice and salt and pepper to taste.

When I make this for picnics, I prepare it the night before, refrigerate it, and serve it cool the next day.

Yield Yields about 5 cups.

Number Of Ingredients 15

2 cups vegetable broth, low-salt chicken broth, or water
1-1/2 tsp. sweet paprika
1 pinch saffron threads (optional)
3/4 tsp. harissa or 2 to 3 dashes of hot sauce, such as Tabasco
Kosher salt and ground white pepper
1/4 cup plus 3 Tbs. extravirgin olive oil
1 small yellow onion, cut into small dice
1 small red bell pepper, seeded and cut into small dice
1 cup couscous
1/2 tsp. finely grated orange zest
1/4 cup fresh orange juice
1/2 cup thinly sliced scallions
1/2 cup sliced almonds, lightly toasted
1/4 cup dried currants
1/4 cup coarsely chopped fresh flat-leaf parsley

Steps:

  • In a medium saucepan, bring the broth or water, paprika, saffron (if using), harissa or hot sauce, 1/2 tsp. salt, and a pinch of white pepper to a boil over medium heat. Cover and reduce the heat to low to keep the broth at a simmer. Taste and adjust the seasonings. Meanwhile, heat 1/4 cup of the olive oil in a large sauté pan over medium heat. When the oil is hot, add the onion and red pepper and cook until the vegetables are soft but not browned, 8 to 10 min. Add the couscous and stir to coat the grains with oil. Remove the pan from heat. Add the simmering liquid to the couscous and stir to evenly distribute the liquid. Cover the pan and let it sit until all the liquid is absorbed and the couscous is tender, 5 to 7 min. Remove the lid and fluff the couscous with a fork. Set aside to cool for 15 min.
  • Whisk the remaining 3 Tbs. olive oil with the orange zest, orange juice, and 1/2 tsp. salt. Toss with the couscous. Let cool completely and then transfer to an airtight container or a bowl covered with plastic wrap and refrigerate. Put the scallions, almonds, dried currants, and parsley in a separate container and refrigerate.
  • Just before heading to the picnic, stir the scallions, almonds, currants, and parsley into the couscous. Taste and adjust the seasonings as needed.

1 1/2 cups water
1/4 teaspoon salt
1 can (15 oz) Chickpeas or garbanzo beans, drained, rinsed
1 can (14.5 oz) diced tomatoes and green chiles, undrained
1/2 cup frozen shelled edamame (soybeans) (from 12-oz bag) or lima beans (from 9-oz bag), thawed
2 tablespoons chopped fresh cilantro
Green bell peppers, halved, if desired
3 tablespoons olive oil
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon

Steps:

  • Cook couscous in water with 1/4 teaspoon salt as directed on package.
  • Meanwhile, in medium bowl, mix Chickpeas, tomatoes, soybeans and cilantro. In small bowl, mix dressing ingredients until well blended.
  • Add cooked couscous to salad; mix well. Pour dressing over salad; stir gently to mix. Spoon salad mixture into halved bell peppers. Serve immediately, or cover and refrigerate until serving time.

1/2 cup dried apricots, sliced
1/2 cup green onions, sliced

1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper

1 cup chicken broth
1 cup quick-cooking couscous
1 cup red seedless grapes, halved
1/2 cup pine nuts, toasted
1/2 cup dried apricot, sliced
1/2 cup sliced green onion
2 tablespoons chopped fresh parsley
2 tablespoons chopped of fresh mint
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup chicken broth
1/4 teaspoon ground cinnamon
salt and pepper
1/8 teaspoon cayenne pepper

Steps:

  • Bring 1 cup of chicken broth to a boil; stir in couscous.
  • Remove from the heat and cover.
  • Let stand until cool and then fluff with a fork; transfer into a large bowl.
  • Add in grapes, pine nuts, apricots, green onions, parsley, and mint.
  • Next add oil, lemon juice, 1/4 cup chicken broth, cinnamon, salt, pepper, and cayenne; let stand for 30 minutes before serving to let flavors mingle; may cover and chill for up to 24 hours; bring to room temperature before serving.

1 teaspoon chili powder
3 tablespoons extra-virgin olive oil
1 (6 ounce) package feta cheese, cubed
1 cup water
1 cup couscous
1 medium cucumber, seeded and chopped
1 medium tomato, chopped
1 medium green bell pepper, chopped
¼ medium red onion, chopped
¼ cup pitted black olives
¼ cup pitted green olives
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
4 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon white wine vinegar
1 tablespoon soy sauce

Steps:

  • Heat a skillet over low heat. Add oregano and chili powder to the dry, hot skillet; cook and stir until fragrant and toasted, about 1 minute. Remove from heat and mix with olive oil. Pour over feta cheese and let marinate for at least 30 minutes.
  • Meanwhile, bring 1 cup water to a boil. Pour boiling water over the couscous and wrap it with plastic for 10 minutes.
