Slow Cooker Spicy Barbecue Cowboy Beans image

Red and pink beans with smoky barbecue sauce, bacon and jalapeno.

15.5 oz. package Hurst's BBQ Style Cowboy Beans ((save the seasoning packet for later in the recipe))
16 oz. hickory smoked bacon, (sliced, cooked and drained)
2 jalapenos (sliced)
1 yellow onion (diced)
2 garlic cloves (minced)
6 cups chicken broth
2 cups barbecue sauce
the included seasoning packet

Steps:

  • Place the beans in the colander. Sort through the beans with your hands, discard any debris. Rinse the beans.
  • Add the beans to the slow cooker.
  • Add the bacon, jalapeno, onion, garlic and chicken broth. Wait to add the barbecue sauce and seasoning mix.
  • Place the lid on the slow cooker. Cook on high for 6 hours without opening the lid during the cooking time.
  • Add the barbecue sauce and seasoning packet. Stir.
  • Serve and enjoy!

1 pound center-cut ham steak (cooked and cubed)
1 pound dried pinto beans
1 pound salt pork
1 jalapeño pepper (minced)
1 onion (chopped)
2 cloves garlic (minced)
5 tablespoons chili powder
1 tablespoon cayenne powder
1 tablespoon Worcestershire Sauce
1 bay leaf
1 green onion (for garnish, chopped)
Salt and pepper (to taste)

Steps:

  • In a dutch oven or large soup pot, add the beans, then add water until the beans are covered by approximately 3 inches.
  • Bring the water to a boil, then remove the pot from the heat. Cover the pot and let the beans sit for 1 hour.
  • Drain the beans and place them back in the dutch oven or large soup pot. Cover the beans again with water (approximately 2 inches above the beans), then add the ham steak, salt pork, jalapeño pepper, onion, garlic, chili powder, cayenne powder, Worcestershire sauce and bay leaf.
  • Bring the mix to a quick boil, then reduce to medium heat. Continue to simmer the cowboy beans for 2 to 3 hours, until the beans are tender and the sauce has thickened.
  • Remove the bay leaf and salt pork, and add salt and pepper to taste (Careful - the salt pork already adds a salty flavor).
  • Serve with green onion garnish for color.

4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste
4 cloves garlic, minced

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  • In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)

1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
