8 medium chicken drumsticks (4 oz each)
2 tablespoons olive oil
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
2 tablespoons chopped parsley
Pinch red pepper flakes

Steps:

  • Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
  • Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
  • Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
  • Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
  • If you wish, garnish with chopped parsley and red pepper flakes, then serve.

8 medium chicken drumsticks
1 medium onion
nonstick cooking spray
6 ounces vegetable juice, spicy hot (3/4c.)
1 teaspoon cornstarch
1/2 teaspoon salt
0.75 (8 ounce) package bow tie pasta
parsley sprig, for garnish

Steps:

  • Remove skin from drumsticks. Dice onion. Spray a 10-inch skillet with cooking spray. Over medium-high heat, cook drumsticks and onion until onion is golden and drumsticks are browned, turning drumstick , occasionally.
  • In a cup mix cornstarch with 1/2 cup water. Stir cornstarch mixture, vegetable juice, and salt into drumstick mixture; heat to boiling. Reduce heat to low; simmer, covered, 20 minutes or until juices run clear when chicken is pierced with a knife, turning drumsticks occasionally.
  • While drumsticks are cooking, prepare bow-tie pasta as label direct; drain; keep warm.
  • To serve, arrange drumsticks and sauce. on warm platter. Spoon bow-tie pasta next to drumsticks. Garnish with parsley.

1 cup barbecue sauce
1 tablespoon hot sauce
2 teaspoons dried oregano
2 teaspoons ground cumin

Steps:

  • Spray a 13x9 inch baking pan with cooking spray.
  • Put drumsticks in the baking dish and sprinkle with salt and pepper.
  • Bake at 375 degrees for 30 minutes.
  • In a bowl, mix together the remaining ingredients.
  • Take drumsticks out of the oven and pour sauce mixture over them.
  • Bake the drumsticks for 30 minutes or until juice run clear.

4 chicken drumsticks
3 tablespoons chili powder
2 teaspoons ground cumin
1 cup bottled chili sauce
1/4 cup dark (robust) molasses
3 tablespoons cider vinegar
2 tablespoons orange juice
2 teaspoons grated orange peel

Steps:

  • Prepare barbecue (medium-high heat).
  • Sprinkle drumsticks with salt and generous amount of pepper. Grill drumsticks 12 minutes, turning occasionally.
  • Meanwhile, stir chili powder and cumin in heavy small saucepan over medium heat until toasted and fragrant, about 1 minute. Mix in chili sauce, molasses, cider vinegar, orange juice, orange peel. Reduce heat to medium-low and simmer until sauce thickens slightly, about 6 minutes.
  • Reserve half of sauce in small bowl. Brush remaining sauce on chicken; continue to grill until cooked through, crisp and brown, turning occasionally, about 15 minutes longer. Serve chicken with reserved sauce.
