SUPER SPICY RIBS

- A few hours before beginning the slow cooking of the ribs, make the rub by combining garlic powder, onion powder, chili powder, paprika, mustard, and salt in a bowl and mixing well. Rub the mix into the meat and let sit for at least an hour. The mixture will begin to cure the meat.
- About 30 minutes before beginning to barbecue, heat the grill.
- Wrap ribs in heavy duty aluminum foil and place on the grill over indirect heat and slowly cook for about 2 hours, turning occasionally.
- While the ribs are cooking, begin the sauce on the stovetop. Combine apple juice, tomato juice, molasses, Worcestershire sauce, hot sauce and barbecue sauce in a saucepan, stirring to mix well. Simmer over low heat until it beings to thicken. Let simmer for 1/2 hour. Reserve about 1 cup to serve on the side with the ribs, and use the rest to brush on the ribs as they barbecue.
- When the meat begins to become fork tender, unwrap ribs and begin brushing on the sauce. Continue to apply the sauce to the ribs during the barbeque process. When ribs are able to pull apart, they are ready.
SPICY PORK RIBS
These are the best ribs ever. The trick is to buy belly of pork and cook it fairly slowly. The spices and juices cook out to a great thick sauce, which should be brushed over the ribs as they cook.

- Preheat the oven to 350 degrees F (180 degrees C/gas 4). Pound the garlic cloves with the spices to make the spicy marinade, then add the olive oil. Cover all the pork with the marinade, then place in a roasting tray, cover with foil, and cook for 20 minutes.
- Mix the orange and lime juice and zest with the honey. Remove the pork from the oven take off the foil and brush the meat with the honey mix. Continue to cook at 375 degrees F (190 degrees C/gas 5) for about 25 minutes, basting occasionally.
SPICY PORK RIBS WITH GARLIC AND TOMATOES
Boy do we love ribs!! This recipe is one of my favorites. Tons of flavor and sure to please everyone! Note: St. Louis-style ribs, cut from the spare rib and trimmed so there is less waste, are particularly meaty and succulent. The racks are pretty large, so you'll need a big roasting pan for this recipe.

- Preheat oven to 350 degrees.
- Season ribs with salt and pepper and place in large, flame-proof roasting pan. Pour tomatoes over ribs and scatter basil on top.
- In skillet over medium-high heat, saute bacon until slightly crisp, about 4 minutes.
- Add half the garlic and all the onions and cook until browned, about 7 minutes.
- Pour in wine and let mixture simmer until reduced by half, about 10 minutes.
- Pour onion mixture over ribs, cover pan tightly with foil, and bake until meat is literally falling off the bone, 2 1/2 to 3 hours. Transfer ribs but not sauce to a plate.
- Just before serving, in skillet over high heat, warm oil. Add remaining garlic and saute until fragrant and lightly golden, about 2 minutes.
- Add vinegar and red pepper flakes and bring back to simmer. Pour garlic mixture into pan with sauce from the ribs, place it over high heat, and let it reduce by about a third, about 10 minutes.
- Add ribs to pan and toss them around to coat them in sauce and reheat them. Serve them hot, garnished with more basil, if desired.

SWEET AND SPICY COUNTRY STYLE RIBS

- Mix the first 7 ingredients together in a bowl. Make sure the ingredients are well mixed.
- Place ribs in a baking pan with 2 inch sides that will fit the ribs without them touching each other. Important that the ribs have air flow between them.
- cover all four sides of the ribs with the spice mix. Let them set for 30 minutes. In the meantime preheat the oven to 400F degrees. To get the proper crust on the ribs, the oven must be preheated.
- After 30 minutes, pour honey evenly over the tops of the ribs. Place in the oven for 40 minutes.
- Depending on the size of the ribs, they should be done and tender. If the internal temp is less than 160F degrees, put back in the oven for 10 minutes at a time until done.

- Slice ribs into individual pieces, trimming excess fat.
- Boil until cooked, drain.
- (this step is optional, can be done either way).
- Combine ingredients and mix well.
- Marinate for 2-24 hours.
- Grill for best results.

SPICY COUNTRY RIBS
I use country ribs for this recipe because they are meatier than baby-backs and tend to have fewer bones. You could however, make this with baby-back ribs and reduce the cooking time somewhat. I like to serve them with biscuits and cole slaw on the side.

- Combine the onion, ketchup, vinegar, brown sugar, salt, Worcestershire, chili powder and oregano in a 4 6 quart slow cooker.
- Stir in the ribs.
- Cook on low heat for 6 hours, or on high for 3 ½ hours.
- Using tongs, remove the ribs from the cooker and arrange on a broiler pan.
- Heat the broiler.
- Pour the juices from the cooker into a bowl and place in the freezer for 10 minutes to hasten the separation of the fat.
- Remove and discard the fat.
- Pour the defatted juices into a saucepan; boil over high heat until reduced by half, about 15 minutes.
- Broil the ribs about 6 inches from the heat until browned.
- Serve with the remaining sauce on the side.

- 1. Preheat oven to 375 degree F. Wash ribs and dry. In a large bowl coat ribs with the oil. Next mix the spices and evenly coat the ribs; rubbing the spices into the ribs thoroughly.
- 2. Spray a 9 x 13 baking pan with cooking spray. Place he ribs in a single layer. Cover with foil and bake for about 1 hour and 30 minutes or until fork tender. Remove foil and bake another 10 to 15 minutes to get some browning. Drain liquid from ribs.
- 3. Drizzle the ribs with about half the sauce; moving ribs around in the sauce to coat. Bake for another 5 minutes. The glaze should be setting up on the ribs, nice and sticky.
- 4. I serve these with rice and use the remaining sauce to drizzle over the ribs once plated, and on the rice. It's delicious..
- 5. Sauce preparation: Combine all ingredients with a whisk, in a medium sauce pan. Over medium heat, bring to a boil, constantly stirring until thicken. Set aside.
CURRY-ORANGE COUNTRY PORK RIBS
Spicy country pork ribs, cooked in the oven. Served with a peanut dipping sauce. Prep time includes marinating time.

- Combine the orange juice, onion, garlic, brown sugar, curry powder, ginger and red pepper.
- Place the ribs in a large glass pan and pour the marinade over. Cover and refrigerate about 8 hours or overnight, turning ribs over a couple of times.
- Preheat oven to 325°F.
- Coat a large baking pan with rack with non-stick cooking spray.
- Remove the ribs from the marinade; reserve the marinade.
- Place the ribs on rack in baking pan, cover with foil and bake 1 hour.
- Uncover and sprinkle with the salt and pepper and continue baking another 45 minutes, basting occasionally with the marinade.
- Serve with Spicy Peanut Sauce.
- SPICY PEANUT SAUCE:.
- Stir together peanut butter, yogurt, soy sauce, sesame oil, hot chili oil and curry powder. Slowly add boiling water, stirring until smooth.
- Serve immediately.
