BRAISED FISH WITH FENNEL AND TOMATO

Braised Fish with Fennel and Tomato image

Because fish fillets, unlike dense cuts of meat, cook quickly, the braising liquid is infused with flavor first, as in this dish, which blends tomatoes, fennel, garlic, and lemon.

Number Of Ingredients 9

3 tablespoons extra-virgin olive oil, plus more for drizzling
1/3 cup dry white wine

BROWNED AND BRAISED FISH IN TOMATO SAUCE

Browned And Braised Fish In Tomato Sauce image

Provided by Mark Bittman

Categories     dinner, easy, weekday, main course

Time 40m

Yield 4 servings

Number Of Ingredients 10

4 tablespoons extra virgin olive oil
1 or 2 thick fillets of striped bass or similar fish, about 1 1/2 pounds (skin on, scaled and dried)
Salt and pepper
Flour for dredging
1 medium onion, thinly sliced
1 teaspoon slivered garlic
1 red or yellow bell pepper, cored, seeded and sliced
2 cups tomatoes (fresh or canned), cored and chopped
1 tablespoon capers, drained (optional)
Chopped fresh parsley leaves for garnish

Steps:

  • Put half the oil in a deep skillet wide enough to accommodate the fish. Turn heat to medium high. Sprinkle fish with salt and pepper, and dredge skin side in flour. When oil is hot (a pinch of flour will sizzle), put fish in pan skin side down and cook, adjusting heat as necessary so fish browns but does not burn. Cook without turning 5 to 10 minutes, until bottom of fish is nicely browned. Turn off heat, and carefully remove fish to a platter, browned side up.
  • Let pan cool a few moments, and wipe it out with paper towels. Add the remaining oil and the onion, garlic and pepper; cook together over medium-high heat, stirring occasionally, until softened, about 10 minutes. Add tomatoes and, if you are using them, capers. Cook, stirring occasionally, until tomatoes break up, 5 to 10 minutes; adjust heat so mixture bubbles steadily but not violently.
  • Return fish to pan skin side up, and cook just until fish is tender. Garnish, and serve fish with sauce.

BRAISED WHOLE FISH IN HOT-AND-SOUR SAUCE

Braised Whole Fish in Hot-and-Sour Sauce image

It doesn't take long, but this dish requires a fairly large pan. A long, narrow roasting pan will do in a pinch, especially if it's nonstick. If you have trouble getting the fish to fit into your pan, by all means cut off its head and tail. Or try making this with smaller fish, in the 2- to 3-pound range. Then, when you feel you've gotten the hang of browning a whole fish, move on to larger specimens. This is a blast to eat-and should have enough sauce to make plain white rice a terrific accompaniment. A simple Chinese-style vegetable like Snow Peas with Ginger (page 470) would make the meal even better.

Yield makes 4 servings

Number Of Ingredients 16

One 3- to 5-pound grouper, red snapper, carp, or sea bass, gilled, gutted, and scaled, head may be on or off
1 cup fish or chicken stock, preferably homemade (page 161 or 160), or water
4 fresh or dried shiitake (black) mushrooms
1/2 cup plus 2 tablespoons peanut or neutral oil, like corn or grapeseed
Flour for dredging
Salt to taste
1 large onion, sliced
2 teaspoons minced garlic
1 tablespoon peeled and minced or grated fresh ginger
2 or 3 dried red chiles, stemmed, seeded, and minced, or 1 teaspoon hot red pepper flakes, or to taste
1 tablespoon fermented black beans (page 207)
2 tablespoons Shaoxing wine or dry sherry
2 tablespoons soy sauce
1/4 cup rice or white wine vinegar
2 teaspoons dark sesame oil
Minced scallion and chopped fresh cilantro leaves for garnish

Steps:

  • Make 3 shallow cuts, from top to bottom, on each side of the fish. If you're using dried mushrooms, heat the stock or water and soak the mushrooms in it.
  • Put the 1/2 cup oil in a nonstick skillet that will accommodate the fish and place over high heat. A few minutes later, when the oil is hot-a pinch of flour will sizzle-dredge the fish heavily on both sides in the flour, then gently lower it into the oil. Cook, sprinkling with salt, until golden brown on both sides, turning just once and adjusting the heat if necessary to prevent scorching. Transfer the fish to a platter and pour off the oil from the skillet. Return it to the stove over medium heat and add the remaining 2 tablespoons oil.
  • Drain the mushrooms if dried (reserving the stock) and slice them thinly, discarding their stems. Add them to the skillet along with the onion and turn the heat to high. Cook, stirring occasionally, until the onion softens, about 5 minutes. Add the garlic, ginger, chiles, and black beans and cook, stirring, for another minute. Add the wine, soy sauce, vinegar, and stock. Bring to a boil, then turn the heat to low and return the fish to the pan.
  • Cover and cook gently until the fish is cooked through (peek into one of the slashes; the meat should be opaque clear to the bone), about 15 minutes. Use a pair of spatulas to gently move the fish to a platter. If the mixture is very soupy, turn the heat to high and reduce it until thick, stirring occasionally (if it's not, proceed). Spoon the sauce over and around the fish, then drizzle with the sesame oil and garnish with the scallion and cilantro.
  • Omit the chiles or not, as you like. After adding the liquids in step 3, stir in 1/2 cup honey or sugar and cook until it dissolves. Proceed as directed.
  • Omit the onion, chiles, black beans, and vinegar. Add 1/4 cup bamboo shoots, sliced, with the mushrooms to the skillet in step 3. Proceed as directed.

BRAISED FISH WITH FENNEL AND TOMATO

Braised Fish with Fennel and Tomato image

This type of quick braising is similar to shallow poaching (page 210): An aromatic liquid is first simmered to allow the flavors to deepen, then simmered with fish, which takes on some of its character. Also, as with some poaching methods, the braising liquid becomes the sauce. Match the fish and aromatics wisely so as not to overwhelm one or the other. A fish such as salmon is easy to partner; its pronounced taste won't be flagged by aggressive flavors, such as rosemary or curry powder. Milder-tasting fish, such as grouper, halibut, sea bass, and striped bass, require more subtle companions, like the fennel, tomatoes, and lemon in this recipe. All of these fish are moist and firm-fleshed, ideal for braising.

Yield Serves 4

Number Of Ingredients 9

3 tablespoons extra-virgin olive oil, plus more for drizzling
1/3 cup dry white wine
1/4 cup water
1 medium fennel bulb, halved, cored, and thinly sliced lengthwise
2 medium tomatoes, cored and coarsely chopped (1 1/2 cups)
3 to 4 garlic cloves, peeled and thinly sliced
4 thin lemon rounds
Coarse salt and freshly ground pepper
4 skinless fillets firm-fleshed fish, such as grouper, halibut, sea bass, or snapper

Steps:

  • Prepare braising liquid Pour the oil, wine, and water into a large (13-inch) skillet, then add the fennel, tomatoes, garlic, and lemon slices. Season with salt and pepper. Cover and bring to a boil over high heat, then simmer over moderate heat until the tomatoes begin to fall apart and the fennel softens, 12 to 15 minutes.
  • Braise fish Sprinkle both sides of the fish with salt and pepper and arrange the fillets in the pan, partially submerging them in the sauce. Cover and simmer until the fish is opaque throughout, 6 to 8 minutes (or 8 to 10 for thicker fillets).
  • Serve Spoon some of the braising sauce into a shallow bowl, then top with fish. Drizzle with olive oil and sprinkle with pepper.
  • Buy four fillets of the same size (4 to 5 ounces each) so they cook at the same rate. A 1 1/2-inch thickness is ideal, allowing the fillets to cook evenly inside and out. Much thicker and the exterior could toughen before the center has cooked.
  • If the skin on your lemons is not too bitter (check by tasting a washed one), you may want to leave it on; this will help the slices hold their shape. Otherwise, remove the rind before slicing.
