SPICY PUFF PUFF RECIPE

Puff Puff is iconic of most West African countries and it is named differently in different parts of each of these countries. For example, in Ghana, it's called Bofrot. There is a similar recipe in East and South Africa called Mandazi (fried dough). In French Beignet, in Italy Zeppole just to mention a few.

2 Cups all-purpose Flour
1 to 1-1/4 Cup Water
2 Teaspoons Yeast
1 Teaspoon Nutmeg (optional)
1/2 Teaspoon Salt
1/4 to 1/2 Cup Sugar
1/4 Cup Onion (Blended/Grated)
1/2 Teaspoon Cayenne Pepper
Enough Oil for Deep Frying

Steps:

  • Blend or grate the Onion and set aside
  • Add all the dry ingredients together in a large bowl, mix together and set aside.
  • Add the blended Onion and begin to add the water a little at a time while mixing the batter.
  • Once the batter is smooth and lump free, cover it up with a plastic wrap or a tight lid and leave it to rise.
  • After 45 minutes to 1 hour, the batter would have doubled or almost tripled in size.
  • Preheat the Oil to 350°F and scoop a little bit of dough just like the size of a Table Tennis ball. (You can make it bigger or smaller if you wish) and drop inside the oil.
  • Fry both sides until golden brown - If you are finding it hard to turn the puff puff while frying you can just press down the balls a little bit before turning it.
  • Serve hot or warm with your favorite drink. Enjoy!

4 large sweet potatoes, peeled and shredded (about 6 cups)
4 large eggs, slightly beaten
3 cups milk
1 1/3 cups light brown sugar
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon salt
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together eggs and milk; stir in sugar until well mixed.
  • Fold in potatoes.
  • Add seasonings.
  • Butter a 13 x 9 inch baking dish; pour in potato mixture.
  • Bake in preheated oven for an hour or until potatoes are golden and puffy.

Feel free to omit the chipotle pepper, but it adds a little something extra. This Christmas, I added the whole pepper, and our finicky toddler loved the end result.

2 medium sweet potatoes, cooked and peeled
1/2 cup low-fat milk
1/3 cup brown sugar
2 eggs
2 tablespoons butter
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2-1 whole chipotle chile in adobo, minced
2 tablespoons butter, melted
1 1/4 cups walnuts or 1 1/4 cups pecans, chopped
1/4 cup brown sugar, firmly packed

Steps:

  • Preheat oven to 400 degrees.
  • In a large mixing bowl (I use an electric mixer), mash the sweet potatoes.
  • Add the remaining ingredients and blend until smooth and creamy.
  • Spread mixture into a greased 9x9 inch casserole.
  • Bake for 20 minutes or until set.
  • While puff is baking, combine ingredients for topping.
  • After 20 minutes, or once puff has set, spread topping over puff and bake for ten more minutes.
