SPICY ZUCCHINI SOUP

Spicy Zucchini Soup image

Mild red chili powder and pan-browned garlic give flavor to this simple vegetable soup. Quick to make, it's ideal for a light lunch! For a variation, instead of rice use rice-shaped pasta, such as orzo or semone de melone, or very thin pasta known as fideo. Or, use yellow summer squash instead of zucchini and add cooked pinto beans in place of the rice. Diced tomatoes also make a tasty addition!

SPICY ZUCCHINI WITH MINT

Spicy Zucchini with Mint image

Another great make-ahead dish, this is an appealing way to serve zucchini at room temperature or chilled. Salting the zucchini and letting it sit for about 30 minutes gets rid of excess liquid and keeps this dish from becoming watery. If you make this ahead of time, remove it from the refrigerator about thirty minutes before serving and taste it. You may find that you need extra shakes of salt and pepper, and an extra squeeze or two of lemon juice.

Yield serves 6 to 8

Number Of Ingredients 7

3 zucchini, sliced into 1/4-inch rounds
2 tablespoons kosher salt, plus more to taste
1/4 cup plus 2 tablespoons olive oil
1/2 cup finely diced red onion
Juice of 1/2 lemon
1/2 cup chopped fresh mint
1/2 teaspoon crushed red pepper flakes

Steps:

  • Place the zucchini in a colander, sprinkle it with the salt, and allow it to sit for 20 to 30 minutes. The salt will extract water from the zucchini, so put a bowl underneath to catch the water. Alternatively, set the colander in the sink so the water drains into the sink.
  • Rinse the zucchini thoroughly under cold running water for about 30 seconds to remove the salt. Firmly pat the zucchini very dry with paper towels.
  • Preheat the oven to 450°F.
  • Toss the zucchini with 2 tablespoons of the olive oil in a large bowl.
  • Arrange the zucchini in a single layer on a baking sheet. Bake for 7 to 10 minutes, until golden brown. Cool for about 10 minutes.
  • Combine the zucchini, red onion, remaining 1/4 cup olive oil, lemon juice, mint, and red pepper flakes in a serving bowl until well combined. Taste, and add salt, to taste, if necessary. Cover with plastic wrap and chill for about 1 hour before serving.

SPICY ZUCCHINI QUESADILLAS

Spicy Zucchini Quesadillas image

My family loves Mexican food, so I created this easy recipe one summer when our garden was bursting with zucchini. For milder quesadillas, use Monterey Jack instead of pepper Jack cheese. If you want them spicier, add some red pepper flakes or chopped jalapenos. -Linda Taylor Lenexa, Kansas

SPICY ZUCCHINI OATMEAL COOKIES

Spicy Zucchini Oatmeal Cookies image

In my efforts to use the abundance of zucchini in my garden I concocted this little cookie. I prefer my oatmeal cookies to have a little jazz, so if you are not a fan of ground cloves, they can be omitted. It's a not too sweet cake-like cookie that is perfect with your cup of coffee or tea.
