1 small yellow onion- chopped
2 Tbsp. extra-virgin olive oil
2 Tbsp. salted butter
6-ounce package fresh baby spinach (the equivalent to 5 oz. of frozen)
2 cups packed with fresh kale, rinsed
1 large scallion (green onion)
1 egg
2/3 cup panko bread crumbs, plus extra for coating
1/2 cup grated Parmigiano-Reggiano cheese
salt and pepper to taste
dash of organic cayenne pepper
organic olive oil cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • In a frying pan, heat and melt butter with olive oil. Add yellow onion and sauté until softened and translucent, about 5 minutes. Add spinach and kale and cook until they wilt about 1 to 2 minutes.
  • Place cooked contents into a food processor along with one chopped scallion and pulse for several seconds. Transfer mixture to a medium-size mixing bowl.
  • Add one egg, 2/3 cup of panko bread crumbs, and Parmesan cheese. Mix with a spoon until well combined. Add salt and black pepper to taste and a dash of cayenne pepper.
  • In a second smaller bowl or dish, pour some panko bread crumbs. Take a teaspoon full of the spinach and kale mixture into your hand. Make a small ball with your hands (larger than a quarter, smaller than a golf ball).
  • Gently roll the ball into panko bread crumbs to coat evenly.
  • Lightly spray the baking sheet with cooking spray. Place the spinach and kale bites onto the baking sheet. Bake for 20 to 35 minutes. Serve warm.
  • Yields: 20 bites

Bacon and Spinach Pasta with Parmesan is a quick and flavorful weeknight dinner that only requires a few ingredients.

1 yellow onion ($0.25)
2 cups chicken broth ($0.28)
1/2 lb. pasta ($0.50)
1/4 lb. fresh spinach (about 4 cups) ($1.50)
1/3 cup grated Parmesan ($0.55)

Steps:

  • Cut the bacon across the strips into one-inch pieces. Sauté the bacon in a large skillet until it is brown and crispy (no extra fat needed). Remove the browned bacon to a bowl with a slotted spoon. Carefully pour the fat off into a separate bowl, leaving about one tablespoon in the skillet.
  • While the bacon cooks, dice the onion. Once the bacon is removed and the fat is drained from the skillet, add the diced onions and sauté until they are soft and transparent. Allow the moisture from the onions to dissolve some of the browned bits off of the bottom of the skillet.
  • Add two cups of chicken broth to the skillet and dissolve off any remaining browned bits of bacon drippings from the bottom of the skillet.
  • Finally, add the uncooked pasta to the skillet, place a lid on top, and let the skillet come to a boil over high heat. Once it reaches a boil, give it a quick stir, turn the heat down to low, and let simmer for 10 minutes with the lid in place. Give the skillet a stir to loosen the pasta from the bottom every few minutes or so, replacing the lid quickly each time. After 10 minutes the pasta should be tender and most of the broth absorbed. There should be a little bit of thick, saucy broth remaining in the bottom of the skillet.
  • Add the fresh spinach to the skillet and stir until it has wilted into the pasta. Turn off the heat, add the cooked bacon back to the skillet, sprinkle the Parmesan over top, stir to combine, and then serve.

1 large bunch broccoli trimmed
4 slices gluten-free bread*
1/2 tsp. garlic powder (oregano, and basil)
4 ounces parmesan cheese shredded (about 1 cup)
4 cloves garlic finely chopped
1/2 cup onion finely chopped
handful of spinach leaves chopped (about 1 cup)
4 eggs beaten

Steps:

  • Preheat oven 350 degrees
  • Trim broccoli and steam until slightly wilted but still a little crunchy. Remove from heat and set aside to slightly cool.
  • Meanwhile lightly toast bread for crumbs. Put bread in food processor to make crumbs. Add garlic powder, oregano, and basil to bread crumbs.
  • Chop steamed broccoli into small pieces and put into medium mixing bowl. Add bread crumbs, garlic, onion, parmesan cheese, beaten eggs and chopped spinach.

1 stick unsalted butter
1 small onion, chopped (about ½ cup)
1 clove garlic, minced
2 10-ounce packages frozen chopped spinach, thawed and drained
1 8 oz. bag herbed seasoned stuffing mix
6 large eggs
1 cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • In a large sauté pan over medium heat, melt the butter. Add onions and cook until the onions are translucent and soft, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Remove the pan from the heat and let cool.
  • In the meantime, remove excess water from thawed spinach by pressing it between paper towels. (The spinach does not need to be cooked.) In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan, salt and pepper, and onion/garlic mixture. Combine well.
  • Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper. Wait about 15-20 minutes. This helps the stuffing mix to soften so it's easier to form the balls.
  • One at a time, using your hands, roll the mixture into individual 1-inch balls. Place each one on the parchment-lined baking sheet. Bake for about 15-20 minutes, or until very slightly browned.

When I travel home to be with my nieces and nephews, my brother always wants me to cook new things for the kids. What I've done in this recipe is take the crowd-pleasing creamy spinach dip that I make and pair it with puff pastry. Because what kid (or adult!) doesn't love puff pastry?

4 slices bacon, diced
1/2 medium onion, minced
4 cloves garlic, minced
4 cups lightly packed spinach leaves
1/2 teaspoon kosher salt

1/2 cup (4 ounces) cream cheese, at room temperature
1/2 cup grated Parmesan
1/2 cup crumbled feta
1 tablespoon chopped chives
All-purpose flour, for dusting
1 package (2 sheets) thawed frozen puff pastry, left at room temperature for 30 minutes

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Heat a large nonstick skillet over medium-high heat. Add the bacon and cook until crisp, 5 to 7 minutes. Transfer the bacon to a paper towel-lined plate with a slotted spoon, leaving the bacon fat in the pan. Set the bacon aside.
  • Return the skillet to medium-high heat and add the onion. Cook, stirring occasionally, 1 minute. Stir in the garlic. Add the spinach and cook until the spinach is wilted, 2 to 3 minutes. Stir in the salt and pepper and set aside.
  • Stir 1 egg, the cream cheese, Parmesan, feta and chives together in a large bowl. Stir in the spinach mixture and the bacon. Set aside.
  • Dust a work surface with flour and roll out the pastry with a rolling pin to smooth out any creases. Cut into 4-inch pieces; you should get about 9 squares. Place the squares on the prepared baking sheet.
  • In a small bowl, beat the remaining egg together with a splash of water. Using a pastry brush, brush two adjacent sides of each square with the egg wash. Place a heaping tablespoon of filling into the center of the square. Fold the dough over the filling, forming a triangle, and crimp the edges together. Place the bites in the fridge for 10 to 15 minutes. Remove from the fridge and brush the tops with the remaining egg wash. Bake until golden brown and puffed, 15 to 20 minutes. Let cool 5 to 10 minutes before eating.

10 oz. package of frozen chopped spinach, thawed and as much moisture as possible squeezed out
1/2 cup part skim ricotta
1/4 cup grated Parmesan cheese
salt and pepper to taste
1 tablespoon olive oil
1/2 teaspoon Italian seasoning
marinara sauce for serving

Steps:

  • Preheat oven to 375*F. Spray an 8×8 baking dish with non-stick spray.
  • Cut pizza dough into 16 pieces.
  • In a bowl, combine drained spinach, ricotta, Parmesan, salt and pepper. In another small dish, combine olive oil and Italian seasoning.
  • Stretch a piece of dough into a 3 inch round (it doesn't have to be perfect!). Fill with one tablespoon of the spinach mixture and bring dough around the filling. Place in pan with seams side down. Repeat with the remaining dough and spinach mixture.
  • Brush tops with your oil/seasoning mixture. Season with more salt and pepper if desired. You can also sprinkle some Parmesan on the top.
  • Bake for 30 minutes or until golden brown. Let cool for 10 minutes and serve with marinara sauce.

10-12 ounces spinach (I used 2 (5-ounce) containers Organicgirl Super Spinach blend)
1/2 cup cottage cheese (drained a bit if watery) or ricotta cheese
1/2 cup shredded Parmesan cheese, plus a bit more for garnish
2 large eggs
1 clove garlic, finely minced
1/4 teaspoon freshly ground pepper
1/4 teaspoon ground nutmeg
Garnish: pine nuts

Steps:

  • Heat oven to 400F degrees. Add raw greens to the bowl of a food processor and pulse repeatedly until finely chopped. Transfer to a mixing bowl.
  • Add cottage cheese, eggs, garlic, pepper and nutmeg to spinach bowl and stir to combine.
  • Mist a mini muffin pan with nonstick spray and divide the spinach mixture among 24 cups. Cups will be full. Garnish with a pinch of Parm shreds and a couple of pine nuts on each muffin.
