Magnificent jumbo pasta shells stuffed to bursting with cheesy spinach filling.

32 jumbo pasta shells
2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

24 uncooked jumbo pasta shells
1 tablespoon finely chopped green pepper
1 tablespoon chopped red onion
1 teaspoon plus 1/4 cup butter, divided
2 cans (6 ounces each) lump crabmeat, drained
1 package (5 ounces) frozen cooked salad shrimp, thawed
1 large egg, lightly beaten
1/2 cup shredded part-skim mozzarella cheese
1/4 cup mayonnaise
2 tablespoons plus 4 cups 2% milk, divided
1-1/2 teaspoons seafood seasoning, divided
1/4 teaspoon pepper
1/4 cup all-purpose flour
1/4 teaspoon coarsely ground pepper
1-1/2 cups grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a small skillet, saute green pepper and onion in 1 teaspoon butter until tender; set aside., In a large bowl, combine crab, shrimp, egg, mozzarella cheese, mayonnaise, 2 tablespoons milk, 1 teaspoon seafood seasoning, pepper and green pepper mixture., Preheat oven to 350°. Drain and rinse pasta; stuff each shell with 1 rounded tablespoon of seafood mixture. Place in a greased 13x9-in. baking dish. , In a small saucepan, melt remaining butter over medium heat. Whisk in flour and coarsely ground pepper; gradually whisk in remaining milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in Parmesan cheese., Pour over stuffed shells. 2 large bone-in chicken breasts
15 oz box uncooked jumbo pasta shells
2 cups fresh spinach (diced)
1/2 small white onion (diced)
3 cloves garlic (minced)
1 cup ricotta cheese
8 oz cream cheese (softened)
1/2 cup parmesan cheese (shredded)
1/4 cup mayonnaise
1 tablespoon parsley flakes
1/2 tablespoon Italian seasoning
1 egg (slightly beaten)
2 cups mozzarella cheese (shredded (divided))
salt & pepper
26 oz jar spaghetti sauce (I use Tomato Basil)

Steps:

  • Preheat oven to 450.
  • Sprinkle chicken breast generously with salt and pepper.
  • Roast for 30-35 minutes or until done.
  • Bring a large pot of water to a boil, add a few pinches of salt and the pasta shells.
  • Boil just until ABOUT al dente (about 12 minutes)
  • When pasta is done, drain and rinse with cool water.
  • Place the pasta shells on a tray & pick out the good ones. Not all the shells will survive the boiling process intact. Set aside.
  • When chicken is done let cool and dice 2 cups worth of chicken. Set aside.
  • In a large bowl stir together diced chicken, diced spinach, diced onion and minced garlic.
  • In a separate bowl, stir together ricotta cheese, cream cheese, parmesan cheese, & mayo.
  • Add parsley and italian seasoning.
  • Stir in the egg.
  • Fold in 1 cup mozzerella cheese.
  • Add salt and pepper to taste.
  • Add cheese mixture to chicken mixture, stirring until well combined.
  • Spread half of the spaghetti sauce onto the bottom of a 9x13 inch casserole dish.
  • Stuff the shells with the chicken mixture and place into the dish.
  • Pour remaining sauce over center of shells.
  • Cover and bake at 350 for 30-40 minutes.
  • Remove from oven, top with remaining mozzarella cheese.
  • Bake uncovered for another 7-10 minutes or until cheese is melted.
  • Let cool slightly.
  • Serve with salad and breadsticks!

12-14 jumbo pasta shells
1 tablespoon extra virgin olive oil
1 medium onion (diced)
2 cloves garlic (minced)
4 cups fresh spinach
1 cup ricotta cheese
1 cup mozzarella cheese (shredded)
1/2 cup Parmesan cheese (grated)
1 large egg
1/2 teaspoon pepper
1/2 teaspoon salt
1 1/2 cups marinara sauce
basil for serving (if desired)
extra parmesan cheese for serving (if desired)

Steps:

  • Preheat the oven to 375 degrees. Cook pasta until al dente according to package directions.
  • Heat oil in a large skillet. Add onion and cook until tender about 3-4 minutes. Add in garlic and cook for an additional minute.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Transfer the spinach mixture to a large bowl and add in ricotta, mozzarella, Parmesan, egg, salt and pepper. Stir to combine.
  • Spread about 1/2 of the sauce in the bottom of a 8 x8 or 9 x 9 baking dish.
  • Stuff shells with the spinach cheese mixture and place in the baking dish.
  • Top with the remaining sauce and bake for 20-30 minutes or until warmed through.
  • Serve immediately with basil and parmesan cheese, if desired.

I love cooking with leftovers, and this artichoke and spinach stuffed shells recipe is a perfect example of why. There's something very satisfying about turning a dish of tired leftovers into a vibrant new creation.

24 ounces spinach artichoke dip, at room temperature
1 cup ricotta cheese
1 egg
2 tablespoons fresh lemon juice
1 pinch crushed red pepper flakes, or to taste
salt and freshly ground pepper to taste
1 (16 ounce) package jumbo pasta shells
2 cups white sauce (such as bechamel)
1 cup shredded Gruyere cheese
½ cup grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine spinach artichoke dip and ricotta cheese in a bowl. Stir in egg, lemon juice, red pepper flakes, salt, and pepper; mix until well-combined. Set aside.
  • Bring white sauce to a simmer over medium-low heat. Stir in grated Gruyere cheese until cheese is melted and incorporated into sauce, 1 to 2 minutes. Set aside.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in shells and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through, but still firm to the bite, about 11 minutes; drain. Set aside.
  • Pour half the white sauce mixture into the bottom of a 9x13-inch casserole dish; spread evenly.
  • Stuff pasta shells with the spinach artichoke mixture and place in casserole dish atop the white sauce, stuffed-side up.
  • Pour remaining white sauce over the tops of the shells and sprinkle with Parmigiano-Reggiano cheese.
  • Bake in the preheated oven until golden brown and bubbling, about 25 minutes.

1 (12 ounce) package jumbo pasta shells, cooked al dente
5 dried shiitake mushrooms
1 cup hot water
1 tablespoon oil
1 onion, diced
4 garlic cloves, minced
6 ounces of pre washed Baby Spinach
1/3 cup white wine
1/8 cup chopped fresh basil or 1 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon dried oregano
4 cups crushed tomatoes or 4 cups your favorite tomato sauce
2 cups ricotta cheese
1/2 cup grated pecorino romano cheese, plus extra for garnish
1 cup grated mozzarella cheese
1 egg
1/2 nutmeg, grated

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9x13 inch pan with nonstick spray.
  • Soak mushrooms in hot water.
  • In a large saute pan, pour oil saute onions and garlic 1 minute add spinach cook till wilted.
  • Remove spinach from pan leaving some garlic and onions in pan.
  • Chop the soaked mushrooms (stems discarded) and add to pan with the remaining onions and garlic.
  • Add the mushroom soaking water(strained from any grit), white wine and herbs.
  • Season with salt and pepper.
  • Cook till liquid is all absorbed.
  • Add crushed tomatoes.
  • Simmer while preparing shells.
  • Squeeze liquid from cooled spinach and place juice into sauce and spinach into a bowl with cheeses, egg, nutmeg.
  • Mix to blend.
  • Adding salt and pepper to taste.
  • Spoon evenly into shells and place into pan.
  • Pour sauce over shells.
  • Reserving some sauce for serving at the table.
  • Bake covered for 30 minutes.
  • Garnish with grated cheese.
  • Mangia!
