Can you stand another meatloaf recipe? I saw this being made on a tv show -- but was vacuuming and didn't catch all the ingredients. So, I adapted my own (rather, my mother's) recipe and came up with this. My husband will not eat meatloaf any other way!

Number Of Ingredients 14

1 lb ground chuck
1/2 lb ground pork
1/2 lb ground turkey
1 envelope lipton's onion soup
1/2 cup very hot water
3/4 cup oatmeal
1 egg, beaten
4 tablespoons steak sauce (I use A1)
1 clove garlic, minced
1/4 teaspoon crushed thyme
1/2 teaspoon crushed basil
1 tablespoon flat leaf parsley, chopped (reserve 1 tsp for top of loaf)
1 bag of ready to eat baby spinach leaves
2 cups shredded mozzarella cheese

Steps:

  • Mix the meats, soup mix, water, oatmeal, egg, steak sauce and herbs together in a large bowl.
  • Pat meat mixutre into a rectangle.
  • The meat should be about 1/2 inch thick.
  • Lay the baby spinach leaves over the meat, overlapping them to form a solid layer.
  • Sprinkle all but 1/2 cup of cheese over the spinach.
  • Carefully roll the meat up.
  • This can be a little tricky, but once the first roll is made, it gets easier.
  • Once rolled, pinch the ends to seal and place on a cooking sheet.
  • Sprinkle remaining cheese and reserved parsley on top.
  • Bake at 350 for 45-55 minutes.
  • Let rest for five minutes before slicing.

1/4 cup dry bread crumbs
1/4 cup finely chopped onions
1/2 cup A.1. Original Sauce, divided
1 pkg. (9 oz.) frozen chopped broccoli, thawed, well drained
1 cup KRAFT Shredded Cheddar Cheese, divided
1 can (14-1/2 oz.) stewed tomatoes, undrained, chopped

Steps:

  • Heat oven to 350°F.
  • Mix meat, bread crumbs, onions and 2 Tbsp. steak sauce just until blended.
  • Pat into 12x8-inch rectangle on sheet of waxed paper; top with broccoli and 3/4 cup cheese, spreading ingredients to within 1 inch of edges. Roll up, starting at one short end. Place, seam side down, in shallow pan sprayed with cooking spray.
  • Bake 1 hour or until done (160ºF). About 10 min. before meatloaf is done, cook tomatoes, and remaining steak sauce until heated through, stirring occasionally.
  • Top meatloaf with remaining cheese; bake 2 min. or until melted. Remove from oven. Let stand 5 min. before slicing. Serve topped with sauce.

1 1/2 lbs lean hamburger
1/2 cup old-fashioned oatmeal, can sub dried bread crumbs
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1 teaspoon Worcestershire sauce
1 egg
4 -6 slices deli ham (thin slices)
1 (10 ounce) package frozen chopped broccoli, thawed and drained
10 slices American cheese, can sub cheddar or 10 slices colby-monterey jack cheese, divided

Steps:

  • In large bowl combine first 7 ingredients til very well mixed.
  • Place mixture onto a sheet of foil.
  • Press out to a flat, even 8"x10" rectangle.
  • Top evenly with 6 slices ham to within 1/2" of edges.
  • Top with 6 slices american cheese.
  • Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
  • Roll up starting from long side, lifting and using the foil to help you roll it all up.
  • Roll up tightly.
  • Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
  • Sprinkle with a little coarse ground pepper.
  • Bake in 350º oven for 55 minutes.
  • Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
  • Bake 5 minutes longer or til cheese is just melted.
  • Let rest 15-20 minutes before slicing.
  • Good served with mashed potatoes, baby carrots and fresh rolls.
  • *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
  • **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

½ cup quick-cooking oats

1 (10 ounce) package frozen chopped broccoli, thawed and well drained
1 cup shredded low-fat Cheddar cheese
½ cup catsup
¼ cup packed brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard

Steps:

  • Heat oven to 350 degrees. Line a loaf pan, 9 x 5 inches, with foil; leave pieces overhanging edges of pan; spray with cooking spray. Prepare Sweet 'n Spicy sauce (see below); set aside. In a medium bowl, mix turkey, oats, onion, eggs, Worcestershire sauce and 2 tbsp. Sweet 'n Spicy sauce. Press half of turkey mixture into prepared pan. Form a 1 inch indentation down center of mixture, leaving 1 inch thickness on all sides. Mix broccoli and cheese; spoon into indentation mounding up. Press remaining turkey mixture evenly over top, sealing edges.
  • Bake for 1 hour. Let stand 15 minutes, then lift loaf from pan using foil hanging over edges. Peel foil away. Spoon remaining Sweet 'n Spicy sauce over top of loaf.
  • Sweet 'n Spicy sauce: In a small bowl, mix catsup, brown sugar, lemon juice and dry mustard. Makes about 3/4 cup.

1/2 cup chopped onion
1/4 cup chili sauce, divided
1 Tbsp chopped parsley
1 egg, beaten
1 cup shredded reduced fat cheddar cheese, divided
1 pkg (10 oz.) frozen chopped broccoli, thawed and drained

Steps:

  • 1. Finely roll 12 crackers. Mix cracker crumbs, beef or turkey, onion, 2 Tbsp. chili sauce, parsley & egg.
  • 2. Pat meat mixture into a 12 x 8-inch rectangle on waxed paper. Reserve 2 Tbsp. cheese, sprinkle remaining cheese & broccoli onto meat mixture to within 1/2 inch of edge. Coarsely break remaining other 12 crackers. Sprinkle over broccoli, pressing lightly into meat. Starting at short end, roll up jelly roll style using waxed paper to help roll, seal ends. 1 1/2 teaspoons garlic powder

2 cups canned beef bouillon

Steps:

  • Preheat the oven to 375 degrees.
  • In a large bowl, beat the egg lightly. Add the salt, pepper, garlic powder, rosemary, parsley, mustard, ketchup and bouillon and mix until well blended. Add the celery, onion and cheese and mix again. Add the ground beef, red pepper and bread crumbs and mix thoroughly.
