SPRING ROLLS WITH BEETS, BROWN RICE, EGGS AND HERBS
Uncooked grated beets pair beautifully with spring roll seasonings. The egg "pancakes" contribute protein and an element of comfort to the filling

Steps:
- Make three egg "pancakes": heat an 8-inch omelet pan over medium-high heat and beat 1 egg in a bowl. Season to taste with salt. When the pan is hot add 1/2 teaspoon oil and pour in the egg, scraping all of it out of the pan with a heat-proof rubber spatula. Swirl the pan so that the egg covers the bottom in an even layer, and lift the edges of the thin omelet with your spatula to let the egg run underneath. Push the pan away from you and quickly jerk it toward you to flip or fold the omelet over (if it just folds, that's fine). Turn out of the pan onto a plate. Repeat with the other two eggs and remaining oil. Slice the omelets into 1/2-inch-wide pieces and set aside
- Toss the rice with 1 tablespoon of the rice vinegar
- Combine the shredded beets and chopped herbs in a bowl and toss with 2 tablespoons of the rice vinegar and salt to taste. Place the shredded cabbage in another bowl and toss with the remaining vinegar and salt to taste
- Fill a bowl with warm water and place a spring roll wrapper in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several whole mint and basil leaves, vein side up, on the wrapper. Place a large spoonful or handful of beets (wear plastic gloves if you don't want the beets to color your hands) down the middle of the wrapper but slightly closer to the bottom, leaving a 2-inch margin on the sides. Place a handful of cabbage over the beets, then a handful of rice. Arrange 3 slices of omelet over the rice. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice if desired

SPRING ROLLS WITH SHRIMP, RED RICE AND HERBS
On the surface this looks like a classic spring roll, with the shrimp beautifully displayed against the thin rice flour wrapper. Inside, though, red jasmine rice replaces the traditional rice noodles, and the vegetables are seasoned. You can find red jasmine rice at Whole Foods, distributed by Alter Eco. Bhutanese rice or brown rice may be substituted if you can't find it

- Place the shredded carrots, peppers, sesame seeds and chopped herbs in a large bowl and toss with 2 tablespoons of the rice vinegar and salt to taste. Place the lettuce in another bowl and toss with the remaining vinegar and salt to taste.
- Fill a bowl with warm water and place a spring roll wrapper in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several whole mint, cilantro and basil leaves, vein side up, on the wrapper. Arrange 3 shrimp halves, cut side up, down the middle of the wrapper, leaving a 2-inch margin on the sides. Top with a handful of the carrot mixture, then with a handful of lettuce. Place a handful of rice over the lettuce. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice.

- Place the rice noodles in a large bowl and cover with hot water. Soak for 20 minutes, or until pliable. Meanwhile, bring a large pot of water to a boil. Drain the noodles and add to the boiling water. Boil 1 minute and drain. Rinse with cold water and transfer to a bowl. Using kitchen scissors, cut the noodles into 2-inch lengths. Toss with 2 teaspoons of the rice vinegar and the soy sauce
- Place the shredded carrots and turnips, slivered mushrooms and chopped herbs in a large bowl and toss with 2 tablespoons of the rice vinegar and salt to taste. Place the lettuce in another bowl and toss with the remaining vinegar and salt to taste

- Fill a 9-inch pie plate with warm water; dip 1 rice paper into the water. Transfer to a work surface and let stand for a few seconds to soften.
- Snip cooked rice noodles. Arrange 3 tablespoons noodles across the lower 1/3 of the softened rice paper. Top with 1 ounce chicken, 1/4 cup cucumber, 1 tablespoon mint, and 1/2 tablespoon sauce. Fold and lightly press bottom edge of rice paper over filling, tucking it underneath as you roll away from you. Fold in sides and continue to roll up tightly. Repeat with remaining ingredients.

- Toss the rice with 1 tablespoon of the rice vinegar and the soy sauce
- Wash the spinach and steam 1 to 2 minutes, tossing halfway through. It should wilt but still have some texture. Rinse with cold water, squeeze dry and coarsely chop. Season with salt to taste
- Spread each tofu domino with about 1/4 teaspoon peanut sauce
- Place the shredded carrots, slivered mushrooms and chopped herbs in a large bowl and toss with the remaining rice vinegar and salt to taste

CHEF JOHN'S FRESH SPRING ROLLS
I love the 'authentic' spring rolls I so often order at my friendly, neighborhood Vietnamese restaurant. But in this recipe, I'm showing a technique and you can fill the rolls with whatever you have on hand. You should be able to get rice paper wrappers at any large grocery store with an Asian food section but if not, they're easily found online.

- Soak a rice paper wrapper in cold water just until it becomes flexible, 1 minute or less. Place on a slightly damp towel. Place some baby greens near the bottom of the round. Top with strips of chicken and pepper, leaving about a 1-inch margin on the sides. Roll tightly just until the bottom edge meets the center of the paper and sticks there. Then continue to add more chicken strips and vegetable strips. Finish with torn pieces of herbs. Complete the roll, pressing the ingredients to keep roll tight and tucking in the sides.
- Transfer completed rolls to a plate lined with damp paper towels. Cover each roll with damp papers towels as you work to prevent them from drying out; don't let the rolls touch each other or they will stick together.
