St Patrick's Day Soup With Shamrock Croutons image

This Irish-style potato and onion soup comes served with cute little cheesy shamrock croutons made out of bread. Use a shamrock shaped cutter if you can, otherwise, make the croutpns, shamrock shaped with a knife, using a cardboard stencil if you wish.

2 ounces butter
2 onions, chopped
1 1/4 lbs potatoes, peeled and chopped
3 1/2 cups vegetable broth or 3 1/2 cups chicken broth
8 1/2 ounces spinach or 8 1/2 ounces sorrel, shredded
salt and pepper
2 slices thick wholemeal bread
olive oil or melted butter, to brush on
3 1/2 ounces sharp cheddar cheese, grated

Steps:

  • Melt the butter in a saucepan, add the onion and potato and cook gently, covered for about 10 mins, stirring occasionally.
  • Add salt, pepper and broth and bring to the boil.
  • Simmer uncovered for about 5 mins until the potatoes are tender.
  • Add the spinach or sorrel leaves and cook for 5 mins more.
  • Liquidize the soup until smooth.
  • For the croutons: Cut shapes from the bread using a knife or a shamrock cutter and brush lightly with olive oil or butter.
  • Broil on one side then turn over and sprinkle with the grated cheese and broil until cheese is melted.
  • Place on top of the hot soup.

There's no better way to use up leftover St. Patrick's Day corned beef, cabbage and potatoes than to make a hearty soup. This second-time-around soup is one of my best.

Number Of Ingredients 10

6 celery ribs, chopped
4 medium carrots, sliced
2 cups cubed peeled potatoes
5 cups water
3 cups diced cooked corned beef
2 cups chopped cooked cabbage
1 teaspoon dill weed
1 teaspoon salt
1 teaspoon seasoned salt
1/2 teaspoon white pepper

Steps:

  • In a large soup kettle, bring the celery, carrots, potatoes and water to a boil. Reduce heat; cover and simmer until vegetables are tender, about 20 minutes. , Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until heated through.

This soup is the perfect way to transform the last of that corned beef into something different, yet still the same. I purposely set some aside just to make this soup. Feel free to sub beef broth for the vegetable broth but just know it will alter the color of the finished soup tremendously making it not as appealing to the eyes.

1 tablespoon unsalted butter
1 small onion, chopped
2 ribs celery, chopped
4 ounces baby carrots, chopped
2 teaspoons minced garlic
1 pound red potatoes, chopped
3 cups vegetable broth
1 (12 ounce) can beer
2 tablespoons coarse-grain mustard
2 cups shredded cabbage
2 cups chopped cooked corned beef
salt and ground black pepper to taste

Steps:

  • Melt butter in a large soup pot over medium-high heat. Add onions and cook for 3 minutes. Add celery, carrots, and garlic, and cook for 5 minutes more.
  • Stir in potatoes, broth, beer, and mustard, and bring to a boil. Reduce heat and simmer for 15 minutes.
  • Stir in cabbage and cook for 5 minutes. Turn heat off and stir in corned beef. Ladle into bowls and season with salt and pepper.
