ITALIAN ANISE BREAD
My family has been making this Easter bread for generations. It's origins are in a family bakery owned by my great-great aunts off the boat from Italy. My mom and I are the only remaining individuals who know how to make this, so I'm posting it hoping to share it with others. It is made the old world way, so it is not quick, but it is delicious and well worth the work and wait.

Steps:
- Combine flour, sugar, and anise seed together in a very large bowl; create a well in the center.
- Mix warm water and yeast together in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
- Beat warm milk, eggs, and butter together in a bowl; stir into yeast mixture. Add milk mixture to the well in the flour mixture. Knead flour-milk mixture using your hands until dough and your hands are no longer sticky. Cover dough with a clean cotton cloth and let rise, 8 hours to overnight.
- Grease and flour 6 loaf pans.
- Punch dough down and divide into 6 portions. Mold each portion into a round shape and place each in a prepared pan. Cover pans and let rise for 1 hour more.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until bread is cooked through, 45 to 50 minutes.

ARTISAN BREAD PUDDING
Artisan breads are made with very simple ingredients. They are usually a hearty type of bread sold in a whole loaf. They are delicious but can hardened quickly! If this happens, here's a recipe to use the "hard" bread.

MALTESE BREAD PUDDING ( USING UP STALE BREAD)
This is a recipe to use up stale bread, originally devised when it was considered a sin to throw away breadbecause of teh association with Christ . The result is a luscious fudgy cake that can be cut up into squares and has nothing to do with thne usual bread and butter puddings . I love to eat this cake in summer , cold from the fridge. Please do try it, it wont cost you much to make. You might be pleasantly surprised. I use a maltese crusty loaf but any bread will do.

Steps:
- Soak the bread , in water foe about an hour until soft. ( cut loaf in half).
- Pre heat oven to 200C and grease a rectangular baking dish measuring about 30cmx 20cm.
- grab the loaf with your hand and squeeze out excess water. You can put the bread in a clean tea towel and squeeze.
- Put the soggy bread in a processor with the other ingredients except the dried fruit and mix well.
- Add the dried fruit and pulse until combined.
- spread in the baking dish and flaten surface with a spatula.
- Sprinkle the extra sugar and anise seeds on top.
- Bake for about an hour, until it feels firm .
- serve warm or at room temperature ( or in summer, cold from the from fridge, or at least thats the way I like it :-).

SARAH'S SAVOURY BREAD AND CHEESE PUDDING
A savory pudding made with sliced white bread, eggs, Cheddar and Parmesan cheeses, and anything else you may want to chuck in!! This is a very nice light dish. Ideal as an evening meal, or even a breakfast with a difference! Optional: Add grilled chopped bacon, mushrooms, ham, tomato, or anything else you can think of!

- Preheat oven to 350 degrees F (175 degrees C).
- Make 2 cheese sandwiches by placing cheese slice between 2 bread slices and pressing together. Cut each sandwich into 4 triangles and arrange in a lightly greased 9x13 inch baking dish.
- Mix together beaten eggs, milk, salt and pepper; pour mixture over sandwiches and sprinkle with grated cheese. (Note: Vary amounts if needed; sandwiches do not need to be totally covered in egg mixture, but egg should soak in and leave a little in the bottom of the dish.)
- Bake for 20 minutes or until golden brown, checking frequently.

STAR-ANISE STICKY TOFFEE PUDDING RECIPE - (5/5)

- 1. Preheat the oven to 350°F (177°C, or gas mark 4). Line a 9-inch (23-cm) round cake pan with parchment paper. Grease the pan and parchment paper with nonstick cooking spray. Combine the chopped dates and water in a medium saucepan. Bring to a boil over medium heat, about 3 to 5 minutes. Once the mixture has boiled, remove from the heat and stir in the baking soda. The mixture will bubble and thicken. Let cool to room temperature. 2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, granulated sugar, brown sugar and vanilla until light and fluffy. Add the eggs, one at a time, scraping the sides and bottom of the bowl with a rubber spatula after each addition. Add the cooled date mixture and mix. Add the flour, baking powder, salt and star anise, and mix until just combined. 3. Pour the batter into the prepared pan. Bake for 28 to 30 minutes until a cake tester inserted into the center of the cake comes out clean. While the cake is cooling to room temperature, prepare the sauce. 4. Combine the brown sugar, heavy cream, butter and salt in a medium saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce the heat to low. Simmer for 15 to 20 minutes until the sauce is slightly reduced and thickened. Remove from the heat, and stir in the vanilla and bourbon. 5. Serve each slice of cake with a generous pour of warm sauce.
