GINGERBREAD STAR COOKIE TREE



Gingerbread Star Cookie Tree image

You will need a set of 10 graduated star cookie cutters to make this tree. I used Wilton's packaged set, see blog post for links and resources.

5-5 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ginger
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
1 cup unsalted butter (melted)
1 cup 226g granulated sugar
1 1/4 cups molasses
2 eggs (slightly beaten)
1 lb. white fondant
Piping gel or corn syrup
Multicolor pastel dragees
3 tablespoons 4 oz. Meringue Powder
4 cups about 1 lb. confectioners' sugar
5 tablespoons warm water

A cookie tree is a great centerpiece for your Christmas table. You can use my recipe or your favorite cut-out cookie recipe. All you need are star-shaped cookie cutters in different sizes.

1 cup white sugar
¾ cup butter, at room temperature
2 eggs
½ teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups confectioners' sugar
4 ½ teaspoons meringue powder
3 tablespoons water
1 tablespoon assorted holiday decorations, such as silver balls, sprinkles, etc.
1 ounce yellow fondant
1 tablespoon confectioners' sugar for dusting

Steps:

  • Combine sugar and butter in a large bowl. Cream using an electric mixer until smooth. Beat in eggs and vanilla extract. Combine flour, baking powder, and salt in a separate bowl. Stir into the butter mixture and mix to combine. Shape dough into a ball, cover, and refrigerate at least 1 hour to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 cookie sheets with parchment paper.
  • Roll dough out on a lightly floured surface 1/4- to 1/2-inch thick. Cut out different-sized stars with cookie cutters; the height of the Christmas tree will depend on the number of cookies you stack, but you need at least 7 or 8 stars. Place cookies 1 inch apart on the prepared baking sheets.
  • Bake in the preheated oven until cookies are lightly browned, 6 to 8 minutes. Transfer cookies carefully onto wire racks and cool completely, about 30 minutes.
  • Combine confectioners' sugar, meringue powder, and water in a bowl and beat at low speed using an electric blender until peaks form, 7 to 10 minutes. Pour icing into a piping bag with a star-shaped tip.
  • Place the largest star onto a plate and pipe a little bit of royal icing into the middle. Add the second-largest star on top, turning the star slightly so the points are offset from the previous star cookie. Repeat adding smaller-sized star cookies and attaching them with royal icing. Decorate the cookie Christmas tree with royal icing, silver balls, and other holiday decor. Roll out yellow fondant and cut out a small star to place on top of the cookie tree and secure with royal icing. Decorate remaining cookies to your liking.
  • Dust the finished tree with confectioners' sugar.

1 wilton cookie tree kit with instructions...or
1 of your favorite rolled cookie dough, for cutting stars out
1 favorite icing recipe, decoratons etc.

Steps:

  • 1. If you do not have this kit. You can improvise...cut your own stars and make what ever size and height you want. Have fun....let the children help! Cookie star oranments. decorate as you please..a red ribbon to hang ornament on your tree. If you need more info..send me a comment...please.
  • 2. COOKIE cutters. Cut out cardboard stars..use to cut out stars of cookie dough....Bake. Start your tree,the largest on the bottom..make as high as you want....Decorate to your taste.
  • 3. Snow capped tree. Green frosted stars, with white (snow) tips. All white tree. White frosting, with white sparkles sprinkles.
  • 4. Sandwich (cookie) tree, with cranberries. Make two stars the same size,fill with a cranberrie sauce...to make a sandwich from cookie dough. Center...Star studded gingerbread tree. Use your favorite gingerbread cookie recipe, and red dots.
  • 5. Crispy cereal star tree. Use your favorite rice cereal treat recipe, and rainbow nonpareil sprinkles.

  • Roll out your cookie dough on a lightly floured work surface to the thickness specified in the recipe. Cut about 5 or 6 cookies in each star size—maybe a few more to allow for breakages and decorating goofs. Bake as directed. Let cool.
  • Outline each star with white piping icing. If desired, dust the cookies with silver glitter sugar and add a silver bauble to each star point using white piping icing as glue. Let dry.
  • Take a pretty plate and, starting with the largest stars, stack them on top of each other using white piping icing to “glue” each layer together and giving each additional star a quarter turn to make the helix shape. Let dry completely about halfway through so you have a stable platform on which to stack the smaller stars. It’s a good idea to make this tree close to where you’re going to eat it.

  • Preheat oven to 375°F. In a large bowl, cream butter and sugar with an electric mixer. Beat in eggs and vanilla. Add baking powder and flour, one cup at a time, mixing after each addition. The dough will be very stiff; blend last flour in by hand (if dough becomes too stiff and does not hold together in a ball, add water, a teaspoon at a time). Divide dough into 4 balls, wrap in plastic wrap and chill for 20 minutes.
  • Measure out the powdered sugar into a medium bowl. Sift it only if it has a lot of lumps. I buy the grocery store brand powdered sugar that comes in a 32 ounce plastic bag so I don't have to sift it. I also weigh out the 16 ounces needed for this recipe using a food scale. Set aside.
  • Place the largest cookie onto a serving platter or cakestand (pipe a dollop of frosting under the cookie, so it will stick to the plate). Then place the next large cookie of the same size on top, moving it so the points of the stars are alternating (not lined up). Pipe green buttercream stars on the 5 corners of the cookie star. Pipe a dollop of frosting in the middle, so the next cookie will stick. Repeat these steps with 2 of each size cookie until you get to the top. Pipe white stars onto the smalled star cookie and place on top of your cookie tree. Garnish with white pearl sprinkles and yellow star sprinkles. Serve within 24 hours for best taste and freshness.
