TRADITIONAL GINGER BISCUIT RECIPE



Traditional Ginger Biscuit Recipe image

This is a good old-fashioned, traditional ginger biscuit recipe for one of Britain's favorite biscuits; so delicious to eat.

Number Of Ingredients 12

1 cup (or 8 ounces) unsalted butter (softened,)
3/4 cup plus 2 tablespoons (or 6 ounces) caster sugar
3/4 cup (or 6 ounces) brown sugar (soft and dark)
1 egg, beaten
2 2/3 cups (or 12 ounces) all-purpose flour
Pinch salt
1/2 teaspoon baking powder
1 teaspoon nutmeg (freshly grated)
1 teaspoon ground cloves
2 teaspoons ground cinnamon
3 teaspoons ground ginger
Optional: a pinch of mixed spice

Steps:

  • Gather the ingredients.
  • In a large bowl, beat together butter, castor sugar, and brown sugar until light and creamy.
  • Using a whisk, slowly add beaten egg, a little at a time.
  • Sift together flour, baking powder , salt, nutmeg, cloves, cinnamon, ginger, and mixed spice (if using) into another bowl.
  • Carefully stir flour mixture into butter, sugar, and egg mixture.
  • Roll out half the dough between 2 sheets of greaseproof paper to 1/8- to 1/4-inch thick. Slide rolled dough, paper and all, onto a large baking sheet. Repeat with the second half of the dough; slide it, paper and all, onto first sheet of dough. Place baking sheet in refrigerator for at least 2 hours.
  • When you are ready to cook the biscuits, heat oven to 350 F and grease a baking sheet with butter.
  • Cut dough with a cookie or gingerbread man cutter to the size you wish. We used a 3-inch round cutter, and it yielded about 4 dozen cookies.
  • Gather scraps, reroll between sheets of paper and refrigerate again. Continue cutting and rerolling until all of the dough is used.
  • In batches, place biscuits on baking sheets. Any rolled out dough or biscuits waiting to go into the oven should be kept cold in the fridge, or they will get too soft.
  • Bake each batch for 10 minutes. Once cooked, remove from oven. As biscuits will be soft at this point, carefully remove from baking sheet and leave to cool on a wire cooling tray. Once cool, the biscuits will harden and have the perfect snap.

My English cousin in Yorkshire sent me this old-fashioned recipe for buttery ginger cookies (or "biscuits" if you're British). You'll love the taste!

2-1/2 cups biscuit/baking mix or self-rising flour
1/2 cup sugar
1-1/4 to 1-1/2 teaspoons ground ginger
1 teaspoon baking soda
Pinch salt
1/2 egg, beaten
1/2 cup corn syrup or maple syrup
1/4 cup butter, cubed

Steps:

  • In a bowl, combine baking mix or flour, sugar, ginger, soda and salt. Using hands, rub egg into mixture. , In a saucepan, warm syrup and butter; stir into batter. Let stand for 3-4 minutes, then knead. Roll heaping teaspoonfuls into small balls. Place 2 in. apart on greased baking sheets. , Bake at 325° for 12-15 minutes. Cookies will flatten and "crackle" when done.

Bake these grown-up gingerbread biscuits, spiced with black pepper and stem ginger. They're perfect after dinner with an iced shot of limoncello or a hot toddy

Number Of Ingredients 10

175g butter , softened
85g dark muscovado sugar
1½ tsp ground ginger
½ tsp ground cinnamon
½ tsp coarsely ground black pepper
1 lemon , zested and 3-4 tsp juice
225g plain flour
50g candied lemon peel (or a mix of lemon and orange)
50g stem ginger , chopped into small chunks
100g icing sugar

Steps:

  • Mix the butter and sugar with a wooden spoon. Stir in the spices, lemon zest and flour, then tip in the candied lemon peel and stem ginger - you might need to get your hands in to bring the mix together as a dough. Divide the dough in two and shape each half into a log about 5cm across. Wrap in cling film, then chill for 1 hr. You can freeze the unbaked dough for up to three months.
  • Heat oven to 180C/160C fan/gas 4. Slice the logs into 1cm-thick rounds, place on two baking trays lined with baking parchment and bake for 12-15 mins. Leave to cool completely on the tray.
  • Mix the lemon juice with the icing sugar to make a thin glaze. Brush over the biscuits and leave to set. Will keep for three days in an airtight container.

350g plain flour
1 tbsp ground ginger
1 tsp bicarbonate of soda
175g light muscovado sugar
100g butter , chopped
8 pieces of stem ginger , chopped (not too finely), plus thin slices, to decorate (optional)
1 large egg
4 tbsp golden syrup
200g bar dark chocolate , chopped

Steps:

  • Mix the flour, ground ginger, bicarbonate of soda, 1/2 tsp salt and sugar in a bowl, then rub in the butter to make crumbs. Stir in the chopped stem ginger.
  • Beat together the egg and syrup, pour into the dry ingredients and stir, then knead with your hands to make a dough. Cut the dough in half and shape each piece into a thick sausage about 6cm across, making sure that the ends are straight. Wrap in cling film and chill for 20 mins. You can now freeze all or part of the dough for 2 months.
  • Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Thickly slice each sausage into 12 and put the slices on the baking sheets, spacing them well apart and reshaping any, if necessary, to make rounds. Bake for 12 mins, then leave to cool for a few mins to harden before transferring to a wire rack to cool completely.
  • Melt the chocolate in a bowl over a pan of gently simmering water, making sure that the water isn't touching the bottom of the bowl. Dip half of each cookie into the chocolate - you may need to spoon it over when you get to the final few. Decorate with a slice of ginger, if you like, and leave to set. Will keep for 1 week in an airtight container.

1 teaspoon ground ginger
1 pinch salt
2 cups self-rising flour
1 cup chopped crystallized ginger
2 tablespoons white sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Beat butter, 1/2 cup white sugar, and brown sugar in a large bowl with an electric mixer until creamy, 1 to 2 minutes. Beat in egg, ground ginger, and salt. Gradually add flour until cookie dough comes together, 1 to 2 minutes. Fold in chopped crystallized ginger.
  • Place 2 tablespoons white sugar in a shallow dish. Shape dough into balls, and roll one side in sugar. Press onto prepared baking sheets.
