Besides the variations on the dressing, I added feta cheese to the salad. It was scrumptious! Even spinach haters ate it up! I made this for a party and there were a lot more servings as a buffet item than 8.

1 (10 ounce) package fresh spinach
1 (8 ounce) package feta cheese, cut into squares
½ cup olive oil
½ cup brown sugar
¼ cup white balsamic vinegar
2 tablespoons sesame seeds
1 tablespoon poppy seeds
¼ teaspoon paprika

Steps:

Toss strawberries, spinach, and feta cheese together in a large bowl.
Whisk olive oil, brown sugar, white balsamic vinegar, sesame seeds, poppy seeds, and paprika together in a bowl; drizzle over salad and toss to coat.

This is a simple salad to put together but big on flavor! --- you can also make this using salad greens mixed with fresh spinach, I just purchase a smaller bag of prewashed spinach for this, prep time does not include washing and drying the fresh spinach, all salad ingredients may be adjusted to taste --- you will love this salad!

Ingredients

7 -10 cups fresh Baby Spinach (washed, dried and stems removed, or use as much as desired)
5 cups sliced fresh strawberries
1/4 cup toasted sliced almonds (candied almonds are good too!)
1/2 cup crumbled feta cheese (can use more)
1/2 cup vegetable oil
1/4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
1/4-1/3 cup white sugar
1 pinch paprika
1 -2 tablespoon poppy seed

Steps:

In a large bowl toss the spinach with the strawberries and toasted almonds.
In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
Sprinkle the feta over the top of salad.
Serve immediately.

Perfume vinegar with the sweetest berries of the season and whisk it up into a pretty pink vinaigrette.

2 cups strawberries (hulled)
2 teaspoons organic raw cane sugar
1 cup white balsamic vinegar

Steps:

Combine strawberries and sugar in a food processor or blender and puree until runny. It's okay to have some chunks.
Transfer strawberry mixture into a quart jar and pour in vinegar. Top jar with a lid and shake well.
Let strawberry infusion stand for an hour or so.
Shake vinegar once again and strain through a fine-mesh sieve into a pint jar. It will take about 10 minutes to completely drip through.Discard the strawberry solids.
Your strawberry vinegar is now ready to use or you can cover the jar with a lid and store, refrigerated, for a few weeks.
