My friend Tina brought this to Easter dinner and I have been craving it ever since. This is a delicious and simple salad! The number of servings is a guesstimate. This feeds a crowd. For my family of 5, I halve the recipe.

2 heads romaine lettuce (or use prepared bags)
1 pint strawberry
1 small red onion, quartered and sliced
1 cup mayonnaise
1/2 cup balsamic vinegar
1 1/2 tablespoons poppy seeds
1/2 cup milk
2/3 cup sugar

Steps:

  • For the salad: Wash heads of lettuce and let drain extremely well. Wash and slice strawberries. Tear lettuce into pieces, add strawberries and onions.
  • For the dressing:Put all of the ingredients in a container with a lid. Whisk quickly, place the lid on and shake well.
  • Just before serving, pour the dressing over the salad and toss well.

For my wedding shower everyone brought a few recipes and this is one of my favorites. It is refreshing and pretty. This salad also travels well, just save the dressing and use it just before serving.

1 head romaine lettuce - rinsed, dried, and chopped
2 bunches fresh spinach - chopped, washed and dried
1 pint fresh strawberries, sliced
1 Bermuda onion, sliced
½ cup mayonnaise
2 tablespoons white wine vinegar
⅓ cup white sugar
¼ cup milk
2 tablespoons poppy seeds

Steps:

  • In a large salad bowl, combine the romaine, spinach, strawberries and sliced onion.
  • In a jar with a tight fitting lid, combine the mayonnaise, vinegar, sugar, milk and poppy seeds. Shake well and pour the dressing over salad. Toss until evenly coated.

2 lbs fresh spinach (Washed)
1 quart strawberry (Hulled and Sliced)
1/2 cup slivered almonds
1/4-1/2 cup sugar
1/4 cup apple cider vinegar
1 1/2 teaspoons onions (finely chopped)
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1/2 cup vegetable oil
2 teaspoons poppy seeds

Steps:

  • Put salad ingredients in a bowl and set aside.
  • Dressing:.
  • Combine first five ingredients and mix with hand mixer on medium for 30 seconds.
  • Add Vegetable Oil in a slow stream and continue to mix for another 30 seconds.
  • Stir in Poppy Seeds.
  • Add dressing to salad and toss.
  • Refrigerate for at least 1 hour to let flavors meld.

1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise

1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated.
