SWEET SOUTHERN SUGARED STRAWBERRIES (STRAWBERRY TOPPING)



Sweet Southern Sugared Strawberries (Strawberry Topping) image

This is a family favorite handed down for generations. It is very basic and can be used in Strawberry shortcake, ice cream topping, cheesecake topping, pancake or waffle topping, etc. Be creative with it!

fresh strawberries
granulated sugar

Steps:

  • You will need a tupperware type container with a lid.
  • First, slice as many strawberries as you would like and place them in the container.
  • Then add as much sugar as you wish.
  • The more sugar makes more syrup.
  • I usually add enough to fully coat the strawberries.
  • Now put the lid on the container and tumble the strawberries for a minute so they can get saturated in the sugar.
  • Now refrigerate the container for a couple of hours, and you will have the tastiest, sweetest strawberries in their own syrup.
  • (I usually leave them in the refrigerator over night).

STRAWBERRY BALSAMIC "BLT"

2 cups fresh strawberries, tops removed and sliced thin top to bottom
8 slices honey oat bread
1 1/2 cups shaved iceberg
Mauro Method Bacon, recipe follows
Balsamic Black Pepper Mayo, recipe follows
12 slices thick-cut bacon
1 cup mayonnaise
1 tablespoon balsamic glaze
1 tablespoon fresh basil chiffonade
1 teaspoon freshly ground black pepper
Kosher salt

Steps:

  • Arrange an even layer of strawberry slices on 4 slices of bread. Pile shaved iceberg on top. Place 3 pieces Bacon on top of each. Spread a nice crust-to-crust schmear of the Balsamic Black Pepper Mayo on the remaining slices of bread. Top with another even layer of strawberry slices, right on the mayo. Close sandwiches, slice in half and eat!
  • Preheat the oven to 375 degrees F.
  • Line a sheet tray with parchment paper overlapping each side by 1 to 2 inches. Place the bacon on the sheet pan. Bake, rotating once, until desired crispiness, 15 to 20 minutes. Remove the bacon and let drain on paper towels.
  • Whisk together the mayo, balsamic glaze, basil and pepper in a bowl. Season to taste with salt.

  • Boil 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf and a pinch of salt until thick, 4 minutes. Discard the bay leaf; let the syrup cool. Beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar and 1/4 teaspoon vanilla with a mixer until soft peaks form. Toss 3 pints quartered strawberries with half of the balsamic syrup. Serve with the mascarpone mixture and the remaining syrup.

½ cup unsalted butter, melted
2 cups whole milk, warm to the touch
½ cup granulated sugar
1 packet active dry yeast
5 cups flour, divided
1 teaspoon baking powder
2 teaspoons salt
4 tablespoons butter, softened
1 cup strawberry preserve
4 oz cream cheese, softened
2 tablespoons butter, melted
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Generously grease a 9-inch (23 cm) cast iron or cake pan.
  • In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (40˚C). If hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let sit for 1 minute.
  • Add 4 cups (500 grams) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • Preheat oven to 325˚F (160˚C).
  • After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup (95 grams) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, about ½ cup (60 grams), until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (12 mm) thick.
  • In a small bowl combine the strawberry preserves and butter, stir to combine.
  • Spread the filling mixture evenly over the rolled out dough, leave about 1½ inches (4 cm) from the edge.
  • Starting from the bottom roll the dough upward, being careful not to squeeze the filling out.
  • With a knife cut the rolled dough into 8 pieces.
  • Place strawberry roll in the prepared cast iron or cake pan and cover with plastic wrap. Place in a warm spot and leave to rise for 30 minutes. The strawberry rolls should expand to the edges of the pan during this time.
  • Bake for 45 minutes. Cover the rolls with foil to prevent the outside from burning, and bake for an additional 35 minutes.
  • While the strawberry rolls are baking, prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, vanilla, whole milk, and powdered sugar, until smooth.
  • Remove the strawberry rolls from the oven and let cool in the pan for at least 20 minutes. Once cool, drizzle frosting over the rolls before serving.
  • Enjoy!

Low sugar, low cal, so easy! I make it for Whole Wheat Pancakes, see here: Serves 4 This calls for frozen strawberries. I slice fresh and then freeze them anyways, but fresh would be fine, just allow more time. Freeing breaks the cell walls and makes them mushier.

16 ounces frozen strawberries
1/2 cup unsweetened apple juice
1/4 cup balsamic vinegar
2 tablespoons red wine
1/3 cup Splenda sugar substitute (or 8 packets)
2 teaspoons pure vanilla extract

Steps:

  • Put all ingredients in a small sauce pan on Med-High Heat.
  • Stir whenever you feel like it.
  • Reduce until desired thickness (about 8min).
  • Note: Strawberries will start to look really pale and sad after they thaw, but don't worry they will get dark red again!
