BAKED VIDALIA ONIONS
Vidalia onion recipes are some of my favorites to whip up. Served alongside any of a variety of fish and meats, these tender onions are a nice change of pace. Folks find it a fun and flavorful side dish. -Norma Durham, Rogersville, Tennessee

Steps:
- Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

ROASTED VIDALIA ONIONS
Roasted in the oven or on the grill, these onions are simple and tasty. They taste like French onion soup, and smell great. In college I used to put it on the top of my gas stove! Still delicious just the same. Very very easy and loads of flavor.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Peel and core onions, then slice halfway through. Place onions on sections of aluminum foil large enough to wrap them completely. Place a bouillon cube in the center of each onion; place pat of butter on top. Season with salt, pepper, and paprika. Wrap the onions in foil.
- Roast in preheated oven for 15 minutes.

Simple, fresh ingredients that are amazing together. Roast tomatoes in the oven or on your grill; you want them cooked but still firm, definitely not mushy.

- Preheat an oven to 375 degrees F (190 degrees C).
- Mix together the tomatoes, olive oil, garlic, parsley, basil, oregano, and salt and pepper in a bowl, working the seasonings into the cavities of the tomatoes. Place the tomatoes, cut sides up, on a baking sheet, and sprinkle each tomato with about 1 tablespoon of feta cheese.
- Bake the tomatoes in the preheated oven until cooked but still firm, about 15 minutes.

An easy and low calorie side dish that could be served with any meat dish. I found this in Everyday Food magazine and have use Vidalia onions and added garlic for our taste. The Vidalia's are soooo sweet!

- Preheat oven to 450 degrees. In a 9-by-13-inch baking dish, arrange tomatoes and onions in rows, overlapping slightly. Sprinkle with the minced garlic and drizzle with oil and season with salt and pepper. Bake until tomatoes are lightly browned and onions are tender, about 45 minutes. Serve warm or at room temperature.

- Preheat oven to 425 degrees F.
- With a sharp knife, cut out a 1 inch in diameter by ¾ inch deep cavity in top of onions, reserving scraps.
- Season each onion.
- Combine butter, Worcestershire Sauce, cumin and sugar.
- Fill cavities of onion with the butter mixture.
- Arrange onions in baking dish, add broth, wine and scraps to dish and bake, basting occasionally, for 45 minutes to 1 hour, or until very tender.
- Serve as a first course.
TOMATOES, ONIONS, AND CHEESE TOPPED BRUSCHETTA
Bruschetta topped with Tomatos, Onions, and Spices in an Olive Oil and Vinegar marinade with a top layer of Mozzarella cheese.

- 1.) Combine the first 8 ingredients and stir together in a medium sized bowl. Cover and place in fridge for at least one hour. (Hint, the longer the mixure marinates, the better flavor you will get! I like to let it sit in the fridge over night.).
- 2.) Pre-heat oven to 400 degrees.
- 3.) Place all ten slices of Italian Bread on a baking sheet and bake/toast for 6 to 7 minutes per side in the 400 degree oven. (This is more to dry the bread out than giving any color to the bread. So, don't worry if there is not much browning of the bread!).
- 4.) After the bread is baked/toasted on both sides, drizzle a little Olive Oil on each piece of bread.
- 5.) Then top each piece of bread with 1 1/2 to 2 spoonfuls of the Tomato and Onion marinade.
- 6.) Sprinkle each piece of bread with Salt and Black Pepper to taste.
- 7.) Sprinkle each piece of bread with the Mozzarella cheese.
- 8.) Place topped slices of bread back into the 400 degree oven until the cheese has melted. (usually about 8-10 minutes).
- 9.) Enjoy!

BAKED CATALINA ROMA TOMATOES & VADALLIA ONIONS
I had some Catalina dressing left and an abundance of Roma Tomatoes and needed a side dish to go with buttered noodles. Roma tomatoes are very firm and great to serve after baking.

Steps:
- In round shallow baking dish spray Pam.
- Preheat oven to 375°.
- Place onion rings on bottom, reserving a few for top.
- Place Roma tomato halves in dish.
- Sprinkle garlic salt over each half.
- In small bowl, mix Catalina dressing, Heinz 57 Sauce and brown sugar. Make sure sugar is dissolved.
- Add reserved onion rings.
- Spoon dressing mix over tomatoes and onions.
- Spoon over tomatoes and onions.
- Cover with lid or foil.
- Bake 20 minutes.
- Serve with slotted spoon. Serve juice with noodles if desired.
- Alternate cooking method: Microwave.
- Cover with plastic wrap. 10 minutes 70% power.
- 5 minutes full power. Careful removing plastic wrap.
