No cooking involved in this recipe for homemade ice cream using just cream, sugar, and vanilla with your ice cream maker.

2 cups heavy whipping cream
2 cups half-and-half cream
¾ cup white sugar
1 tablespoon vanilla extract

Steps:

  • In a large bowl, combine the heavy cream and the half and half. Gradually whisk in the sugar until blended.
  • Whisk in the vanilla. Refrigerate, covered, until very cold, at least 3 hours or as long as 3 days.
  • Whisk the mixture to blend and pour into the canister of an ice cream maker. Freeze according to the manufacturer's directions. Eat at once or transfer to a covered container and freeze up to 8 hours.

1 heavy cream
1 cup half and half
2 vanilla beans
5 large egg yolks
1/2 cup granulated sugar

Steps:

  • In a medium heavy sauce pan, combine the cream and the half and half. Split the vanilla beans in half lengthwise and, using the tip of a knife, scrape out the small seeds into the cream mixture and drop in the pods. Bring the mixture to a boil, then remove from the heat.
  • In a large bowl, whisk together the egg yolks and sugar until thickened and pale. Pour in the hot cream mixture and stir until well combined. Strain into a large container and refrigerate until cold. Wash and dry the vanilla pods and reserve for another use.
  • When the cream mixture is cold, pour it into the bowl of an ice cream maker and freeze according to the manufacturers instructions.

2 cups sugar (I use only 1 Cup to make it a bit 'healthier')
2 tablespoons vanilla

Steps:

  • Mix all together in a large bowl.
  • Pour into ice cream maker, follow manufacturers instuctions.
  • If you prefer, you may transfer into a freezable container to freeze for a couple hours before serving.
