Steps:
- Grease and line a cake loaf tin with greaseproof paper
- Preheat the oven to 180°C
- Using a pestle and mortar, crush the walnuts until in very small pieces (some like powder, some chunkier)
- Mix together the butter and sugar until soft and fluffy
- Add in the eggs one at a time and beat in until fully mixed
- Sieve in the flour and baking powder and mix in thoroughly
- Finally add in the vanilla essence, yoghurt and walnuts and stir in thoroughly until evenly dispersed
- Pour into the prepared loaf tine
- Bake for about 30 minutes in the preheated oven or until a skewer comes out clean
- Leave to cool and cut into slices - eat with vanilla ice cream.

- In a medium bowl, dissolve the yeast in the warm water. When dissolved, mix in 1/2 cup of the flour with your fingers, rubbing them together to break up any lumps. Cover with a barely dampened towel and let rise in a warm place until doubled in bulk, about 30 minutes. Meanwhile, in a large bowl, combine the remaining 1 3/4 cups of flour and the salt. Add the yeast mixture and mix together with the tips of your fingers. Gradually sprinkle in the lukewarm water, mixing with your fingers to make a pliable dough. If the water is all mixed in and the dough still seems dry, add another tablespoon of water. Knead until smooth, about 4 minutes. Return the dough to the large bowl, cover with the damp towel, and let rise in a warm place until doubled in bulk, about 1 hour. Turn the dough out onto a floured work surface and dust the top with flour. Roll into a rectangle about the same size as a sheet of paper (8 1/2 by 11-inches). Turn the rectangle so that it is vertical to your body. Dot the lower 2/3 of the dough with the pieces of butter and sprinkle with sugar. Working as though you are folding a letter, and folding the top down first, fold the dough in thirds. Roll out the folded dough into a rectangle, 8 1/2 by 11 inches. Fold in 3 again in the same way, cover with the damp towel, and let rest 15 minutes. Roll into a rectangle again, fold in 3, cover with the damp towel, and let rest 15 minutes. One last time, roll into a rectangle, fold in 3, cover with the damp towel, and let rest 15 minutes. Preheat the oven to 400-degrees F. Butter and flour a 9-inch cake pan. Roll the dough into a circle about 9 inches in diameter. Transfer to the prepared pan. Using a sharp knife or razor blade, make a cross-hatch pattern across the top of the cake (like a tic-tac-toe board). Bake for 20 minutes, brushing the top every 5 minutes with the melted butter that oozes out from the cake. Sprinkle with the confectioners' sugar and continue baking (do not baste) until golden brown on the top but still moist inside, about 10 minutes more. Let cool on a rack until the crust is caramelized and slightly crispy. Wash strawberries in cold water, allow the berries to drain. Combine the egg white and water and foam up mixture with a whisk. Dip the strawberries in the foam and then dip in superfine sugar. Arrange the frosted strawberries in the center of the cake. Serve at room temperature or slightly warm, cut into wedges.

- Lightly grease a baking sheet. In a 1 quart glass measure, combine walnut halves, sugar, and water. Cook in microwave oven on high setting for 8 to 8 1/2 minutes, or until sugar has caramelized. Stir several times during cooking. Pour out onto prepared baking sheet, and separate into pieces. Let cool completely. store in an airtight container.

BROWN SUGAR-WALNUT POUND CAKE WITH PEACH-MAPLE SAUCE

- Preheat oven to 325 degrees. Butter two 5-by-9-inch loaf pans. Combine flour and 1 tablespoon salt in a bowl.
- Cream 4 sticks butter and dark-brown sugar with a mixer on high speed until pale and fluffy, for 8 minutes. Scrape down sides of bowl. Reduce speed to medium, and add vanilla extract.
- Lightly beat eggs, and add to mixer bowl in 4 additions, mixing thoroughly after each and scraping down sides. Reduce speed to low, and add flour mixture in 4 additions, mixing until just incorporated. Fold walnuts into finished batter. Divide batter between pans. Tap on counter to distribute; smooth tops.
- Bake until a tester inserted into center of each cake comes out clean, about 65 minutes. Let cool in pans on a wire rack for 30 minutes. Remove from pans, and let cool completely on wire rack.
- Make the peach-maple sauce: Combine maple syrup, light-brown sugar, 1 stick unsalted butter, and 1 teaspoon salt in a saucepan. Cook over medium-high heat, stirring, until sugar dissolves and liquid comes to a boil. Cook for 2 minutes more. Stir in heavy cream, and bring to a boil. Remove from heat; add sliced peaches. Let thicken, 5 minutes.

- Add eggs and milk.
- Add lemon essence and mix well.
- Add flour, baking powder, walnuts and lemon rind.
- Bake at about 185 C (or 350 F) for about 30 minute.
- Mix the juice of the lemon with the half cup of sugar and pour it over the hot cake as soon as you take it out of the oven.
- As ovens vary, check that the cake is cooked by inserting a skewer into it when you think it is cooked. If the skewer comes out clean, it is cooked, but if the skewer comes out gloopy, it needs a bit more baking. If you haven't got a skewer, use a small sharp knife.

Steps:
- Combine flour, baking powder and salt in a bowl and set aside.
- Cream margarine/butter with the sugar until fluffy and smooth.
- Add in the eggs, one at a time and beat until mixture becomes nice and smooth.
- Add in the lemon zest along with the lemon juice into the margarine batter and mix well.
- Now gradually mix in the flour mixture to form the final batter.
- Make sure the batter is smooth.
- Finally, fold the walnuts into the batter.
- Pour batter into prepared/greased loaf pan (e. g. a 9 X 5 one).
- Before putting it in the oven, sprinkle white sugar generously over the top of the batter so that most of the top layer has a bit of sugar over it.
- Bake in the oven (that was preheated at 180 degrees Celcius) for 1 hour (might need a bit more time depending on the oven) or when a tooth pick inserted in the center of the cake comes out clean.
- Serve warm or cold!
