Sugar Free Apple Butter Recipe for the Instant Pot image

This sugar free apple butter contains only the natural sugars of the apples, and is made in the Instant Pot in just one hour! The prep time includes the time for the Instant Pot to get up to pressure, and the quick release of pressure. Recipe makes about 3 pints (IMPORTANT UPDATE!!! This recipe was developed on an older 6qt Instant Pot that did not need added liquid. Newer and/or 8qt models need more water added to come to pressure without burning. Try 1-2 cups of water, and then simmer longer to thicken once pureed.)

12-15 apples, fuji or honeycrisp are our favorites
1/2 cup water or apple cider/juice, (optional)* 4 ounces
2 teaspoons cinnamon, 4.6g
1/2 teaspoon ground cloves, 1.05g
1/4 teaspoon ground all spice, .47g

Steps:

  • Start coring and slicing apples, dumping the slices into the Instant Pot as you go. Stop prepping apples when the crockpot is full. (If your pot is not completely filled with apples, you should add the water/cider to make sure you can get it up to pressure for the short cook time.)
  • Add your spices, then close the lid, making sure the vent is set to sealing.
  • Cook on the manual setting, for 20 minutes, on high pressure.
  • Quick release the pressure, and remove the lid.
  • Use an immersion blender to puree the apples, which will also mix in your spices.
  • Turn on the saute setting and stir regularly as the apple butter boils. Be careful of splashes! I boiled mine about 15 minutes to reduce it down.
  • When you're happy with the thickness, you can pour the apple butter into jars and refrigerate, or can your apple butter using a *waterbath method.

Traditional apple butter ingredients cooked in an electric pressure cooker is less labor intensive than a stovetop method. It also reduces cleanup. The outcome is a creamy, sweet apple butter to spread on your favorite morning breads or pastries.

½ lemon, juiced
3 pounds apples - peeled, cored, and sliced
1 cup dark brown sugar
¾ cup white sugar
¼ cup honey
¼ cup unfiltered apple juice
2 cinnamon sticks
¼ teaspoon ground cloves

Steps:

  • Place lemon juice into the insert of a multi-functional pressure cooker (such as Instant Pot®) and pour in about 4 inches of water. Drop apples into the lemon water as you slice them to keep them from browning.
  • Drain the apples. Add apple juice, brown sugar, white sugar, honey, cinnamon sticks, and ground cloves. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Remove the cinnamon sticks.
  • Use an immersion blender to puree the apple butter. Mix well with a spoon. Close and lock the lid. Select Slow Cooker Function according to manufacturer's instructions; set timer for 60 minutes.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Test the consistency by putting a small amount on a plate and refrigerating for 10 minutes. The final consistency should be thick enough to spread with a knife. If it is too liquid for your preference, cook for 1 more hour.

The apple peels are left on to add pectin." **** Cooks Note: Apple butter can be used in baking - can replace up to 1/2 of the shortening in many recipes. Add with the liquid ingredients. You may need to reduce sugar in recipes since the apple butter is already sweetened. . P.S. It's also wonderful on plain old toast or waffles!

4 lbs cooking apples, washed, UNPEELED, cored and cut into quarters (12 cups, try MacIntosh, Jonagold, Northern Spy or Gravenstein)
1/2 cup Splenda granular
1 teaspoon cinnamon
1 pinch clove
1/4 teaspoon ground allspice

Steps:

  • Slice apples into a crock pot. Cook on low until they're very soft, 4-5 hours.
  • Remove from crock pot & press soft apples through a sieve to remove the peels. Stir in the Splenda, cinnamon, cloves and allspice. Return mixture to crock pot and cook another 3-4 hours on low setting. (mixture should reduce to about 4 cups).
  • Spoon into clean jars (those cute little half-pint jelly jars would be perfect),leaving an inch of headroom. Cover with lids & freeze the jars that you want to use later. Store thawed apple butter in the refrigerator.
  • Note: for oven prep, cook apples for 2 hours on 350°F After sieving & adding spices and Splenda, return to oven for another hour.
  • Serving size listed is 1 tablespoon.

  • Add all ingredients to pressure cooker, close the lid and set HIGH PRESSURE for 6 minutes (it takes about 12-15 minutes for it to get pressure), then 4 minutes of Natural Release. Do a Quick Release after 4 minutes, and when done open the lid carefully.
  • Using an immersion blender, blend the apple mixture into desired consistency. If you prove it, it might taste blend and not sweet enough, but it will get sweeter and more flavorful once is reduced.
  • Using the SAUTE function, set it to MORE, and then 15 minutes. The apple mixture will splatter A LOT, so be careful. Use a splatter guard if you have one, and wear mittens while stirring it. You need to stir frequently when using this method. See noted for more options for this step.
