Sugar-Free Chai Latte image

This chai latte recipe is perfect for the cold winter days or when you need a comforting drink. It's easy to make and you won't go back to the store-bought ones; plus, it's cheaper to make and it's free of preservatives, additives, and sugar. It's the perfect drink to add to your Meal Plan or Batch Cooking.

1 cinnamon stick, broken into pieces
4 cardamom pods
2 whole cloves
4 whole black peppercorns
2 cups of whole milk or coconut milk
1 (1-cm or 0.4 inch) fresh ginger
2 teaspoons of black tea leaf*
2 whole star anise

Steps:

  • In a small pot, place the cinnamon, cardamom, cloves, and peppercorns. Toast them over medium heat for 3 to 4 minutes.
  • Add the milk, ginger, tea, and star anise. Lower the heat and let it sit for about 3 to 4 minutes, avoid boiling the milk.
  • Remove from heat, cover the pot with its lid and let it sit for about 10 minutes.
  • Strain the latte through a fine-mesh strainer directly into a glass, leaving a 1-inch space from the rim.
  • Strain about 1 inch of milk into a tall glass, using the milk frother to make some foam.
  • Top the first glass with milk froth, add cinnamon powder on top, together with star anise as decoration.

3 cups nonfat dry milk powder
1 1/2 cups artificial sweetener
1 cup unsweetened instant tea
3/4 cup sugar-free french vanilla powdered coffee creamer
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground cloves

Steps:

  • In a food processor, combine all ingredients; cover and process til powdery. Store in an airtight container in a cool dry place for up to 6 months.
  • To prepare 1 serving, dissolve 3 Tablespoons of mix in 3/4 cup boiling water. Dollop with whipped cream if desired.
  • Alternately to use less, brew a Chai Tea bag and add 1+Tablespoons of mix.
  • Comments: I no longer use powdered coffee cream, so I substituted powdered coconut milk and some vanilla powder.
