Traditional Japanese beef sukiyaki recipe for a one-pot recipe that is cooked at the table. Delicious when dipped in raw beaten egg and eaten with rice.

1 ½ cups water
⅔ cup soy sauce
⅔ cup white sugar
⅓ cup sake
1 pound thinly sliced beef
1 (12 ounce) package firm tofu, drained and cut into bite-size pieces
½ head Chinese cabbage, cut into bite-size pieces
1 (7 ounce) package yam noodles (shirataki), drained
7 shiitake mushrooms, sliced
1 enoki mustrooms, roots removed
1 green onion (negi), sliced
1 tablespoon vegetable oil
4 eggs

Steps:

  • Combine water, soy sauce, sugar, and sake in a bowl to make broth.
  • Arrange beef, tofu, Chinese cabbage, yam noodles, shiitake mushrooms, enoki mushrooms, and green onion on separate plates on the table.
  • Heat oil in an electric skillet or a large skillet set over a hot plate at the table. Add beef slices; cook and stir until browned, about 1 minute. Pour in some broth; bring to a boil. Stir in tofu, cabbage, noodles, shiitake mushrooms, enoki mushrooms, and green onion; simmer until softened, about 5 minutes.
  • Ladle cooked sukiyaki mixture into serving bowls. Replenish broth in the skillet.
  • Crack each egg into a small bowl and beat lightly. Serve sukiyaki alongside eggs for dipping.

1/2 cup soy sauce
2 tablespoons sugar
1 cup soup stock
1/4 cup mirin
1 pound thinly sliced beef meat
1/4 cup sugar
2 medium onions, sliced
4 ounces yam noodles (shirataki)
1 cup sliced bamboo shoots
2 stalks celery, sliced
1 cup soaked, rinsed and sliced shiitakes
1 cube tofu, cut into 1-inch pieces
1 bunch green onions, cut into 2-inch lengths
2 leaves Napa cabbage, sliced
2 tablespoons oil

Steps:

  • Mix soy sauce, sugar, stock, and mirin together in a bowl. Arrange meat and vegetables on a large platter. Heat an electric skillet to 375 degrees F.
  • Add oil to the skillet and heat. Brown meat in the oil, adding sugar slowly. Move the meat to the corner of the skillet when well browned. Add other vegetables, keeping each separate. Add sauce and cover. Bring to a boil and cook for 2 minutes. Uncover and turn all ingredients while cooking 2 minutes more. Serve on small plates.

The Japanese traditionally set each ingredient individually in one common pot or serving bowl. Each diner creates their own bowl of meat, vegetables, and noodles. This is my take on a flavorful, favorite, beautiful Japanese dish that we love. I do not add the traditional tofu, but feel free to add 8 ounces of fried tofu cubes.

12 ounces udon noodles
1 tablespoon peanut oil
1 pound beef, thinly sliced
6 tablespoons white sugar
6 tablespoons soy sauce
4 tablespoons sake
4 tablespoons dry white wine
½ teaspoon ground white pepper
1 small head napa cabbage, cut into 2-inch pieces
1 ½ cups chopped celery, 2-inch long pieces
16 shiitake mushrooms, sliced
6 scallions, cut diagonally into 1-inch pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Rinse with cool water to stop the cooking process and set aside.
  • Heat a wok over medium-high heat and add oil. Sear beef slices in the pan until browned, about 3 minutes. Add sugar, soy sauce, sake, white wine, and white pepper. Add cabbage, celery, mushrooms, and scallions and cook 10 to 15 minutes more.
  • Adjust seasoning if necessary with additional soy sauce, wine, sake, or sugar.

  • In a pot over a portable electric or gas cooktop (or just your regular stove) over medium heat, add 2 tablespoons sake, ¼ cup mirin, 1 tablespoon brown sugar, and ¼ cup soy sauce in a saucepan. Bring to a boil, turn off the heat, make sure all the sugar is dissolved, and transfer to a bowl.
  • Then prepare all your sukiyaki ingredients––the tofu slices, rehydrated shiitake mushrooms, enoki mushrooms, napa cabbage, tong ho, and scallions. Set aside on a plate. Soak the dried vermicelli noodles in water for 10 minutes.
  • Heat 1 tablespoon vegetable oil in the pan. Fry the white parts of the scallions in the oil for 2 minutes. Chop the green parts of the scallions finely and set aside.
  • In the pan with the scallions, add the sliced beef. Sear the beef for 10 seconds, and add a drizzle of your sukiyaki sauce. Fry the meat until it just begins to brown––it should still be a bit pink. Remove from the pot and set aside.

  • Combine 1 cup sake, 1 cup mirin, ¼ cup sugar, and 1 cup soy sauce in a small saucepan and bring it to a boil. Once boiling, turn off the heat and set aside. This Sukiyaki sauce can be stored in an air-tight container in the refrigerator for up to a month.
  • If your udon is frozen, cook it in boiling water until loosen. Remove from heat and soak in iced water to prevent overcooking them. Drain and transfer to a plate covered with plastic. You will not need it till the end of the sukiyaki meal.
  • Set a portable gas cooktop at the dining table. Each person should have a medium-sized bowl where the cooked food is being transferred to from the pot. Heat a cast iron sukiyaki pot (or any pot) on medium heat. When it’s hot, add 1 Tbsp cooking oil (or beef fat).

  • Broiled tofu can be found in some markets under the name yakitofu, but you can also make it at home fairly easily. If broiling tofu at home, you must first drain the water from your tofu. Sandwich it between two heavy cutting boards lined with paper towels. Place something heavy, like canned vegetables, on top of the top cutting board. Be sure that the cutting board and the weight on top of the tofu is at an even level. Press until the thickness of the tofu is 2/3 of the original thickness.
  • Set your oven to the broiler setting. Line a sheet tray with aluminum foil and spray with non-stick cooking spray. Spray your drained tofu with cooking spray as well and place onto the sheet tray.
  • Broil for 10 minutes on the center rack of your oven, then flip and broil for an additional 8 minutes. Once cool cut into 16 1-inch cubes.
  • To make the sauce, mix together the chicken stock, soy sauce, mirin and sugar in a bowl. Taste and adjust seasonings if desired. Set aside.

  • Put oil in a large skillet and heat over medium high heat till hot, but not smoking. Add sliced onions, scallions, and shiitakes (white side down), keeping them separate from each other, and brown them for about 5 minutes, using a spatula to move them around a bit so they all get some browning. Remove pan from heat and set aside.
  • Put soy sauce, Mirin, sake, sugar, and 1 1/2 cups water in a large pot or Dutch Oven. Bring to a simmer over medium heat, stirring (1-2 minutes) until sugar is dissolved. Turn off heat and carefully place all ingredients into the pot in separate piles, starting with one corner of the pot. I like to start with the heavier things that will stay put: the sliced beef. Then the cubed tofu. Then the onion, scallions and mushrooms. Then the carrots. The cabbage is very bulky but will shrink as it cooks. Finally, clear a little spot, with a wooden spoon, to drop in the softened noodles.
  • Turn the heat up to medium high. When it starts to boil, turn it down to a strong steady simmer and use the wooden spoon to gently jiggle the ingredients and nudge them down into the broth, without disturbing the piles, so that everything gets cooked. When the meat is no longer pink and the onions and cabbage are soft, about 5 minutes, the Sukiyaki is ready.
