BRAISED CHICKEN
Steps:
- Gather the ingredients and heat the oven to 300 F.
- Dry the chicken well with paper towels and season generously with salt and pepper.
- Heat a Dutch oven over medium-high heat. Cook the bacon until it's crispy and the fat has rendered out. Remove and set aside.
- Add 1 breast (skin-side down), 1 thigh (skin-side down), 1 drumstick, and 1 wing. Brown the chicken for 4 to 5 minutes, then remove to a platter and repeat with the other 4 pieces. Finally, brown the backbone, skin-side down, and remove.
- Add the onion, leek , and garlic and sauté until the onion is translucent, about 3 to 4 minutes. Add the wine and boil, scraping any roasted bits from the bottom of the pan. Stir in the tomato paste.
- Return the chicken and bacon to the pot. Add the chicken stock or water. Season with salt (if needed). Add the rosemary and bay leaf and bring to a boil.
- Cover with a tight-fitting lid and transfer to the oven. Cook for one hour, or until an instant-read thermometer registers at least 165 F . Remove the lid and let the chicken cool in the pot for 15 minutes before serving.

Steps:
- Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
- Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
- Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

SUN OVEN BRAISED FRENCH BASIL CHICKEN

- Set Global Sun Oven out to preheat. Heat the oil in a skillet over medium-high heat. Add the onions; cook until softened, about 5 minutes. Stir in the garlic, Herbes de Provence, salt, and pepper. Add the flour and cook, stirring for 1 minute. Add the broth and the tomatoes and bring to a boil. Stir in the artichoke hearts and remove from heat. Arrange the chicken pieces evenly over the bottom of a roasting pan or baking dish and pour the tomato mixture over them. Cover and cook in the Sun Oven until the chicken is fork tender, 1 to 1 1/2 hours. Stir in the red pepper and basil; continue cooking until the pepper is tender, about 20 minutes.

FRENCH STYLE BASIL CHICKEN
I had this recipe at a party last night and was so stoked by it, I had to post it. Thanks to Jim for the recipe! It is a lovely chicken dish with white wine, sage, basil and onions, that give the chicken a heavenly flavor. Topped with a creamy basil sauce, it is to die for.

- Put the sage leaves in a pan along with the onions, the white wine and the chicken broth.
- Bring to a rolling boil, and continue to boil until the sauce is reduced to 3/4 cup, about 8-10 minutes.
- Remove from the heat and let cool.
- Lay the pieces of chicen in a flat pan or in an airtight plastic bag and use this cooled sauce to marinate the chicken covered overnight in the fridge, or at least 6 hours.
- The next day, preheat the oven to 325°, remove chicken from the marinade, reserving the marinade, and pat dry.
- Put chicken in oven for about 35-45 minutes or until the juices run clear.
- Meanwhile, strain the marinade, discarding the onions, and leaves.
- Put in a suacepan and bring to a rolling boil, and boil for about 10-15 minutes, or until reduced by 1/3.
- Take half of the cream, and blend it together with the basil leaves in the blender until very smooth, and a bit pasty.
- Add this to the sauce, along with the other half of the cream, and reduce heat to low and keep warm until the chicken in done.
- Serve this sauce over the chicken, with rice.

- Sprinkle chicken with salt & pepper.
- Heat oil in heavy medium skillet over medium-high heat. Add chicken to skillet and saute until golden, about 4 minutes per side. Add garlic and stir 30 seconds.
- Add wine, cream, and tomatoes, bring to a boil. Reduce heat to medium low, cover skillet, and simmer until chicken is just cooked through, about three minutes.
- Transfer chicken to plates. Add basil to sauce in skillet. Increase heat and boil until sauce thickens enough to coat a spoon, about two minutes.
- Season to taste with salt & pepper; spoon over chicken and serve.

- In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
- In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
