There are a few impostors out there that claim to be Long Island Iced Teas. In actuality, there is only one correct way to make a LIIT... and this is it!

½ fluid ounce vodka
½ fluid ounce rum
½ fluid ounce gin
½ fluid ounce tequila
½ fluid ounce triple sec (orange-flavored liqueur)
1 fluid ounce sweet and sour mix
1 fluid ounce cola, or to taste
1 lemon slice

Steps:

Fill a cocktail shaker with ice. Pour vodka, rum, gin, tequila, triple sec, and sour mix over ice; cover and shake. Pour cocktail into a Collins or hurricane glass; top with splash of cola for color. Garnish with a lemon slice.

SUNNY'S COLD BREW COCONUT COFFEE

Ingredients

1 cup ground coffee
1 cup shredded sweetened coconut
Evaporated milk, to taste
Sugar, honey or any sweetener, to taste

Steps:

In a large pitcher add the coffee, coconut and 3 cups water. Stir and refrigerate, stirring every few hours, at least 8 hours or up to overnight.
Wet a paper towel or use a coffee filter placed in a fine mesh sieve over a pitcher. Pour the cold-brewed coffee into the lined sieve and allow it to drip into the pitcher beneath. Push through gently at the end to get the last bit of coffee. Add the evaporated milk to taste, then sweeten if desired and serve over ice.

SUNNY'S BLUEBERRY THYME INFUSED TEA

Ingredients

1 pint blueberries
8 to 10 sprigs fresh thyme
Zest and juice of 1 lemon
4 cold brew tea bags
Sugar, honey or any other sweetener

Steps:

In a pitcher, add the blueberries, thyme, lemon zest and lemon juice. Muddle until the blueberries are mashed and everything smells like lemon and thyme. Add the cold brew bags and 6 cups water. Rest in the refrigerator for at least 4 hours, stirring every hour.
Strain the tea through a sieve lined with a wet coffee filter or wet paper towels. Sweeten to taste and serve over ice.

1/2 ounce white rum
1/2 ounce tequila
1/2 ounce Cointreau
1/4 ounce dark beer like Bass
Sour mix
Splash of fresh lemon juice
Splash of Coke

Steps:

In a shaker, mix all ingredients except Coke and sour mix; shake, and pour into a 12-ounce glass with ice. Top up glass to 1/2 inch from top with sour mix. Add Coke until drink is the color of weak iced tea. Garnish with a lemon wedge.

1 gallon water
6 -8 tea bags (depending on strength)
1/4 cup honey (see note)

Steps:

*Early in the day*: fill a gallon jar with water, tea bags and honey; cover and place jar out in a sunny spot.
Remove from outdoors, shake jug to be sure the honey is well-mixed; remove tea-bags (these can go in the compost).
Place jar in fridge to chill (well, duh!).
Serve over ice cubes or just chilled.
VARIATIONS: If you're using unflavored tea bags, you can add a flavor by adding several (or fewer) drops of your favorite flavoring extracts to the finished tea: raspberry, orange, blackberry or a combination.
MONEY-SAVING HINT: Leave the honey out and let everyone add their own sugar when they're served.
