EASY MEATBALLS

Easy Meatballs image

My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

KITTENCAL'S ITALIAN MELT-IN-YOUR-MOUTH MEATBALLS

Kittencal's Italian Melt-In-Your-Mouth Meatballs image

Cooking the meatballs in simmering pasta sauce will not only add so much extra flavor to the sauce the meatballs will be melt-in-your-mouth tender, you may of course oven-bake the meatballs for about 25 minutes, --- don't be afraid to add in more Parmesan cheese and a little more milk, there is no need to measure exactly, this recipe is pretty much foolproof, leftover cooked meatballs make a wonderful pizza topping just slice thinly and freeze until ready to use ----- these also make wonderful juicy burgers shaped into patties-- for more of my tried and true recipes check out my food blog at www.kittencalskitchen.com

Categories     Meat

Time 50m

Yield 1 1/2 pounds

Number Of Ingredients 10

1 1/2 lbs ground beef (a mixture of 1 pound ground beef and 1/2 pound ground pork will work well also)
1 large egg, slightly beaten
1/2 cup grated parmesan cheese
1/3 cup breadcrumbs (or use enough to hold the meat together (no dry breadcrumbs? just soak 3 slices of bread in the 1/3 )
1 -2 tablespoon fresh minced garlic (or use 1 teaspoon garlic powder or to taste)
1 -2 teaspoon salt (or to taste, I use 2 teaspoons seasoned salt)
1 teaspoon fresh ground black pepper
1/3 cup milk (can use up to 1/2 cup milk)
1/2 teaspoon dried oregano (optional, or to taste)
1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)

Steps:

  • Mix all ingredients together in a large bowl.
  • Shape into small meatballs (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).
  • Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.
  • Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).
  • After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.
  • **note** you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.

SUPER MOIST ITALIAN MEATBALLS

Super Moist Italian Meatballs image

Craving some tender and juicy meatballs?? Give this recipe a try! The two secrets are the extra eggs, and cooking the meatballs in the sauce, instead of pre-baking or frying them. Ground chuck or a 50/50 mix of chuck and sirloin work best for full flavor and moistness.

Provided by ItalianMan

Categories     Meat

Time 1h5m

Yield 25-30 meatballs, 6 serving(s)

Number Of Ingredients 9

2 lbs ground beef
3/4 cup Italian style breadcrumbs
1/3 cup parmesan cheese or 1/3 cup romano cheese, grated
3 eggs
3 garlic cloves, minced
1/4 cup red wine
1/2 teaspoon black pepper
1 teaspoon salt
6 -8 cups tomato sauce or 6 -8 cups your favorite spaghetti sauce

Steps:

  • In a bowl, combine beef, bread crumbs, cheese, eggs, garlic, pepper, salt, and wine. Mix well.
  • Shape mixture into 1-1/2" or 2" meatballs.
  • In a large pot, bring sauce to a boil. Add meatballs one at a time, and simmer over medium-low heat for 40-45 minutes.
  • Serve over pasta, or on hoagie buns for meatball subs.

THE BEST ITALIAN MEATBALLS

The BEST Italian Meatballs image

These meatballs are tender, juicy, and made with simple ingredients for the best flavor. Serve them over spaghetti, baked in a sub, or with some zoodles for a healthier dinner.

Provided by lyuba

Categories     Main Course

Time 35m

Number Of Ingredients 13

1 lb ground beef
1 lb ground pork
1 thick slice of whole wheat bread soaked in a little milk ((milk squeezed out))
1 eggs
1/2 cup yellow onion (minced)
3 garlic cloves (pressed)
2 tbsp fresh basil (minced)
1 tbsp fresh parsley (minced)
3 cups Marinara sauce ((24 oz jar))
2-3 tbsp olive oil for cooking
Salt
Black pepper
2 tbsp fresh basil (minced)

Steps:

  • Preheat oven to 350.
  • Combine the ground beef, ground pork, egg, minced onion, pressed garlic, herbs, salt, and pepper in large mixing bowl. Squeeze out the slice of bread, break it up, and add it to the bowl. Mix everything very well.
  • Preheat a large cooking pan that is also oven-safe over medium heat. Add a little oil for cooking meatballs.
  • Grease your hands with some cooking spray. Scoop out some meat using a cookie scoop and roll meatballs. (You can make meatballs bigger or smaller according to your own preference. Just remember to adjust cooking time if making bigger or smaller meatballs.)
  • Roll all the meatballs before adding them to the pan. Once all the meatballs are rolled, add them to the hot pan.
  • Cover with a lid and cook for a few minutes, then flip.
  • Pour marinara sauce over the meatballs and slowly stir.
  • Bake meatballs for about 20 minutes.
  • Add a little more minced basil over the top once the meatballs are done.

SUPER TENDER ITALIAN MEATBALLS

Super Tender Italian Meatballs image

Super Tender Italian Meatballs. Loaded with Parmesan cheese, fresh parsley and garlic. They melt in your mouth and are incredibly tender. Takes less than 30 minutes to make!

Provided by Kelley Simmons

Categories     Main Course

Time 30m

Number Of Ingredients 15

1/2 cup milk
1/2 tablespoon lemon juice
1 1/2 cups bread (cubed (I used a day old baguette))
1 tablespoon extra virgin olive oil
3 tablespoons onion (diced)
2 cloves garlic (minced)
1 pound ground beef
1/2 pound ground pork
1 cup Parmesan cheese (grated)
2 eggs
1 tablespoon parsley (chopped)
1/4 teaspoon red pepper flakes
1/4 teaspoon pepper
1/8 teaspoon salt
Slow Cooker Tomato Sauce

Steps:

  • Preheat oven to 350 degrees.
  • Combine milk and lemon juice in a small bowl. Let stand for 5 minutes. You will see curds at the top.
  • Add bread to a small bowl and pour the buttermilk over the bread. Allow the bread to soak up all the milk and mix a little with your hands. Add the bread mixture to a large bowl.
  • Meanwhile add olive oil to a small skillet. Add in onion and sauté until tender about 2-3 minutes.
  • Add in garlic and sauté for one minute.
  • Add onion and garlic to the bowl with the bread along with the beef, pork, cheese, eggs, parsley, red pepper flakes, salt and pepper.
  • Combine the mixture using your hands just until combined. Try not to over work the meatballs. The mixture will be wet. Let stand for a couple of minutes before rolling.
  • Roll out 16 meatballs. I make them the size of golf balls.
  • Drizzle a skillet with olive oil. Over high heat sear the meatballs on all sides to brown. About 1-2 minutes on each side. (If meatball sticks to the pan give it more time before flipping). Also be careful when flipping meatballs they are pretty fragile.
  • Place meatballs on a baking sheet and cook for 10 minutes. They will be slightly undercooked on the inside but they will continue to cook as they come out of the oven. If this is an issue leave in the oven for longer (5 minutes) or simmer in tomato sauce for a few minutes.
  • Serve the meatballs immediately with your favorite tomato sauce and pasta.

THE BEST ITALIAN MEATBALLS

The Best Italian Meatballs image

They are truly the absolute best paleo Italian meatballs! Super moist, flavourful and fall apart tender!

Provided by Every Last Bite

Categories     Dairy Free     Grain/Gluten Free     Keto     Paleo     Refined Sugar Free     SCD Legal     Whole30

Time 1h40m

Number Of Ingredients 17

750 grams ground beef
500 grams ground pork (or 250grams of pork and 250grams of veal)
4 cloves garlic (finely chopped)
2/3 cup chopped fresh parsley
1/2 tbsp chilli flakes
1/2 tsp salt
1/2 tsp pepper
1 3/4 cups almond flour
1 3/4 cups almond milk
3/4 cup grated parmesan (optional*)
2 tbsp olive oil
5 cloves garlic (minced)
1 onion (finely diced)
3 28 oz cans chopped tomatoes
1 tsp chopped fresh oregano
1 tsp chopped fresh thyme
1 tsp dried basil

Steps:

  • Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit)
  • In a bowl combine the ground meats, garlic, parsley, chilli flakes, salt and pepper, if using parmesan, add it in at this point too. Using your hands blend everything together so the meat is well mixed. Stir in the almond flour and then slowly add in the almond milk, half a cup at a time. It will quickly absorb into the meat.
  • Roll the meat into balls approximately 1 1/2 inches in diameter and place on a parchment paper lined baking tray. Save 1 large handful of the meat mixture which will be added to the sauce later.
  • Bake the meatballs in the oven for 35 to 40 minutes, flipping half way through to ensure they brown evenly.
  • While the meatballs are cooking, make the sauce.
  • In a large pot sauté the minced garlic and onion in olive until the onion becomes translucent. Add in the saved meat mixture and using a wooden spoon break it up into a crumbly consistency. Once the meat has begun to brown, add in the canned tomatoes.
  • Allow to simmer for a minimum of 30 minutes and up to 2 hours (the longer you leave it to simmer the richer the flavours will be)
  • Add the meatballs into the sauce to coat. Freeze the sauce and meatballs together in containers. Enjoy the meatballs on their own or with spaghetti squash or zucchini noodles. Sprinkle with fresh parsley before serving.

An excellent meatball, to accompany your spaghetti..The breadcrumb "mush" acts as both a "binder" and moisturiser, with the milk "adding fat" to the meat, and the crumbs retaining this and the moisture of the meat itself.
