EASY MEATBALLS
My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.
- Shape mixture into about forty 1 1/2-inch balls, a little smaller than golf balls, using a teaspoon. Place on ungreased, rimmed baking sheets.
- Bake in the preheated oven until no longer pink in the centers, turning halfway through cooking time, 10 to 15 minutes total.

KITTENCAL'S ITALIAN MELT-IN-YOUR-MOUTH MEATBALLS

- Mix all ingredients together in a large bowl.
- Shape into small meatballs (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).
- Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.
- Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).
- After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.
- **note** you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.

- Preheat oven to 350.
- Combine the ground beef, ground pork, egg, minced onion, pressed garlic, herbs, salt, and pepper in large mixing bowl. Squeeze out the slice of bread, break it up, and add it to the bowl. Mix everything very well.
- Preheat a large cooking pan that is also oven-safe over medium heat. Add a little oil for cooking meatballs.
- Grease your hands with some cooking spray. Scoop out some meat using a cookie scoop and roll meatballs. (You can make meatballs bigger or smaller according to your own preference. Just remember to adjust cooking time if making bigger or smaller meatballs.)
- Roll all the meatballs before adding them to the pan. Once all the meatballs are rolled, add them to the hot pan.
- Cover with a lid and cook for a few minutes, then flip.
- Pour marinara sauce over the meatballs and slowly stir.
- Bake meatballs for about 20 minutes.
- Add a little more minced basil over the top once the meatballs are done.

- In a large bowl mix together the ground beef, egg, bread crumbs, parmesan cheese, minced garlic, chopped parsley, salt and pepper. Slowly add the milk until you have a soft compact mixture. Form the mixture into small balls.
- In a large pan add the olive oil and the meatballs, brown on all sides turning often. Cook for approximately 5-6 minutes. Add the broth, cover and cook on medium/low heat for approximately 10-12 minutes or until cooked through. Stir occasionally to make sure the meatballs don't burn. SUPER TENDER ITALIAN MEATBALLS

- Preheat oven to 350 degrees.
- Combine milk and lemon juice in a small bowl. Let stand for 5 minutes. You will see curds at the top.
- Add bread to a small bowl and pour the buttermilk over the bread. Allow the bread to soak up all the milk and mix a little with your hands. Add the bread mixture to a large bowl.
- Meanwhile add olive oil to a small skillet. Add in onion and sauté until tender about 2-3 minutes.
- Add in garlic and sauté for one minute.
- Add onion and garlic to the bowl with the bread along with the beef, pork, cheese, eggs, parsley, red pepper flakes, salt and pepper.
- Combine the mixture using your hands just until combined. Try not to over work the meatballs. The mixture will be wet. Let stand for a couple of minutes before rolling.
- Roll out 16 meatballs. I make them the size of golf balls.
- Drizzle a skillet with olive oil. Over high heat sear the meatballs on all sides to brown. About 1-2 minutes on each side. (If meatball sticks to the pan give it more time before flipping). Also be careful when flipping meatballs they are pretty fragile.
- Place meatballs on a baking sheet and cook for 10 minutes. They will be slightly undercooked on the inside but they will continue to cook as they come out of the oven. If this is an issue leave in the oven for longer (5 minutes) or simmer in tomato sauce for a few minutes.
- Serve the meatballs immediately with your favorite tomato sauce and pasta.

- Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit)
- In a bowl combine the ground meats, garlic, parsley, chilli flakes, salt and pepper, if using parmesan, add it in at this point too. Using your hands blend everything together so the meat is well mixed. Stir in the almond flour and then slowly add in the almond milk, half a cup at a time. It will quickly absorb into the meat.
- Roll the meat into balls approximately 1 1/2 inches in diameter and place on a parchment paper lined baking tray. Save 1 large handful of the meat mixture which will be added to the sauce later.
- Bake the meatballs in the oven for 35 to 40 minutes, flipping half way through to ensure they brown evenly.
- While the meatballs are cooking, make the sauce.
- In a large pot sauté the minced garlic and onion in olive until the onion becomes translucent. Add in the saved meat mixture and using a wooden spoon break it up into a crumbly consistency. Once the meat has begun to brown, add in the canned tomatoes.
- Allow to simmer for a minimum of 30 minutes and up to 2 hours (the longer you leave it to simmer the richer the flavours will be)
- Add the meatballs into the sauce to coat. Freeze the sauce and meatballs together in containers. Enjoy the meatballs on their own or with spaghetti squash or zucchini noodles. Sprinkle with fresh parsley before serving.
