ONE POT BEEF TACO PASTA
This Beef Taco Pasta is like a homemade version of hamburger helper with a southwest flavor spin. Hearty, delicious, and comforting!

Steps:
- Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a deep skillet or wide-bottomed pot. Sauté over medium heat until the onions are soft.
- Add the ground beef and taco seasoning and continue to cook and stir until the ground beef is cooked through.
- Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef and stir to combine.
- Finally, add the pasta and beef broth and stir to combine once again. It's okay if the pasta is not fully submerged under the broth.
- Place a lid on the pot and turn the heat up to medium-high. Allow the broth to come up to a full boil. Once boiling, give the pasta a stir, place the lid back on top, and turn the heat down to medium-low.
- Let the pasta continue to simmer, stirring every few minutes and always replacing the lid, for about 10 minutes or until the pasta is tender. There should be some thick saucy liquid left in the pot once the pasta is cooked.
- Add the shredded cheddar cheese and stir until it has melted into the sauce. Top with sliced green onions and serve!

BEEFY TACO PASTA SKILLET
Steps:
- Brown ground beef in a large skillet. Drain.
- After beef is cooked, add taco seasoning packet, tomatoes, chiles and taco sauce. Simmer for 25 minutes.
- Cook pasta according to package directions, drain and add to skillet with beef. Stir well. Add shredded cheese. Cover with lid for 5 minutes to allow cheese to melt.

- Heat a large skillet over medium-high heat. Cook and stir ground turkey, onion, soy sauce, and garlic in the hot skillet until turkey is completely browned, 5 to 7 minutes. Stir taco seasoning mix into the turkey mixture.
- Bring a large pot of lightly salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 8 minutes.
- Drain rotini and return to the pot; place over low heat. Stir milk and butter with the rotini; cook until the butter melts completely, 2 to 3 minutes; add turkey mixture and stir. Sprinkle cheese over the rotini-and-turkey mixture; cook and stir until the cheese melts, about 5 minutes.

SUSAN'S BEEFY TACO PASTA
This is a quick, flavorful and filling weeknight meal that you can alter any way you want to suit your needs and it will still come out tasty! I created this meal one night when my husband was out of town and I thought I had a pizza in the freezer to feed the kids. 5:00 rolled around...and no pizza! So I scrambled to make something with ingredients on hand. You can use any kind of beans and can substitute canned diced tomatoes in place of salsa if you like this milder. The olives, jalapeno's, cilantro and cheese are recommended but are optional. Even my picky non-meat-eating son cleared his plate. I make this with a side of guacamole and chips and it's a VERY filling meal. This makes a thicker, drier sauce (which my family likes). If you wish a saucier version, either add more canned tomatoes or more salsa to your liking. Hope you enjoy!

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet over medium heat, brown ground beef and drain. Add garlic, onion and crushed red peppers and saute until translucent and aromatic.
- Add taco seasoning and mix well.
- Add salsa and beans, olives and jalapeno's and warm through.
- Season with salt and pepper and sprinkle on cilantro.
- Combine all in large pot. Serve and add cheese to each individual bowl.
