SUSAN'S CHOCOLATE CHIP COOKIES
My "adopted mother" gave me this recipe and I can honestly say they are the richest chocolate chip cookies and my absolute favourites.

Steps:
- Preheat the oven to 350-370°F.
- Cream the butter and sugars together.
- Beat in the eggs and the vanilla.
- Mix together the dry ingredients in a separate bowl, before slowly folding them in with the wet ingredients.
- Add the chocolate chips, stirring until just mixed.
- Place on a baking sheet and bake for 8-10 minutes or until golden brown.

OUTRAGEOUS CHOCOLATE CHIP COOKIES

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream the shortening, white sugar, and brown sugar together with a wooden spoon. Add eggs and vanilla, mix well. Sift together the flour, baking soda and salt, stir into the creamed mixture. Finally stir in the semi sweet chips and the white chips, if the batter is too stiff, you may need to use your hands.
- Drop cookies by heaping spoonfuls onto unprepared cookie sheets. Bake for 7 to 10 minutes in the preheated oven. I always like to take my cookies out of the oven when they are light brown and not yet set. It creates a softer cookie. Allow cookies to cool for a few minutes on the baking sheet before removing to cool on wire racks.

- Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Spray 13 by 9 inch pan with baking spray.
- Combine all ingredients in a bowl and mix until blended.
- Spread into pan and bake for 25-30 minutes. Then let them cool for an hour. Then cut into squares.

- Combine shortening, butter or margarine, sugars, egg and vanilla in a large mixing bowl beat at medium speed until mixed thoroughly. In a small bowl, blend flour, baking soda and salt add to shortening mixture. Mix well. Stir in chocolate chips and nuts. Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased baking sheets. Bake at 375° for 8 to 10 minutes or until lightly browned but still soft. Cool on wire racks.
